Vankaya Perugu Koora / Brinjal Curd Curry Recipe / Vankai Perugu Koora Recipe

Vankaya Perugu Koora
Ingredients
Brinjal -6
(Small size purple long brinjal)
Chopped onion-1/2
Chopped curry & coriander leaves-2tsp
Ginger & Garlic paste-1tsp
Slit green chillies-2
Turmeric powder-1/2tsp
Red chilly powder-1/2 tsp
Coriander powder-1tsp
Salt to taste
Besan-1 tsp
Curd-3tbsp
Oil-6tsp
Method
Slit the brinjals on top like a "X",do not cut all the way to the end.
Take a bowl add the turmeric powder,salt,besan & curd.Make a smooth paste,keep it aside.
Heat oil in a kadai add the onion,green chillies & curry leaves,fry till its transparent.
Now add the ginger/garlic paste red chilly powder,coriander powder & some salt.Fry till raw smell disappears.
Add the slit brinjals saute for 2 to 3 minutes.Sprinkle very little water ,cover & cook till its half cooked.
Pour the curd mixture & cook till the brinjals are fully cooked & the masala leaves the sides of the pan.
Switch off the flame garnish with curry & coriander leaves & serve hot with rice or roti.

Beans Paruppu Usili
Ingredients soaked for 1 hour
Channa dal-1/2 cup
Toor dal -1/2 cup
Red chillies-3
(soak dal & red chillies together for 1 hour)
Turmeric powder-1/8tsp
Salt to taste
Method
Drain out the water from the dal & grind the above ingredients with little turmeric & salt to a coarse mixture.Do not add water & grind.Grease a Idli plate & spread the mixture evenly & steam it for 5 to 7 minutes.Cool completely & crumble them with your fingers,keep it aside.
Tempering ingredients
Oil-3tsp
Mustard-1tsp
Jeera-1/4tsp
Urad dal-1/2tsp
Hing-1/2tsp
Curry leaves-few
Other Ingredients
Finely chopped green beans-2 & 1/2 cups
Salt to taste
( Steam or cook the beans with very little water&  salt till the vegetable is cooked.Do not over cook the beans it needs to be still crunchy & it need to retain its green colour).
Method
Heat oil in a pan & temper it.Add the dal mixture & saute for a minute.Now add the cooked beans & mix well making surely everything is well blend.Garnish with chopped coriander leaves & serve as a side dish.
Note:
a) Do not soak the dal too much.
b) Do not grind the dal like a smooth paste,grind it to a coarse mixture.
c) Grated coconut can be added at the last for extra taste.
d) You can replace beans with capsicum,banana flower or cluster beans.

Bhindi Masala
Ingredients
Bhindi/Lady's Finger/Okra-15 (Long Variety)
Chopped onion-a handful
Chopped tomato-1
Ginger & Garlic paste-1/2tsp
Chopped coriander leaves
Red chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/2tsp
Salt to taste
Amchur/Dry Mango powder-1/2tsp
Chaat Masala-1/4tsp
Crushed kastoori methi -1tsp
Tempering
Oil-3tsp
Cumin/Jeera-1tsp
Method
Wash the bhindi & wipe it with a clean kitchen towel.Make sure there is no moisture.Trim the ends & cut the bhindi into 1 inch length pieces.
Heat 1tsp of oil & in medium high flame fry the bhindi for couple of minutes till its half cooked.Remove & keep it aside.
In the same pan add the remaining oil temper it with cumin.
Now add the chopped onion fry till its light brown in colour.Add the tomato,ginger & garlic paste,fry till tomatoes are mashed.
Add the dry masala powders one by one except kastoori methi & chaat masala.Saute till everything is well combined.
Pour some water,cover & cook till raw smell disappears from the masala,now add the fried bhindi & kastoori methi.
Cook till the gravy is thick.Switch off the flame sprinkle the chaat masala & chopped coriander leaves,mix.
Best served with Roti.

