Easy version of  Dilpasand / Dilkush / Coconut filled pastry

Dilpasand  Recipe (Easy Version) / Dilkush Recipe / Dilkhush Recipe /Dilkush Pastry Recipe / Coconut & Tutti Fruity Stuffed Pastry Recipe

Filling ingredients
Freshly grated coconut-1 cup
Sugar-1 cup
Tutti fruity-1tbsp
Raisins-1/4 cup
Cardamom powder-1tsp
Chopped almond-1/4 cup
Outer covering
Ready made puff Parathas-2
Or Puff pastry sheets

Method
Heat sugar & coconut in a sauce pan for 2 minutes.Switch of the stove add all the above ingredients.Mix it well & keep it aside.Take 2 puff parathas,roll 1 paratha little bigger than the second one.Place the filling in the center & spread it well.Close it with the second paratha(smaller one) & seal it well.Heat an oven & bake it for 10 minutes or till light brown at 325 deg.Cool & cut & serve.

Mango Cake

Ingredients
Maida- 2 cups
Baking powder-4tsp
Salt-1/2tsp
Sugar-1 cup
Mango pulp-1 & 1/2 cup
Oil-1/4 cup
Milk-1 cup
Large egg-1
Vanilla essence-1tsp
Method
Mix maida,baking powder,salt,keep it aside.In another bowl beat all other ingredients together.Slowly fold in the dry ingredients.Pour it on a greased baking tin.Bake it at 375 deg. for 30 minutes or till done.

Chocolate Flan Cake

Ingredients for the chocolate cake
Butter at room temperature-10 tbsp
Sugar-1 cup
Egg at room temperature-1
All purpose flour/Maida-1 & 3/4 cup
Baking powder-3/4 tsp
Baking soda-3/4 tsp
Cocoa powder-1/3 cup
Buttermilk-1 & 1/4 cup
Ingredients for the flan
Evaporated milk(12oz can)-1
Condensed milk-(14oz can)-1
Cream cheese at room temperature-4 oz
Eggs-3
Vanilla essence-1tbsp
For garnish
Cajeta(Mexican caramel sauce)-1/4 cup
Chopped pecan or walnuts-1/4 cup
Method
Put an oven rack in the middle of the oven & preheat to 350 deg.F.Coat a bundt pan with little butter,then coat the bottom with 1/4 cup cajeta & place in a large roasting pan with water.(The roasting pan will serve as a water bath during baking)
For the cake
Cream butter & sugar till light & fluffy,then beat in the eggs.Sift together the flour,baking powder,baking soda& cocoa powder.Beat 1/3 of the flour mixture & 1/2 of the buttermilk into the egg mixture.Repeat,ending with the flour mixture,blend until well incorporated.
For the flan
In a blender combine all ingredients under flan.Blend on high for 30 seconds.
Assembling
Scoop the cake mixture into the prepared bundt pan & spreading evenly.Slowly pour the flan mixture over the cake batter.Cover it with a foil & add about 1 inch of hot water to the roasting pan.
Carefully slide the pan into the oven & bake for 1 hour or until the surface of the cake is firm to touch.Cool the cake completely & then invert it.Garnish it with chopped nuts,cajeta & serve.

Apple-Cinnamon Upside-Down Cake

Today I am celebrating my 8ooth post.......Enjoy!!!!!!!!!!!


Ingredients for base
Red apple-3 medium size
(slice & toss it with 1tsp of lime juice)
Brown sugar-1/2 cup(less 2tsp)
Butter-2tbsp
Batter
Maida(All purpose flour) -1 & 1/2 cup
Baking powder-1 & 1/2 tsp
Salt-1/2 tsp
Cinnamon powder-1/2tsp
Sugar-1/2 cup
Egg-2
Vanilla essence-1tsp
Milk-1/2 cup
Method
Grease a 9''round cake pan with 2tbsp of butter & sprinkle the brown sugar on top.Arrange the apples on top.Sieve flour, baking powder, salt, and cinnamon keep it aside.Cream butter with sugar until light and fluffy. Add eggs and vanilla essence beat until incorporated. With mixer on low speed, alternately add the flour mixture and the milk,mix till blended.Pour the batter on top of the apples & bake at 350 degree for 45 minutes or till done.Cool completely before cutting.

