Microwave Masala Peanuts Recipe / Masala Peanuts In Microwave / Masala Kadle Recipe

Masala Peanuts
Ingredients
Raw peanuts - 1 cup
Salt to taste
Besan - 3 tbsp ( heaped)
Red chilly powder - 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Amchur powder - 1/4 tsp
Cooking soda - 2 pinches
Hing - 1/8 tsp
Oil - 1 tsp
Water - 1 tbsp
Chaat Masala - little to sprinkle at the end ( around 1/2 tsp)
Method
Take a bowl add all the dry ingredients except chaat masala & mix it well.
Soak the peanuts in water for 1 minute then drain the water completely.
Now add this peanuts to the dry ingredients.Toss it well to make sure the peanuts are well coated with the masala.
Now add the oil & water,mix well to make sure the masala hold to the peanuts.
Take a plate spread the peanuts evenly,make sure they are not crowded.
In power high microwave for 3 minutes remove give a quick mix reduce the power and microwave for 1 minutes.
Remove sprinkle the chaat masala toss well and serve once its cool.
Note :
a) You can add the chaat masala along with other dry ingredients but i love the taste of sprinkling at the last.
b) Each microwave power is different so cooking time may vary.
c) Adding amchur powder or garam masala is optional.

Roasted Cashew Nuts
Ingredients
Raw whole cashew nuts - 1/2 cup
Salt to taste
Ghee - 1/2 tsp
Pepper powder semi coarsely crushed - 1 tsp
Chaat Masala - 1/8 tsp
Method
Heat ghee in a wide microwave safe bowl for 30 seconds.
Add the cashew nuts to the ghee,mix it well to make sure the ghee is well coated to the nuts.
Microwave for 30 seconds,remove sprinkle the salt ,pepper powder & chaat masala.
Give a quick mix & microwave for 1 minute.For every 30 seconds give a mix.
Remove give a mix & put it back in microwave for last 1 minute.
Remove the bowl transfer to a plate for cooling & store it in an air tight container.

Note:
a) Every microwave power is different,so check for every 30 seconds interval  to make sure you don't burn the nuts.
b) You can reduce the pepper powder if you like ,I like to have them spicy.
c) Adding chaat masala is optional,my kids love the taste so I always add them.

Kesar Badam Peda
Makes: 10 Pedas
Ingredients
Almonds/Badam - 1/3 cup
Saffron - 2 generous pinches
Sugar - 3 tbsp
Warm milk - 4 tbsp
Milk powder - 1/2 cup
( I used nonfat instant dry milk powder)
Ghee - 1 tsp

Kesar Badam Peda
Method
Soak saffron in warm milk,keep it aside.
Soak almonds in hot water for 20 minutes.Peel the skin from the almonds.
In a mixi jar powder sugar & almonds,slowly add the saffron milk & grind to a smooth paste.
Take a wide microwave safe bowl transfer the almond paste into it.
Now add the milk powder & mix it well.
Keep it inside the microwave & heat on high for a minute.Remove mix it well & microwave for one more minute.Remove add 1 tsp of ghee,mix & microwave for one more minute.
The mixture will look like a non sticky dough.Cool the mixture,grease your palm with ghee,
roll it out into small balls & slightly flatten them.
Decorate with chopped nuts or saffron strings & serve.

Note:
a) Each microwave power is different so check for every minute.
b) Milk powder has a very thick granular texture,so grind it to a fine powder before use.
c) Adding cardamom powder is optional.
d) If you have a sweet tooth then add 1tsp extra sugar,the above measurement was perfect for our family.

Kalakand
Yields: 20 small pieces
Ingredients
Dry milk powder-1cup
Ricotta cheese-1cup
Sugar-3/4 cup
Butter-1/2 cup
Cardamom powder-1/2tsp
Chopped almonds&pistachio-1tsp each
Saffron-a pinch
Method
Grease a tray with ghee,sprinkle the nuts & saffron,keep it aside.
Take a wide microwave safe bowl,mix all above ingredients together.Make sure they have no lumps.
Cook this mixture in microwave for 8minutes(total).
For every 2minutes remove,mix and keep in microwave.The end product will look like a thick cuddled mixture.
Pour this on the greased tray,spread it evenly,cool completely.
Cut it to desired shape and serve.

Note:
Each microwave power is different,for me it took 8 minutes totally,cook accordingly.
If you want a brown color kalakandh ,cook for a minute more.

