Cornmeal Tomato Dosa

Ingredients
Fine cornmeal-1/2 cup
Long grain rice-1/2 cup
Red chillies-3
Thoor dhal-1/8 cup
Tomato-2
Grated coconut-1tbsp
Jeera-1/8tsp
Curry leaves-little
Salt to taste
Oil-to make dosa
Method
Soak cornmeal,rice & thoor dhal together for 4 hrs.Grind it to a smooth batter along with other ingredients(no fermentation required)mix salt.Make dosa as usual.

Rice Flakes & Cornmeal Ladoo

This year coming up with a different sweet for Diwali.An unique sweet with cornmeal.Hope you all will love it.

Ingredients
Rice flakes/Poha/Aval-1/2 cup
(slightly dry roasted,do not burn it)
Fine ground yellow cornmeal -1/2 cup
(Slightly dry roasted & powdered)
Desiccated coconut-5tsp
(Slightly dry roasted)
Sugar-1 cup
Cardamom-6
Fried nuts in 3tsp of ghee-1tbsp
Warm ghee-required amount for binding
(I used warm milk for binding)
Method
Powder rice flakes,cornmeal,cardamom & sugar to a semi smooth powder.Add the fried nuts,sprinkle warm milk or ghee little by little & shape it into round balls.
Note:If using milk store it in fridge for better shelf life.

Yellow Corn Meal Idly

Ingredients
Yellow corn meal(coarse)-1 cup
(dry roasted till it slightly changes its colour or pops up)
Curd-1 cup
Salt to taste
Roasted white rawa-3tsp
(optional,but I used it)
Cooking soda-1/8tsp
Method
Mix curd,rawa,corn meal & salt.Keep it aside for 30 minutes.Before pouring it in Idly moulds add the cooking soda.Beat it well & steam them in idly moulds till done.Serve it hot with any spicy chutney.

Avocado & Cornmeal Muffin

Ingredients
Avocado-1
(mashed)
Fine cornmeal-1/2 cup
All purpose flour-1 cup
Sugar-1/4 cup
Baking powder-1 & 1/2 tsp
Egg-2
(beaten)
Milk-1/4 cup
Salt -1/4tsp
Method
Mix all above ingredients together.Pour in greased muffin tins.Bake at 350 deg.C for 10 minutes or till done.

Cornmeal Dosa


Ingredients
Finely powdered Cornmeal-1 cup
Rice flour-1/2 cup
Besan-1 tbsp
Curd-3tsp
Chilly powder-1/2tsp
Salt to taste
Cumin seeds-1tsp
Oil to make dosas
Method.
Mix all above ingredients together pour water & mix it to a dosa batter consistency.Rest it for at least 3hrs(Cornmeal will take time to soak).Heat a tawa pour a ladle of batter in a circle shape.Pour oil & cook it both sides till light brown.Serve it hot.

Note:This dosa was tasting fine even after it became cold.

Cornmeal Payasam

Ingredients
Cornmeal powdered-1 & 1/2tbsp
Milk-5 cups
Brown sugar-1/2 cup
Cardamom powder-1tsp
Saffron-little(optional)
Fried cashewnut , Charoli & raisins-1tbsp
Ghee-2tsp
Method
Heat 2tsp of ghee in a pan add the cornmeal & fry till raw smell goes & gives a light brown colour.Pour milk & simmer it for 15 minutes or till cooked.Add the brown sugar,saffron,cardamom powder & nuts mix it well.Give a boil switch off fire & serve it hot.
Tips
For extra taste & richness you can add coconut milk & condensed milk.

Corn meal Pongal



Ingredients
Corn meal-1 cup
Yellow moongdhal-1/2cup
Salt to taste
Turmeric powder-1/4tsp
Ginger chopped-1/4''
Water-4 & 1/2cups
Tempering
Ghee-2tbsp
Cashew nut-8
Pepper crushed coarse-1/2tsp
Jeera-1tsp
Curry leaves-little
Method
Roast moongdhal & cornmeal till it gives a good smell.Pour water check for salt & pressure cook it till done.Temper it & mix it well.Serve it with my Tomato chutney.

Corn meal Vegetable Upuma


Ingredients
Corn meal roasted dry till you get good aroma-1 cup
Water-3 cups
Salt to taste
Carrot,peas,beans-1/2cup
(add any veg. of your choice)
Chopped onion-1/4
Curry leaves little
Ginger chopped-1/4''
Green chillies-4
Turmeric powder-1/4tsp
Tempering
Oil-4tsp
Mustard-1/2tsp
Uraddhal-1/2tsp
Channadhal-1/2tsp
Method
Heat oil in a pan temper it.Fry onion,ginger & greenchilles till its light brown.Add salt,turmeric powder & corn meal.Fry a bit and add boiling water.Cover & cook it in low heat till done.Garnish it with curry leaves.Serve it with my Prunes chutney.
