Dalgona Coffee
Ingredients
Instant coffee powder - 1 tsp
Sugar - 3 tsp
Hot water - 1 tsp
Cold milk 3/4 cup
Method
Take a cup add the coffee powder,sugar and hot water using a hand beater or spoon start whisking till they are fluffy,frothy and forms peaks.
Pour cold milk in a cup and top the whipped coffee on top sprinkle some cocoa powder and serve immediately.

Note:
Hand beater is better to get good result,

Ingredients
Water - 2 glasses
Tea leaves - 1 tsp
Honey as needed
Lemon wedges - 2
Fresh Lemongrass - 1 long leaf chopped
Method
Pour water in a pan add tea leaves and copped lemongrass leaves bring it to a boil.
Switch off the stove add the lemon wedges and honey,cover and wait for a minute.
Filter the tea and serve hot or warm.

Ingredients
Tuscan Melon / Melon - 1/2
( Remove skin and seeds,chop them into cubes)
Mint leaves - 8
Sweetener - 1 tbsp
( you can use honey or sugar)
Lemon juice - 1 tbsp
Dry ginger powder or fresh ginger - 1/4 tsp (optional)
Salt a pinch
Ice cubes as needed


Method
Take a blender add the cubed melon,mint leaves,lemon juice,sweetener and ice cubes.
Blend to a smooth juice.Pour it in a glass and enjoy this chill.

Gulkand Tea
Ingredients for a cup of tea
Water - 1/2 cup
Milk - 1/2 cup
Homemade Gulkand - 1/2 tbsp

Tea powder - 1 tsp
Sugar add if needed
Method
Take a sauce pan pour water add tea powder and gulkand boil for a minute.
Now pour the milk and give a boil.
Switch off the stove and filter it using a tea strainer.
If sugar is needed add to your taste mix and serve them hot.

Rose Petals Tea

Instead of Gulkand use a big red rose petals and a crushed cardamom and follow the same instruction.

Watermelon Mango Juice

Ingredients
Ripe mango - 1 small
Chopped seedless watermelon - 2 cups
Sugar/Blue Agave sweetener - as needed
Vanilla ice cream - 2 scoops
Mint leaves for decoration
Ice cubes

Method
Peel mango and chop into cubes
Remove skin from watermelon and cut into cubes.
Add mango,sweetener and ice cubes to a mixi jar and blend to a smooth thick juice.
Put watermelon,sweetener and ice cubes in a mixi jar and blend smooth.
Take a tall glass pour the mango juice at the bottom.
Pour the watermelon juice on top of the mango juice.
Top it up with vanilla ice cream,decorate with mint leaves and ready  to serve.

Simple Syrup
Ingredients
Sugar - 2 cups
( Colour of the syrup is dark because i have used unrefined organic sugar)
Water - 1 cup
Method
Take a sauce pan add sugar and water.
Stir it in medium heat for 3 minutes till the syrup is transparent and slightly thick.
Do not over boil as your syrup will thicken when cooled.
Switch off the stove,cool and filter the syrup.
Store it in a clean jar in fridge.
Note:
a) There are 3 different kinds of simple syrup thin,medium and thick.
For thin syrup the ratio is water - 3 cups and Sugar -1 cup.
For medium syrup water - 2 cups and sugar - 1 cup.
For thick syrup water - 1 cup and sugar - 1 cup.
Today we have made the medium syrup which is added as a sweetener for all juices and beverages.
b) Add required syrup to sweeten your beverages.

Badam Milk Powder
Ingredients
Badam flour / Blanched Almond flour or Powdered blanched almonds - 6 tsp heaped
( Bought almond flour from Costco))
Sugar powdered - 6 tsp
( reduce if its too sweet for you)
Cardamom powder - 1 tsp heaped
Pistachio powdered - 1 tsp heaped
Crushed saffron - 1/2 tsp
Sarapappu / Charoli/Chironji - for garnish
Milk as needed
Method
Take a mixi jar and powder sugar,pistachio,saffron to a fine dry powder.
Lastly add the almond flour and cardamom powder and run once to make sure the powders are all well combined.
Store this in a clean jar in fridge.

How to make Badam drink:
Heat 1 cup of milk add 1 tsp or as needed of the above badam powder and give a boil.
Add sugar if needed.
Switch off the stove add the chironji and serve this drink hot or cold.