Cabbage Poriyal
Tempering ingredients
Oil-2 tsp
Mustard-1/2tsp
Urad dal-1/4tsp
Hing - a pinch
Hing-a pinch
Curry leaves-few
Chopped green chillies or red chilly -1 or 2
Other ingredients
Chopped cabbage -3 cups
Salt to taste
Grated coconut-1tbsp
Method
Heat oil in a pan & temper it with above ingredients.
Add the cabbage,salt & fry for a minute. Reduce the flame sprinkle very little water.
Cover it with a lid & cook the cabbage till done.
Sprinkle the grated coconut,toss well.
Switch off the stove garnish with curry leaves & serve with roti or rice.
Note:
a) Turmeric powder can be added for extra colour
b) Adjust chilly according to your taste.

Ingredients
Seppankizhangu/Colacasia/Arbi -16
Salt to taste
Red chilly powder-1/2tsp
Coriander powder-1/2tsp
Turmeric powder-1/4tsp
garam masala - 1/4 tsp
Hing-a generous pinch
Rice flour-1tsp
Curry leaves-few
Oil-1 & 1/2 tbsp
Mustard-1tsp
Method
Cook the colacasia & peel the skin.Cut into medium size cubes.
Take a wide bowl add red chilly,turmeric,coriander powder,hing,salt, garam masala & rice flour,add the cubed seppankizhangu & toss them well.Make sure its well coated.
Heat oil in a pan temper it with mustard & curry leaves.
Now add the seppankizhangu & in medium low flame fry till its golden brown & crisp on all sides.
Best served as a side dish for rice.

Bengali Cabbage Potato Curry
Tempering ingredients
Oil-8tsp
Mustard & Jeera-each-1tsp
Fennel seeds-1/2tsp
Methi seeds-10
Hind-1/4tsp
Red chillies-3
Cinnamon-a small piece
Cloves-2
Bay leaf-1
Other ingredients
Chopped cabbage-2 cups
Cubed potato-3
Chopped tomato-3
Red chilly powder-1/2tsp
Garam masala-1/2tsp
Sugar-1/4tsp
Salt to taste
Turmeric powder-1/4tsp
Method
Heat oil in a pressure cooker temper it with above ingredients.
Add the cabbage & fry till light golden colour.This is very important step don't skip as this gives the main taste to the dish.
Now add the tomatoes & fry till its soft,add the potato & all dry ingredients & sugar.
Stir well till everything well combined,pour 1 & 1/2 cups of water & just give a whistle.Switch off the flame.
Best served with roti.

Green long brinjal cubed-4
Potato cubed-2
Salt to taste
Turmeric powder-1/4tsp
Chilly powder-1/2tsp
Onion chopped -1/4
Tomato chopped-1/2
Grated coconut -1tbsp
Curry leaves few
Tempering
Oil-4tsp
Mustard-1/2tsp
Jeera-1/4tsp
Urad dal-1tsp
Method
Heat oil in a pan temper it with above ingredients.
Add the potato,onion,tomato & dry powders saute in medium low flame till potatoes are 3/4th cooked.
Now add the brinjals & fry it till soft,sprinkle very little water if needed.
Sprinkle coconut & chopped curry leaves,mix them well.
Switch off the stove & serve it with rice or roti.

Ingredients
Eggplant-1 big
Onion chopped -1/2
Tomato chopped-2
Ginger/garlic chopped-1tsp
Green chillies chopped-4
Salt-to taste
Chilly powder-1/4 tsp
Turmeric powder-1/4tsp
Amchur powder/dry mango powder-1/2tsp
Jeera/cumin seeds-1tsp
Coriander leaves-little
Garam masala (optional)-1/4tsp
Oil-3tsp
Method
Apply oil on the eggplant,prick it with a fork.
Roast it in oven or on stove till the skin is black.Cool & remove the skin and chop the pulp,keep it aside.
Heat oil in a kadai temper jeera,add the onion,tomato,green chillies & ginger/garlic paste,fry till every thing is cooked & raw smell has disappeared.
Now add the eggplant & all dry masala powders, fry till everything is combined.
Switch off the flame garnish with coriander leaves.
Mix well & best served with Roti or Chapati.
Note:
a) Use any colour brinjal/eggplant,here i have used the fat green brinjal.