Beetroot & Choc Chip Muffins

Ingredients
Maida-1 & 1/2 cup
Cocoa powder-1/3 cup
Baking powder-3tsp
Sugar-1 cup
Oil-1/2 cup
Eggs-2
Milk-1 cup
Beetroot pulp-1 cup
(got the pulp from extracting the juice from the juicer)
Cinnamon powder-1tsp
All spice powder-1/2 tsp
Chocolate chips-1/2 cup
Method

Sieve maida,spices,cocoa powder & baking powder,keep it aside.Beat eggs,milk,sugar & oil,slowly add the dry ingredients & beetroot pulp.Lastly add the chocolate chips ,mix it well.Pour it in a greased muffin tins & bake it till done in 180deg.c.

Mississippi Mud Bars

Ingredients
Melted butter-1/2 cup
Brown sugar-3/4 cup
Maida-1 cup
Egg-1
Vanilla essence-1tsp
Salt-1/4tsp
Baking soda-1/2tsp
Chopped walnuts-1 cup
White chocolate chips-4oz
Dark chocolate chips-4oz
Method
Beat butter,sugar,essence & egg.Slowly add the maida,salt,baking soda & mix it well.Add 1/2 of the both chocolate chips & walnuts.Pour it on a greased square/rectangle tray.Bake it at 350 deg. for 20 minutes or till its light brown colour & cooked.While hot sprinkle the remaining chocolate chips on top,leave it to melt. Swirl chocolates with a knife to marbleize. Sprinkle remaining 1/2 cup walnuts & press it slightly. Cool in pan until firm, then cut into bars.

Tutti Frutti Cake

Today is my son's Birthday,made this cake for him........


Ingredients
Maida-2 cups
Butter-1 & 1/4 cup
Sugar-1 & 1/4 cup
Milk-2/3 cup
Eggs-3
Baking powder-2tsp(heaped)
Vanilla essence-1 & 1/2 tsp
Salt-1/2tsp
Tutti frutti-1/2 cup
Method
Sieve maida,salt & baking powder.Mix in the tutti frutti & keep it aside.Cream sugar,butter & essence till doubles.add the eggs one by one & beat it well.Add the milk & maida mixture alternatively & fold it.Pour the batter in a greased baking dish.Bake it at 350 deg. for 45 minutes or till done.Cool & cut.

Marble Cake

Ingredients
Maida-3 cups
Butter-1 cup
Sugar-2 cups
Eggs-5
Milk-1 cup + 1tbsp
Baking powder- 1tsp
Baking soda-1/2tsp
Unsweetened cocoa powder-1/4 cup
Vanilla essence-2tsp
Salt-1/2tsp
Method
Pre heat oven to 350 deg. C.In a bowl mix maida,baking powder,baking soda & salt,keep it aside.Cream butter,essence & sugar well with a hand mixer.Add the eggs one by one & beat it well.In low speed slowly start adding the dry mixture alternating with milk.Take our 4 to 5 spoons of this cake batter into a bowl & add the cocoa powder to it.Add 1 tbsp of milk & mix it till smooth.Spoon the plain cake batter into a pan which is greased with butter and coat it with little maida and dust out the excess.Using the cocoa mixed cake batter make 3 strips on the cake as shown in the picture above.Now take a knife & gently draw swirls through the batter to marbleize it .Bake it for 50 minutes or till done.Cool completely before cutting.

Coca Cola & Marshmallow Cupcake

Today Sailajakitchen is turning ONE.I am very happy to celebrate it with a very different cupcake.Thanks to each & every one for making it a great success.The credit goes to all who encouraged me.
Part one ingredients:
Coca cola or other cola drink-1 cup
Butter-1/2 cup
Oil-1/2 cup
Cocoa powder-1/4 cup
(I used 1/2 cup because my kids love chocolate taste)
Large marshmallows-22
(I used 44 small ones multi coloured)
Part two ingredients:
Maida-2 cups
sugar-2 cups
Baking soda-1tsp
Vanilla essence-1tsp
Buttermilk-1 cup
Eggs-2
Method:
Pre. heat the oven to 325 deg.Grease the muffin tray.In a sauce pan mix part one ingredients except marshmallows.Bring it to a boil,remove from heat & add the marshmallows.Cover it & leave it to melt completely.Stir well.In a bowl mix part two ingredients together.Mix it well.Add the cooled part one ingredients & mix the batter well.Pour a ladle of the batter into the greased muffin tins & bake it for 10 minutes or till done.Cool completely & serve your soft cupcakes.I loved it with vanilla ice cream.