Badam/Almond Burfi In Microwave

Ingredients
Badam/Almonds-1/2 cup
(soak it in hot water for 30 minutes,then remove the skin)
Milk-3/4 cup
Sugar-1 cup
Saffron-little
Ghee-3tsp
(add 1 or 2 tsp of ghee to your burfi, if you think its getting dry)
Method
Grind badam with milk to a smooth paste.Pour this in a microwave safe bowl,add the sugar &saffron.Cook this mixture in microwave for total 13 minutes.For every 2 minutes remove,mix & keep it again.After 10 minutes,(for remaining 3 minutes)remove the bowl add 1tsp of ghee mix & cook again & remove it for every 1 minute & mix (3 times).The mixture will look like a soft dough.Grease a plate spread this evenly,cut it while still warm....

Note: Each microwave power is different,the time of cooking may vary.

Marshmallow Crispy Squares


Ingredient
Melted butter-3tbsp
Strawberry flavored marshmallows(around 20 medium size)
(Jet-puffed 5 0z bag)
Cheerios-3 cups
Raisins-1/4 cup
Chopped pecan-1/8 cup
Method
Coat the marshmallow in the butter & melt it in microwave for about 1 & 1/2 minutes.Remove it & stir in other ingredients till well blended.Pour it on a greased tray & press it well.Cool & cut into desired shapes.A quick & easy snack for kids are ready!!!!!!
Note:You can also replace with rice krispies cereal.

Microwave Double Decker Milk Burfi

Ingredients
Milk powder-4 cups
Maida-1 cup
Sugar-1 & 1/2 cups
Heavy whipping cream-1 pint(473ml)
Chocolate chips-1/2 cup
Ghee-1tsp to grease the tray
Method
Mix milk powder,maida, sugar and whipping cream well without any lumps.keep it in a microwave safe bowl & cook it for 1 min,taking it out for every one minute and mixing it & keep it back in microwave,it cooked for 8 minutes. At this point it will become frothy.Then pour 1/2 of the mixture into a greased tray and spread evenly.Immediately mix the chocolate chips in rest of the content and pour it on top of the white part.Let it cool to room temperature and put it in the refrigerator for a couple of hours.Cut it to desired shapes.

Microwave Dhokla Recipe / Dhokla Recipe in Microwave

Ingredients for dhokla
Besan/Gram flour-1 cup
Oil-3tsp
(I didn't use)
Salt to taste
Curd-2tbsp
Baking soda-1/2 tsp or ENO - 1/2tsp
( I have used ENO in this recipe, I prefer ENO for best result)
Sugar-1/8tsp
Lime juice-1tsp
Turmeric powder-less than 1/8tsp
Hot water-1/2 cup
Grated ginger & green chillies together-1tsp
Liquid to pour on top
Water-1/4 cup
Salt a pinch
Sugar-1 & 1/2 tsp
Lime juice-1tsp
(mix everything together)
Tempering
Oil-2tsp
Jeera/cumin-1/2 tsp
Mustard-1tsp
Curry leaves few
Chopped green chillies-1/4tsp (optional)
Garnish
Chopped coriander leaves & grated coconut
Method
Grease a glass tray & keep it aside.
Take a bowl mix besan,curd,salt,lime juice,sugar,grated ginger & green chillies.
Pour hot water & whisk it well without any lumps.
Now add the cooking soda mix it well & pour it immediately into the greased tray.
Microwave it for 3 minutes,each microwave is different adjust time accordingly.
Insert a tooth pick if comes out clean then your dhokla is done.
Cut into desired shape & pour the liquid on top while still warm.
Heat oil in a pan & temper it with above ingredients.
Garnish with coriander leaves & coconut.
Serve it with green chutney.

Chocolate Mug Cake

This is an easy dessert who has an excuse to bake....like not having an oven or proper baking dish,etc.Perfect fun project for kids too...

Ingredients
Maida-4tbsp
Sugar-4tbsp
Egg-1
Vanilla essence-1/8tsp
Cocoa powder-2tbsp
Oil-3tbsp
Milk-3tbsp
Chocolate chips (optional)-3tbsp
(I didn't use) Method
Take a coffee mug & mix all the dry ingredients together.Add egg & essence mix it .Pour the oil & milk,mix it thoroughly.Microwave it in high for 3 minutes.Your dessert is ready serve it warm with vanilla ice cream.
