Pav Buns Recipe / Pav Bread Recipe / Eggless Pav Bun Recipe / Ladi Pav Bread Buns Recipe

Pav Bun
Yields : 14 buns
Ingredients
Maida / All purpose flour - 3 cups
Luke warm water - 1 & 1/4 cup
Sugar - 2 tbsp
Dry yeast - 2 & 1/2 tsp
( original recipe says 2 &1/4 tsp )
Melted unsalted butter - 3 tbsp
Salt - 1 tsp
Maida - 2 tsp or more for dusting

Pav Bun
Method
Take warm water in a bowl,add the dry yeast & sugar.
Mix it cover & let stand until foamy & activated may be about 5 minutes.
Take another bowl add the maida,salt,melted butter now pour the activated yeast mixture and mix.
At this stage your dough will be sticky,dust your counter top with 2 tsp of maida.
Transfer your dough to the counter top & start kneading well for 10 minutes.
Slightly grease the bowl, place the well kneaded dough,cover and let raise in warm place until doubled.
It took 1 hour for my dough to raise.

Pav Bun
After 1 hour again place it on a counter top punch & knead for 10 minutes for the air bubbles to get released.
Divide the dough into 14 equal pieces,shape it into round balls.
Place the ball in a greased & dusted baking tray leaving some space in between.
Cover it with a cloth & let the dough proof for 1 hour.
Pre.heat your oven to 450 deg.F bake it for 8 minutes or till the top is slightly brown.
Remove from over & let the buns cool completely.
Serve these soft buns with Bhaji.

Eggless Apple Cake / Apple Eggless Cake Recipe

Eggless Apple Cake
Ingredients
All purpose flour / Maida - 2 cups
Apples - 1 & 1/2
( I used one red & one green apple)
Apples finely chopped - 1/2
Sugar - 1/2 cup
Oil - 1/4 cup
Cinnamon powder - 1/2 tbsp
Milk - 1/3 cup
Salt a pinch
Baking powder - 1 tsp
Baking soda - 1 tsp
Chopped Almonds - 5
Raisins - 2 or 3 tbsp

Eggless Apple Cake
Method
Remove seeds from the apples,cut into small cubes.Blend it with milk to a semi coarse puree.
Sieve maida,baking powder,baking soda & salt twice,keep it aside.
Add oil,sugar & cinnamon powder in a bowl & beat till everything is well combined.
Now add the apple puree & mix it well.
Slowly add the dry ingredients & mix them well.
Add the chopped nuts,raisins & chopped 1/2 apple & mix.
Pour this mixture into a greased tray & bake it for 30 minutes or till done at 350 deg.F.
Cool the cake completely & cut into pieces.
Note:
a) Instead of puree you can also grate the apples & add.
b) The recipe says walnuts,but i have used almonds as i ran out of them.

Eggless Whole Wheat Carrot Cake
Ingredients
Whole wheat flour - 2 cups
( You can replace with maida / all purpose flour)
Baking powder - 2tsp
Baking soda - 1tsp
Cinnamon powder - 1tsp
Nutmeg powder - 1/2 tsp
Dry ginger powder - 1/4 tsp
Sugar -1/4 cup
Brown sugar -3/4 cup
Buttermilk - 1 cup
Oil - 3/4 cup
Milk - 1 cup
Vanilla essence - 1 & 1/2 tsp
Grated carrot - 2 cups
Chopped almonds or walnuts - 1 cup
( I used almonds)
Raisin - 1/2 cup
Method
Pre. heat oven at 350 F ,grease a baking pan with butter & dust it with flour.
Sieve all the dry ingredients together & keep it aside.
Mix the chopped almonds & raisins into the flour.
Beat all the wet ingredients together in a bowl.Make sure the sugar has completely dissolved.
Now add the carrots & the four mixture.Gently fold it to make sure they are well combined.
Pour this into the greased baking pan.Tap slightly to make sure the batter is evenly spread.
Now bake this for 30 minutes or till done.
Coll completely & then cut the cake.
Serve them warm or cold with a scoop of  vanilla ice cream.

Note:
Sugar was right for our family ,Increase the quantity if you need them sweeter.

