Ingredients
Jamun/Jambul/Black Plum/Jaman - 20
( I used the frozen jamun so the colour of the drink will differ)
Fresh mint leaves - 8
Black salt - 1/4 tsp
Jaggery or Brown sugar - 1/2 tsp
Cold water as needed to dilute
Ice cubes

Jamun Juice
Method
Take a mixi jar add the jamun,mint leaves and black salt pulse it to remove seeds.
Remove the seeds and blend the pulp to a smooth liquid.
Filter the juice using a seiver into a bowl to this add the brown sugar needed water and ice cubes.
Mix and serve chill.

Ingredients
Cold whole milk - 1 cup
Watermelon juice - 1/2 cup
Rooh Afza - 1 tbsp or according to your taste
Finely chopped watermelon pieces - 1 cup

Pina Colada
Ingredients
Pineapple juice - 2 cups
Thick coconut milk - 1 cup
( I used the can coconut milk)
Ice cubes few
Sugar - 1 tsp (optional)
Method
Put all the above mentioned ingredients except ice cubes in a blender.
Blend well till its smooth.
Pour it into a glass add some ice cubes and serve cold.

Vetiver Sarbath
Ingredients
Vetiver root/grass / Camel Grass - a small bunch ( around 100 gms)
Jaggery - 1 cup
Water - 6 cups


Method
Wash the vetiver root well to remove mud or dust.
Soak it in fresh water overnight.
Next day add the vetiver with water in a pan and boil for 5 minutes. add jaggery and boil it for another 10 minutes.
Cool and filter the syrup/essence discard the root,store it in a clean bottle in fridge.

How to use?
Take 1/4 cup of the essence/syrup in a glass pour 3/4 cup cold water.
Add few drops of lemon juice,mix and serve cold.
Your refreshing drink for summer is ready!

Note:
Do not boil too much otherwise your syrup will turn bitter.
Store this in fridge.
Add jaggery according to your sweetness.
You can replace jaggery with white sugar or palm sugar

Gulkand Lassi
Ingredients
Cold milk - 1/2 cup
Thick curd - 1 cup
( Curd should not be sour)
Sugar - 1tsp
( As my gulkand was not sweet so i added sugar)
Rose syrup/Rooh Afza - 1 tsp
Chopped pistachio  - 1tsp
Crushed cardamom - a generous pinch
Gulkand - 1tbsp
( I used homemade gulkand, click HERE for the recipe)


Method
Take a blender add sugar,gulkand,curd and milk,blend until smooth
Pour into a glass, top it with chopped nuts,few edible dried rose petals ( optional) and Rooh Afza.
Serve them immediately!

Homemade Grape Squash / Grape Juice Recipe / Grape Cordial

Grape Juice
Ingredients
Seedless red grapes - 5 cups
Sugar - 1 & 1/4 cups
( adjust sugar according to the sweetness of your grapes)
Lemon juice - 1 tsp
Salt a pinch
Water - 3 cups

Grape Juice 
Method
Wash the grapes well put it inside a sauce pan add sugar and pour water.
In medium low flame simmer the mixture till the grapes are soft and mashed,
Mash the grapes occasionally using a masher.
This will take about 15 minutes add the lemon juice and salt boil for couple more minutes and switch off the stove.
Cool the mixture and strain the juice and discard the skin.
Store the juice in a clean bottle in fridge.
Take a glass add 1 tbsp or more syrup pour cold water add ice and serve.

Ingredients
Cold water - 2 cups
Lemon large - 1/2 squeeze out the juice
Sugar or Honey as needed
Salt a pinch
Crushed cardamom seeds  - 4
Saffron strings - a generous pinch
Ice cubes
Method
Pour water in a glass add sugar,lemon juice,salt and crushed cardamom,mix well till sugar dissolves.
Add the saffron strings and ice cubes,serve chill.
Enjoy this refreshing summer drink.

Water - 1 cup
Cardamom crushed - 1
Tea powder - 2 tsp
Sugar - 1 & 1/2 tsp
Hot milk - 1 cup
Fresh arabian Jasmine flowers - 10
Method
Pour water in a saucepan add the tea powder,jasmine flowers and crushed cardamom,bring it to a boil.Now add the hot milk and sugar bring once again to a boil and switch off the stove.
Filter and enjoy this tea!