Note:
Here i have used ready made almond flour if you don't have then soak almonds in hot water remove skin and pat them dry.Then dry roast in a pan to make sure there is no water,cool and dry powder the almonds.Your almond powder is ready.

Ingredients
Fresh sugarcane - 1
Lemon juice -2 tsp
Ginger a very small piece
Water as needed

Method
Wash the sugarcane well and wipe it.
Break into long pieces now using a sharp knife or sugarcane peeler remove the outer layer.
Chop the sugarcane into very small pieces.Put these pieces inside a blender/mixi.
Do not put big pieces into your blender,your blender may break.
Add the ginger pieces and little water.
I used the extract juice option and removed the juice.
Filter the juice using a fine strainer.I filtered second time using a clean cloth to get a clear juice.
Add lemon juice mix and serve immediately.

Note:
a) Chop the pieces into small pieces otherwise your blender will stop working.
b) Filter twice to get a clear juice.

Ulundu Kanji
Ingredients
Urad dal / Black gram dal- 1/4 cup
Grated coconut - 3 tsp
Cardamom crushed - 2
Dry ginger powder/chukku podi/Sukku - 1/8 tsp
Salt a pinch
Water - 2 cups
Boiled milk - 2 cups
Palm jaggery/Pana vellam/Karupatti/Sugar - as needed to your taste
Method
Dry roast urad dal till light brown,cool and powder it to a smooth powder.
Take a pan add water and the ground urad dal powder mix it well till there are no lumps.
Now switch on the stove and cook the mixture till its thick now add the boiled milk,cardamom powder,a pinch of salt,palm jaggery and grated coconut.
Boil this for a minute and switch off the stove.
Your kanji is ready to serve warm.

Note!
a) Kanji will become thick once it cools so add boiled milk or hot water to get the right consistency.
b) Keep stirring the mixture otherwise it will get burnt at the bottom.
c) You can also make this kanji with whole urad dal.

Ingredients
Fresh basil leaves - 10
Ginger a very small piece
Green chilly -1
Lemon juice - 2 tsp
Salt to tater
Water as needed to dilute
Curd - 1 cup
Method
Take a blender add ginger,green chillies,basil leaves add little water and make a coarse paste.
Add the curd and blend it once.
Take a jar pour the ground curd mixture,salt,lemon juice and enough water to dilute.
Mix and serve cold with some ice cubes.

Ingredients
Ripe mango - 1 small
( chop the mango into small cubes )
Cold whole milk - 1/2 cup
Sugar - 1 & 1/2 tsp or as needed
Vanilla Ice cream - 1 scoop
Chopped nuts - 1 tsp
( I used pistachio & almonds )
Cherry for decoration
Cardamom - 2 crushed
Chopped mango few for decoration
Method
Add chopped mango,sugar,cardamom &milk in a blender jar.
Blend it till everything is well combined.You will get a thick milkshake.
Pour this into a tall glass top it up with a scoop of vanilla ice cream.
Garnish with chopped nuts,mango pieces & cherry.
Serve them cold immediately.
Note:
a)You can make this drink even with mango pulp.
b)Add nuts of your choice.
c)Crushed saffron can also be added for extra flavour.
d)Choose nice ripe sweet mangoes for this recipe.

Mango Gulkand Lassi
Ingredients
Ripe mango - 1 medium size
( Remove the pulp i got around 3/4 cup )
Milk - 1/2 cup
Thick curd - 1 cup
Sugar - 2 tsp
( As my mangoes were not sweet so i added sugar)
Rose syrup/Rooh Afza - 1 tsp
Chopped almonds and pistachio crushed - 1tsp
Gulkand - 1tbsp
( I used homemade gulkand, click HERE for the recipe)
Ice cubes
Method
Take a blender add the mango pulp,sugar,curd ,gulkand and milk,
Blend until smooth,If your lassi is too thick add some more milk.
Pour into a glass add some ice cubes top it with chopped nuts,few edible dried rose petals ( optional) and Rooh Afza.
Serve them immediately!
Note:
Choose nice ripe mangoes for this recipe.
Make sure curd is not sour.
Add any flavouring like cardamom powder or saffron instead of Roof Afza.

Ingredients
Chopped watermelon-2 cups
Lemon-1/2
(squeeze out the juice)
Salt a pinch
Crushed mint leaves - 5 leaves
Grated ginger-1/2 tsp
Sugar (add only if  needed )
Water required amount to dilute
Method
Take a blender add the watermelon cubes.ginger and mint puree till smooth liquid
Strain this mixture using a mesh strainer.
Add cold water,lemon juice and a pinch of salt,mix well.
Serve them cold.