Eggless Jam Biscuits
Ingredients
Maida/ All purpose flour -1 cup
Vanilla instant pudding mix-3.4oz (96gms) packet
Corn flour-4tbsp
Butter-1/2 cup
Powdered sugar-1/2 cup
Curd-3tbsp
Vanilla essence-1/2 tsp
Filling
Jam any flavour-3tbsp
(I used strawberry flavour)
Before filling melt it in microwave for 10 seconds to loosen up.
Method
Beat butter,sugar & essence till frothy.
Now add the remaining ingredients & make a soft dough.
Roll the dough to 5mm thickness,cut it with a cookie cutter.
Make a small dent in the centre & fill it up with some jam.
Arrange it on a baking tray lined with an aluminium foil.
Bake it at 300 deg. for 10 minutes or till light brown.
Remove from oven & cool it on a rack,store it in an air tight container.
Note:
a) Add any flavour jam.

Eggless Whole Wheat Pecan Cookies
Ingredients
Whole wheat flour- 1 cup
Chopped pecan-1/4 cup
(Original recipe says almonds)
Sugar- 1/2 cup
Salt -1/4tsp
Vanilla essence -1/2tsp
(Original recipe says cardamom powder)
Butter softened -1/2 cup
Milk-1 or 2 tbsp
Method
Mix all the above ingredients together in a bowl.
Slowly add the milk (required amount) & form into a soft dough.
Make small balls,flatten then slightly with your palm.Arrange them on a ungreased baking tray about 1/2 inch. apart.
Bake for 10 to 12 minutes or till light golden brown on all sides at 360 deg.F.
Cool completely & store them in an air tight container.

Note:
I felt the cookies were a bit sweet for me, you can remove 1tsp of sugar.Its up to you.
Do not over bake the cookies,it will become hard.

Ingredients
All purpose flour-1 cup
Cocoa powder-1/2 cup
Icing sugar-3/4 cup
Baking soda-1tsp
Salt-1/2tsp
Oil-5tbsp
Butter milk-1 cup
Instant coffee powder-2tsp( dissolved in 1tbsp of water)
Chopped walnuts-1tbsp
Chocolate chips-1tbsp (dusted with little flour)

Eggless Custard Cake
Ingredients for the cake
Maida/All purpose flour -1 & 1/2 cups
Vanilla custard powder -3/4 cups
Sugar -3/4 cups
Baking powder-2 & 1/4tsp
Vanilla essence -1tsp
Butter softened -1/2 cup + 3tbsp (150 gms)
Milk -1 cup
Method
Pre.heat the oven to 350 deg.F.Grease a baking pan with little butter & dust it with flour, keep it ready.
Sieve maida,baking powder,custard powder & keep it aside.
Cream butter & sugar till it doubles,add the essence and milk,mix well till smooth.
Add the dry ingredients & fold in the batter till its smooth.
Pour this into the greased pan & bake it for 30 to 35 minutes or till done.
Cool completely & then pour the glaze on top,cut & enjoy!
Ingredients for the chocolate glaze
Powdered sugar -1/2 cup
Cocoa powder-1 & 1/2tbsp
Butter softened-1tbsp
Warm milk-2tbsp
Vanilla essence-1/4tsp
Method
Cream sugar,cocoa powder & butter well.
Add the essence & milk,whisk it well until well combined.
Pour it over the cooled cake slice & enjoy!

Ingredients
Flour-2 cups
Butter-1 cup
Sugar-3/4 cup
Vanilla extract-2tsp
Water -2tsp
Chopped almonds-1 cup
( I used only 1/2 cup)
Powdered sugar-1/2 cup
Method
Cream butter & sugar till smooth.To this mixture add the flour, vanilla essence & water,mix well.
Now  fold in the nuts,cover & keep the dough in the fridge for 3 hours.
Take it out from fridge & roll in small balls,slightly flatten it & bake in the oven at 325 deg for about 15-20 min. or till its light brown in colour.
Cool the cookies & sprinkle with powdered sugar, or put them in a zip lock cover & give them a good shake for the cookies to get coated and enjoy!!!!

Ingredients
Maida(All purpose flour)-1 & 1/2 cup
Sugar-3/4 cup
Baking powder-1 & 1/4tsp
Baking soda-1/2tsp
Salt a pinch
Thick curd-1 cup
Cooking oil-1/2 cup
(I used canola oil)
Vanilla essence-2tsp
Tutti fruity & raisins-together1 & 1/2tbsp(Optional)
(Recipe doesn't say)
Method
Pre. heat the oven to 300deg.Sieve maida & salt together & mix the fruits,keep it aside.Dissolve the sugar in curd by mixing it gently.Add the baking soda & baking powder,mix leave it to froth for 3 minutes.Pour the oil in this curd mixture & slowly keep adding the maida.Mix it well & pour the batter into a greased baking pan.Bake it at 300 deg. for 40 minutes or till done.Cool completely,cut & serve