Ingredients
Beetroot chopped or grated -2cup
Salt-to taste
Turmeric powder-1/4tsp
Curry leaves-few
Hing-1 pinch
Grated coconut-2tsp
For Tempering
Oil-1tsp
Mustard-1/2tsp
Jeera/cumin-1/4tsp
Urad dal-1/4tsp
Channa dal-1/4tsp
Red chillies-1
Method
Heat oil in a kadai temper it with above ingredients.
Add the beetroot,salt ,turmeric powder,hing & salt.
Fry for a minute in low flame,sprinkle very little water.
Cover and cook till the vegetable is cooked.
Lastly add the grated coconut & curry leaves stir.
Switch off the flame & serve as side dish.

Tempering
Oil-2tsp
Mustard & Jeera-each 1/8tsp
Curry leaves
Other ingredients
Grated radish-2 cups
Chopped onion-1/2
Chopped tomato-1
Ginger & Garlic paste-1tsp
Salt to taste
Red chilly powder-1/2tsp
Turmeric powder-1/4tsp
Garam masala-1/4tsp
(In this recipe i didn't add any water at all)
Method
Heat oil in a pan & temper it.
Add onions & fry till raw smell disappears,add the ginger/garlic paste,tomato & radish.
In low flame fry till tomatoes are mashed well & radish loses its raw smell.
Now add all the dry ingredients & saute till oil separates the pan.
Switch off the flame & add curry leaves,serve it with roti or rice.

Stuffed Bitter Gourd
Ingredients ground to a smooth powder
Fennel seeds/somph-1 & 1/2tsp
Jeera/cumin-1tsp
Cloves-3
Cinnamon-a piece
Amchur/dry mango powder-1tsp
Red chilly powder-1 & 1/2tsp
Turmeric powder-1/2tsp
Coriander powder-2tsp
Salt-1tsp or to taste
Other ingredients
Crushed onion-1/2
Ginger & garlic paste-1tsp
Tempering
Oil-8tsp
Mustard-1tsp
Curry leaves-little
Chopped tomato-1
Diluted tamarind juice-1/2 cup
Brown sugar-1tsp
Method
Take bowl mix the crushed onion,ginger& garlic paste & the ground dry masala.
Mix it well & keep it aside.
Cut the karela into half remove the seeds.Stuff the karela with the masala.
Heat oil in a pan temper it .
Arrange all the stuffed bitter gourd,add the tomato,brown sugar,tamarind juice & curry leaves.Cover & cook it on low flame till brown on all sides &  the masala is cooked well & dry.
Garnish with curry leaves & serve it with plain rice or roti.

Ingredients soaked for 1 hour & ground to a coarse mixture (Do not add water while grinding)
Thoor/Thur dal-1/2 cup
Channa dal-1/2 cup
Red chillies-2
Garlic-1
(Add salt,turmeric powder & a pinch of hing,(a pinch of cooking soda totally optional) to the ground paste & steam it for 10 minutes.Cool & crumble the mixture)
Other ingredients
Chopped karamani beans/yard long beans-2 cups
Salt to taste
Turmeric powder-little
Grated coconut(optional)-2tsp
Chopped coriander leaves-little
Tempering
Oil-2tsp
Mustard,Urad dal,Jeera/cumin -each-1/4tsp
Red chillies-2
Curry leaves-little
Method
Heat oil in a pan temper it.Add the beans,salt & turmeric powder,saute for a minute.Sprinkle very little water,cover & cook till the veggie is cooked.
Now add the dal mixture,toss it well till everything is well combined.
Switch off the stove add coconut & coriander leaves,mix & serve as a side dish.
Note:
a) Do not soak the dal too much.
b) Do not grind the dal like a smooth paste,grind it to a coarse mixture.
c) You can replace with capsicum,banana flower or green beans.
d) Do not over cook the vegetable,retain the colour .