Black Forest Cake

Today is my 550th post.Celebrating it with a great joy!!!!!!!!!!!!!!!


Ingredients for the cake
Maida-1/2 cup
Baking powder-1tsp
Unsweetened cocoa powder-1/2 cup
Melted butter-3/4 cup
Eggs-6
Sugar-1 cup
Vanilla essence-1tsp
Salt a pinch
For filling
Cherry pie filling 15 oz-1/2 tin
Cool whip 8 oz-1pck
Vanilla essence-1/2tsp(I didn't use)
Garnish
Fresh or canned cherries,chocolate curls or grated
(I used maraschino cherries)
Syrup
Sugar-1/2 cup
Water-1 cup
Rum/Kirschwasser/Brandy/Whisky-1tbsp
(I used Rum)

(Boil sugar & water together for 2 minutes.Switch off the gas ,cool it & mix in the rum.Keep it aside)
Method

Pre heat oven to 350 deg.Grease a round pan.Sieve maida,salt ,baking powder & cocoa powder & keep it aside.Beat eggs,sugar & essence till fluffy for at least 5 minutes.Add the flour mixture slowly & mix it well.Stir in the melted butter.Now pour it in the greased pan & bake it for 35 minutes or till done.Cool the cake completely before decorating.

Assembling the cake
Cut the cake carefully into half or into three.Prick the cake with a fork.Sprinkle the bottom part with the sugar syrup,spread some pie filling on top.Apply a layer of cool whip on top.Place the second layer on top.Again repeat the process & finish it with the remaining cool whip & decorate it with grated chocolate.Keep it in fridge for at least 30 minutes,cut & serve it cold.

Rum Fruit Cake Recipe /Christmas Fruit Cake With Rum Recipe /Fruit Cake With Rum Recipe

Maida/All purpose flour-1 cup
Sugar-3/4 cup
Butter-1/2 cup
Egg-2
(separated & beat the white till its fluffy & forms peaks)
Baking powder-1tsp
Baking soda-1/4tsp
Salt-1/2 tsp
Vanilla essence-1tsp
Grated lemon & orange zest together-1/2 tsp
All spice powder-1/2 tsp
Ingredients soaked in rum for 3 days if you have time or for at least 2 to 3 hours
Rum-1/2 cup
Fruit cake mix or Tutti fruity-1 cup
Chopped cashew nuts-1/4 cup
Raisins-1/4 cup
Chopped almonds-1/4 cup
Chopped walnuts-1/4 cup
Caraway seeds-1tsp
Caramel liquid
Sugar-1/4 cup
Hot water-4tbsp
(In a pan add sugar & 1tsp of water & keep stirring till it changes its colour to golden brown.Now slowly add remaining 3tsp of water,mix it well.Be carefull at this stage it may splutter & burn fast.Remove from fire,cool it before adding it to the cake batter)


Method
Sieve baking powder,baking soda,all spice powders,salt & maida.
Beat the egg whites till fluffy.
Beat vanilla essence & egg yolks and keep it aside.
Cream butter & sugar till creamy,slowly add egg yolk mixture & maida alternatively & mix it well.
Now add the dry fruits mixture,lemon/orange zest,caramel liquid & egg whites, fold it gently.
Grease a baking tray dusted with little maida/all purpose flour.
Pour this cake mixture in it,bake it for 45 minutes at 350 deg.C or till done.
Cool it completely & brush it up with some rum,cut & serve.
Note:
a) I usually wrap it up tight with a foil & cut the next day.
b) If you think your batter is tight add 1/4 cup milk to loosen it up.
c) If you don't have all spice powder just add cardamom 7 cinnamon powder.

Real Chocolate Chip Cookie

Ingredients
Maida-2 &1/4 cup
Baking soda-1tsp
Salt-1/2tsp
Butter or Margarine-1 cup
(I used margarine)
Sugar-3/4 cup
Brown sugar-3/4 cup
Vanilla essence-1tsp
Eggs-2
Chocolate chips 12oz packet-1
Method
Mix maida,salt & baking soda in a bowl.Cream margarine,brown & white sugar,vanilla essence & eggs.Add the maida mixture & mix it thoroughly.Stir in the chocolate chips & drop the dough in spoon or shape it,arrange it on a baking tray.Bake at 300 deg.F for 8 to 10 minutes or till light brown.Cool completely & store in air tight container.