Ingredients
Dry ginger powder/Chukku/Sukku/Sonti - 1 tbsp
Coriander seeds / Dhania - 2 tbsp
Whole pepper - 1/4 tsp
Cloves -1
Cardamom - 1 small
Palm jaggery/Karupatti vellam - as needed
Method
Take a pan and add the coriander seeds.roast till its just warm switch off the stove,
Take a mixi jar or coffee grinder add all the above ingredients except the palm jaggery and dry grind to a fine powder.
Store it in a clean glass jar.
Method
Take a glass of water add 1/2 or 1 tsp of this ground powder and boil for a minute.
Switch off the stove and add the palm jaggery according to your sweetness.
Cover it with a lid and rest for 2 to 3 minutes then filter and serve them hot or warm

Ingredients
Raw green mango - 1 medium size
Fresh mint leaves - a handful
Salt to taste
Black salt - 1/2 tsp
Pepper powder - 1/2 tsp
Roasted and powdered jeera / cumin - 3/4 tsp
Cardamom crushed - 2
Sugar - 1/2 cup
Water as needed

Method
Wash and cut mango into half,pressure cook till soft.
Cool & remove the pulp,blend the pulp to a smooth paste.
Grind mint leaves,salt,black salt,pepper powder,cardamom,jeera powder to a smooth paste.
Take a jar add the mango pulp along with the cooked water add the sugar,mint mixture ans add water as needed.
Mix well add the ice cubes & serve them cold.
Note:
a) Add sugar according to the sourness of the mango.
b) Crushed saffron can be added for extra flavour

Milk - 1 cup

Crushed cardamom -1
Sugar/ Brown sugar/ Naatu Sarkarai or Palm sugar - 1 tsp
Method
Boil water in a pan add sukku powder,sugar and cardamom.
Boil for 1 or 2 minutes till the sugar has completely dissolved.
Add milk and give a boil.switch off the stove.
Strain out the milk using a strainer.
Serve it hot !

Ingredients
Tea powder - 1/2 tsp
Water - 1 & 1/4 cup
Cardamom crushed - 1
Crushed cloves - 1
Crushed Cinnamon - a very small piece
Crushed ginger - 1tsp
Jaggery/Palm Sugar / Sugar - 1 tsp
Lemon juice - 1 tsp
Method
Boil water in a sauce pan,add the jaggery or sugar, crushed ginger & cardamom.
Reduce the flame & add the tea powder,allow to boil for 2 minutes.
Switch off the flame & add the lemon juice.
Filter the tea & serve hot.
Note:
a) Do not add more tea powder,add less than the quantity you add for normal tea.
b) You can add honey instead of jaggery or sugar.
c) Omit crushed cinnamon & cloves if you don't like the flavour.

Ingredients
Freshly squeezed lemon juice - 4 cups
Sugar - 3 & 1/2 cups
Water - 4 cups
Crushed ginger - 1 & 1/2 tsp
Method
Take water & sugar in a saucepan,add the crushed ginger.
Bring this to a nice boil once sugar has dissolved reduce the flame.
Boil this mixture till it reaches to a one string consistency.
Switch off the flame,cool the liquid completely.
Once it has come to room temperature add the lemon juice & mix it well.
Filter this mixture and store it in a clean jar in fridge.
Add 1tbsp of syrup to 1 glass of cold water,add ice cubes and enjoy.
Note:
a) My lemon juice is not that sour so i reduced the sugar quantity,add more if you like.
b) Do not add lemon juice to hot sugar syrup,cool completely & then add.
c) Add a pinch of salt while making lemonade.
d) For extra flavour you can add crushed saffron strings and crushed cardamom.

Ingredients
Lemon - 1 medium size
Cold water 2 & 1/2 glasses
Salt to taste
Black salt - 1/8 tsp
Chaat masala - 1/2 tsp
Roasted & powdered jeera/cumin powder - 1/4 tsp
Pepper powder - 1/8 tsp
Mint leaves crushed - 6
Sugar - 2 tbsp
Method
Take a jar squeeze out the juice from the lemon.
Add all the above mentioned ingredients.
Stir to make sure sugar has completely dissolved.
Filter & pour it in a glass,add ice cubes garnish with some mint leaves.
Serve cold immediately as a refreshing drink.