Note:
Instead of white sugar you can replace with honey,palm or brown sugar,

Ingredients
Melons peeled and  chopped - 2 cups
( I used santa claus melons / piel de sapo melons)
Beet Rose Syrup - 2 tsp
Mint leaves for garnish
Method
Take a blender add the melon cubes and blend to a smooth juice.
Take a tall glass pour the beet rose syrup next on top pour the blended melon juice.
Garnish with mint leaves and serve cold.Just before drinking stir and enjoy!

Ingredients
Beetroot - 1 medium size
( wash the beetroot peel and pressure cook with some water till soft,cool and grind to a smooth semi thick paste.Measure the paste i got 1 & 1/4 cup so i used the same amount of sugar)
Sugar - 1 & 1/4  cup
Rose essence few drops

Beetroot Syrup
Method
Take a pan add the ground paste & sugar in medium low flame keep cooking till raw smell has disappeared and the liquid has come to a thin syrup consistency.
Do not over cook when cooled the syrup will turn hard and crystallize.
Switch off the stove and add few drops of rose essence and mix.
Cool completely pour it into a clean jar and keep in fridge.


How to use
Take some cold milk in a glass add 1tsp of the syrup and mix it well and serve.
If you like add soaked chia seeds and serve.

Note:
a) Do not cook the syrup till thick,this take just couple minutes to get a thin syrup.
b) If you don't like rose essence add cardamom powder.
c) You can make this with cane or palm sugar but there will be a slight change in taste.
d) If you don't want to add milk add some ice cubes pour water and drink like a juice.
e) You can cut the beets into cubes blend it to a smooth paste,filter and then cook it with sugar.

Ingredients
Water - 1 & 1/4 cup
Cloves crushed - 1
Orange slice - 1 chopped
Honey as needed
Tea leaves - 1/4 tsp
Method
Pour water in a sauce pan add the tea leaves,chopped orange slice,cloves and bring it to a nice boil.
Switch off the stove filter the tea,mix honey as needed and enjoy hot.

Ingredients
Instant coffee powder - 1 tsp
Sugar - 3 tsp
Hot water - 1 tsp
Cold milk 3/4 cup
Method
Take a cup add the coffee powder,sugar and hot water using a hand beater or spoon start whisking till they are fluffy,frothy and forms peaks.
Pour cold milk in a cup and top the whipped coffee on top sprinkle some cocoa powder and serve immediately.

Note:
Hand beater is better to get good result,

Water - 2 glasses
Tea leaves - 1 tsp
Honey as needed
Lemon wedges - 2
Fresh Lemongrass - 1 long leaf chopped
Method
Pour water in a pan add tea leaves and copped lemongrass leaves bring it to a boil.
Switch off the stove add the lemon wedges and honey,cover and wait for a minute.
Filter the tea and serve hot or warm.

( Remove skin and seeds,chop them into cubes)
Mint leaves - 8
Sweetener - 1 tbsp
( you can use honey or sugar)
Lemon juice - 1 tbsp
Dry ginger powder or fresh ginger - 1/4 tsp (optional)
Salt a pinch
Ice cubes as needed


Method
Take a blender add the cubed melon,mint leaves,lemon juice,sweetener and ice cubes.
Blend to a smooth juice.Pour it in a glass and enjoy this chill.

Ingredients for a cup of tea
Water - 1/2 cup
Milk - 1/2 cup
Homemade Gulkand - 1/2 tbsp

Tea powder - 1 tsp
Sugar add if needed
Method
Take a sauce pan pour water add tea powder and gulkand boil for a minute.
Now pour the milk and give a boil.
Switch off the stove and filter it using a tea strainer.
If sugar is needed add to your taste mix and serve them hot.

Rose Petals Tea

Instead of Gulkand use a big red rose petals and a crushed cardamom and follow the same instruction.