Ingredients for the cake
Maida-2 cups
Baking powder-1tsp
Salt-1/4tsp
Grated nutmeg-1/8tsp
Butter-1 cup
Sugar-1 & 1/4 cup
Eggs-4
Vanilla essence-5tsp
Method
Pre heat the oven to 325 deg.C.Mix all the dry ingredients together & keep it aside.Cream butter,sugar & essence till fluffy.Slowly add eggs one by one & beat it well.Add the dry ingredients & fold it.Pour it in a greased baking tin & bake it for at least 45 minutes or till done.Cool it completely & cut.

Christmas Fruit Cake

Wish you all a Happy New Year............

Ingredients
Maida-1 cup
Butter-3/4 cup
Sugar-1 cup
Baking powder-1tsp
Vanilla essence-1tsp
Eggs-2
(separated)
Cream of tartar-less than 1/8tsp(optional)
Ingredients soaked in orange juice or rum for at least a day.
Fresh orange juice-1/3 cup
Fruit cake mix-1 cup
(its citrus peels & cherries cut into cubes soaked in dry sugar syrup)
or Tutti fruity
Raisins-1/4 cup
Cashew nut-1/4 cup
Chopped almonds-1/4 cup
Chopped walnuts-1/4 cup
(dust the above ingredients with 2 tsps of maida)
Spice powders
Cinnamon powder-1/4 tsp
Grated nutmeg-1/4tsp
Grated fresh ginger-1/4tsp
Clove powder-1/4tsp
Caramel
Sugar-1/3 cup
Water-5 tsp
(In a pan add sugar & 1tsp of water & keep stirring till it changes its colour to golden brown.Now slowly add remaining 4 tsp of water,mix it well.Be care full at this stage it may splutter & burn fast.Remove from fire,cool it before adding it to the cake batter)


Method
Sieve baking powder,spice powders & maida.Add tartar to egg whites & beat it till fluffy.Beat essence & egg yolks.Cream butter & sugar till creamy,slowly add egg yolk mixture & maida alternatively & beat it till mixed well.Now add the dry fruits mixture,caramel liquid & egg whites & fold it well.Grease a baking tray dusted with little maida.Pour this cake mixture in it,bake it for 40 minutes at 350 deg.C till done.Cool it completely & cut it the next day.

Pineapple Upside Down Cake Recipe / Upside-Down Pineapple Cake Recipe

Pineapple Upside Down Cake
Ingredients for topping
Butter-1/4 cup
Light brown sugar-3/4 cup
(If using dark brown sugar use 1/2 cup)
Tin pineapple slices-7
(pat it dry)
Maraschino cherry-7
Ingredients for the batter
All purpose flour-1 & 1/2 cup
Baking powder-2tsp
Salt-1/4 tsp
Butter-1/2 cup
Sugar-1 cup
Vanilla essence-1tsp
Egg-2 separated
Milk-1/2 cup
Tartar-1/4tsp
Method
Pre. heat oven at 350 deg.F.Grease a round pan with butter & dust it with flour.
Sift flour,salt & baking powder,keep it aside.
Cook 1/4 cup of butter & 3/4 cup of brown sugar in a pan till they melt.
Pour this mixture into the greased pan cool a bit.
Arrange the pineapple slices & cherry on top.
Cream butter & sugar till it doubles,add the yolks & beat well.
Now slowly start adding the milk & flour mixture alternatively till everything is well combined.
Beat the egg white & tartar till it forms peaks.Gently fold into the cake batter.
Pour this mixture on top of the pineapple & cherry.
Level it well & bake it for 45 minutes or till done.
Cool completely & then invert the cake.enjoy them warm.

Bagel Crostini

Ingredients
Large Bagel-1
Any herb-1/8tsp
(I used basil)
Melted butter-4tsp
Parmesan cheese-1/4tsp Method
Cut the bagel into half,then cut into thin circles.Mix all above ingredients together.Brush it on top of each circles.Place it on a baking tray,do not over lap them.Bake it at 350 deg c for 5 minutes or till brown.Keep watching it,otherwise it can get burnt very fast if unnoticed.Cool & store it in an air tight container.This is an easy tea time snack........