Ingredients for baking
Semi thick potato slices-1 large
(I cut it into smaller pieces)
Salt to taste
Red chilly powder-1/4tsp
Turmeric powder-1/8tsp
Oil-1tsp
(mix all above ingredients together in a baking tray.Bake it in oven at 400 deg. till 3/4th cooked & keep it in broil for 5 minutes till its slightly crisp on top.It took 15 minutes for me in the small table top oven.Each oven is different so keep an eye on them,so that you don't burn the potatoes)
Tempering
Oil-1tsp
Mustard,jeera/cumin,urad dhal-each- each 1/2tsp
Chopped onion-1tbsp
Chopped curry leaves-little
Slit green chillies-1
Red chillies-2
Grated coconut-2tsp
Method
Heat oil in a pan & temper it. Add the onions,green chillies & fry till its light brown,add the baked potatoes.Toss it well,sprinkle the coconut & give a quick mix.Now your potato fry is ready to eat with rice or roti!

Methi/Fenugreek Leaves And Tofu Fry


Ingredients blend to a smooth paste
Chopped boiled onion-1
Chopped tomato-1
Turmeric powder-1/4tsp
Red chilly powder-1/2tsp
Green chillies-1
MDH kitchen king masala-1/2tsp
Cloves-1,Cardamom-1,Cinnamon-a small piece
Ginger & Garlic paste-1/2tsp
Tempering
Oil-4tsp
Jeera/cumin seeds-1tsp
Other ingredients
Cubed firm tofu-2 cups
Frozen methi/fenugreek leaves-2 cubes
Salt to taste
Method
Heat oil in a pan & temper it.Add the ground paste & in medium flame fry the masala till oil separates the pan.Add the methi leaves,tofu, very little water & salt,cook till the gravy is dry.Serve it with roti or jeera rice.

Ingredients

Heat oil in a pan & temper it,add the potatoes & in medium flame fry for 2 minutes.Add the dry masalas & fry it in low flame till potatoes are well cooked,crisp on all sides & coated with the masala.Serve it as a side dish for roti.

Coconut-1 & 1/2 tbsp
Turmeric powder-1/4tsp
Salt to taste
Onion-1tbsp
Jeera/Cumin-1tsp
Garlic-2
Green chillies-2
Other ingredients
Drumstick / Moringa-2
(cut into finger size)
Tempering
Oil-2tsp
Mustard,Urad dal-each 1/2tsp
Curry leaves-little
Red chillies-2
Method
Heat oil in a pan temper it with above ingredients.
Add the drumsticks & the ground masala,fry for 2 minutes.
Add little water & cook it till done & dry.
Garnish it with curry leaves & serve as side dish for rice.

Stuffed Bhindi

Stuffing ingredients
Red chilly powder-1 tbsp
Coriander powder-1tsp
Roasted jeera powder-1tsp
Turmeric powder-1/2tsp
Salt to taste
Dessicated coconut powder-1 & 1/2tbsp
Besan-2tbsp
Chopped coriander leaves-2tsp
Amchur powder-1/8tsp
(dry mango powder)
Sesame seeds-1tsp
Oil-1tsp
(mix all the above ingredients in a bowl & keep it ready)
Other ingredients
Bhindi(Okra/Lady's finger)-35
(cut the head & make a deep slit)
Tempering
Oil-8tsp
Curry leaves-little
Hing-1/2tsp
Method
Carefully stuff some mixture into the bhindis without breaking the slits.Heat oil in a pan & temper it.Arrange the bhindis inside the pan add the left over stuffing if any on top.Sprinkle very little water ,cover & cook it in slow flame till masala is well cooked & bhindis are soft on all sides.Serve it with roti.