Ingredients
Ripe mango - 1 small
Chopped seedless watermelon - 2 cups
Sugar/Blue Agave sweetener - as needed
Vanilla ice cream - 2 scoops
Mint leaves for decoration
Ice cubes

Method
Peel mango and chop into cubes
Remove skin from watermelon and cut into cubes.
Add mango,sweetener and ice cubes to a mixi jar and blend to a smooth thick juice.
Put watermelon,sweetener and ice cubes in a mixi jar and blend smooth.
Take a tall glass pour the mango juice at the bottom.
Pour the watermelon juice on top of the mango juice.
Top it up with vanilla ice cream,decorate with mint leaves and ready  to serve.

Ingredients
Sugar - 2 cups
( Colour of the syrup is dark because i have used unrefined organic sugar)
Water - 1 cup
Method
Take a sauce pan add sugar and water.
Stir it in medium heat for 3 minutes till the syrup is transparent and slightly thick.
Do not over boil as your syrup will thicken when cooled.
Switch off the stove,cool and filter the syrup.
Store it in a clean jar in fridge.
Note:
a) There are 3 different kinds of simple syrup thin,medium and thick.
For thin syrup the ratio is water - 3 cups and Sugar -1 cup.
For medium syrup water - 2 cups and sugar - 1 cup.
For thick syrup water - 1 cup and sugar - 1 cup.
Today we have made the medium syrup which is added as a sweetener for all juices and beverages.
b) Add required syrup to sweeten your beverages.

Badam Milk Powder
Ingredients
Badam flour / Blanched Almond flour or Powdered blanched almonds - 6 tsp heaped
( Bought almond flour from Costco))
Sugar powdered - 6 tsp
( reduce if its too sweet for you)
Cardamom powder - 1 tsp heaped
Pistachio powdered - 1 tsp heaped
Crushed saffron - 1/2 tsp
Sarapappu / Charoli/Chironji - for garnish
Milk as needed
Method
Take a mixi jar and powder sugar,pistachio,saffron to a fine dry powder.
Lastly add the almond flour and cardamom powder and run once to make sure the powders are all well combined.
Store this in a clean jar in fridge.

How to make Badam drink:
Heat 1 cup of milk add 1 tsp or as needed of the above badam powder and give a boil.
Add sugar if needed.
Switch off the stove add the chironji and serve this drink hot or cold.

Note:
Here i have used ready made almond flour if you don't have then soak almonds in hot water remove skin and pat them dry.Then dry roast in a pan to make sure there is no water,cool and dry powder the almonds.Your almond powder is ready.

Ingredients
Fresh sugarcane - 1
Lemon juice -2 tsp
Ginger a very small piece
Water as needed

Method
Wash the sugarcane well and wipe it.
Break into long pieces now using a sharp knife or sugarcane peeler remove the outer layer.
Chop the sugarcane into very small pieces.Put these pieces inside a blender/mixi.
Do not put big pieces into your blender,your blender may break.
Add the ginger pieces and little water.
I used the extract juice option and removed the juice.
Filter the juice using a fine strainer.I filtered second time using a clean cloth to get a clear juice.
Add lemon juice mix and serve immediately.

Note:
a) Chop the pieces into small pieces otherwise your blender will stop working.
b) Filter twice to get a clear juice.

Ulundu Kanji
Ingredients
Urad dal / Black gram dal- 1/4 cup
Grated coconut - 3 tsp
Cardamom crushed - 2
Dry ginger powder/chukku podi/Sukku - 1/8 tsp
Salt a pinch
Water - 2 cups
Boiled milk - 2 cups
Palm jaggery/Pana vellam/Karupatti/Sugar - as needed to your taste
Method
Dry roast urad dal till light brown,cool and powder it to a smooth powder.
Take a pan add water and the ground urad dal powder mix it well till there are no lumps.
Now switch on the stove and cook the mixture till its thick now add the boiled milk,cardamom powder,a pinch of salt,palm jaggery and grated coconut.
Boil this for a minute and switch off the stove.
Your kanji is ready to serve warm.

Note!
a) Kanji will become thick once it cools so add boiled milk or hot water to get the right consistency.
b) Keep stirring the mixture otherwise it will get burnt at the bottom.
c) You can also make this kanji with whole urad dal.