Sweet Potato Buns

Ingredients
Maida-3 cups
Warm milk-1 cup
Brown sugar-1/2 cup
Salt-2tsp
Dry yeast-2tsp
Cinnamon powder-1/2tsp
Grated nutmeg-1/8tsp
Cooked mashed sweet potato-1 cup
Egg beaten for wash(optional)
(This is given just for a glaze on top)
Method
Mix yeast in warm milk.Mix all above ingredients together.Pour the yeast mixture into the maida mixture & knead it to a soft dough (like a chapati dough).Cover it with a wet cloth & keep it aside for 1 hour(dough will raise).Punch it & knead it again for 2 minutes.Make small balls & place it on a baking tray.Cover it with wet cloth again for 1 hour.Brush egg on top of each bun before baking.Bake at 375 deg.C for 20 minutes or till top is brown.

Apple & Pecan Bars


Ingredients
Maida-1 cup
Baking powder-1tsp
Salt-1/4tsp
Cinnamon powder-1/4tsp
Butter or Margarine melted-1/4cup
(I used butter)
Light brown sugar-1/2cup
White sugar-1/2cup
Egg-1
Vanilla essence-1tsp
Chopped apple-1/2 cup
Chopped pecan-1/2 cup
Ingredients to sprinkle on top
White sugar-1tbsp
Cinnamon powder-1/4tsp
(mix it together)
Cream cheese glaze
Cream cheese-3tsp
Sugar-1tsp
Vanilla essence-1/4tsp
Butter-1/2tsp
Milk-1tsp
(cream every thing together to a tooth paste consistency)
Method
In a bowl mix maida,baking powder,salt & cinnamon.In another bowl mix butter,egg,brown & white sugar & essence.Slowly add the maida mixture & mix with a wooden spoon till combined.Stir in the apples & nut.Spread it on a greased tray or pan evenly.Sprinkle the Cinnamon & sugar on top.Preheat oven at 350 deg.c & bake it for 25 minutes.Cool & cut into squares & pipe the glaze on top & serve it.

Zebra Cake Recipe


Ingredients
Egg-4
(room temperature)
Sugar-1 cup
Milk-1 cup
Oil-1 cup
Vanilla essence-1/2tsp
Maida-2 cups
Baking powder-1tbsp
Hershey's Coco powder-2tbsp

Method
In a bowl sieve maida & baking powder & keep it aside.In another bowl beat egg & sugar till mixture is creamy and light in colour,now add milk & oil mix till every thing is blended.Slowly add maida mixture to the wet ingredients and beat just until the batter is smooth and the dry ingredients are thoroughly incorporated.Divide the mixture equally into 2 bowls.Add cocoa powder to one bowl & mix it well.Grease a baking tray take a ladle of white batter pour it at the middle,next take cocoa batter & pour it on top of white mixture.Do not spread it or tilt the pan to distribute the mixture it will spread by it self.Repeat the process alternatively till your batter is over(see the picture).I poured the left over batter in muffin pan & followed the same process. Bake it at 350 deg.C for 35 minutes or till done..

Bread Cones


Ingredients
Maida-3 & 1/2 cups
Yeast-2 & 1/4tsp
Egg-1
Sugar-1/4 cup
Oil-3tbsp
Water-1/2 cup
Milk-1/2 cup
Salt-1 tsp
Sesame & Poppy seeds to sprinkle on top
Egg wash on top.
Egg-1
Milk-1tbsp
(beat both together)











These buns are made with left over dough!!!!!



Method
Heat milk & water till its hot(before boiling stage).Let it become warm add oil,sugar &salt.Mix it well.In another bowl mix egg,maida & yeast.Pour the milk mixture into this & knead it to a soft dough.Place it on a greased bowl,cover & leave it to ferment for 1 hour.Punch it well to release bubbles.Take small balls roll it like a long rope.Make paper cones & cover it with foil completely(like mehendhi cones).Grease these cones,roll the cone with the dough made like rope.Brush it with egg wash & sprinkle poppy seeds & sesame seeds on top.Bake it at 350 deg.C for 20 minutes or till top is brown.Serve it with any filling of your choice.
Note: As per the original recipe it says bread flour but I used maida.....
