Kerala Parippu Curry
Ingredients pressure cooked till soft
Yellow split moongh dhal / pasi paruppu/cheru parippu-1/2 cup
Water-1 & 1/2 cups
Salt to taste
Turmeric powder-1/4tsp
Ingredients ground to a smooth paste
Grated coconut- little less than l/4 cup
Small onions-1
Green chillies-1
Jeera/cumin-1/2tsp
Tempering
Coconut oil-1tbsp
Mustard-1/2tsp
Jeera-1/4tsp
Red chillies-2
Curry leaves -few
Chopped small onion-1
Method
Mash the cooked dhal,add the ground masala, in low flame cook till raw smell disappears.Add water to get the required consistency.
Heat oil in a pan & temper it with above ingredients.
Pour this into the dhal ,stir & serve with rice.

Dal Makhani
Ingredients
Urad dal with skin-1/2 cup
Rajma/Kidney beans-1/2 cup
Tomato-2
(make a puree)
Ginger & Garlic paste-2tsp
Red chilly & Coriander powder-each-1/2tsp
Salt to taste
Turmeric powder-1/2tsp
Garam masala-1/4tsp
Butter-1tbsp
Kastoori methi crushed-1/2 tbsp
Hing a pinch ( optional)
Tempering
Oil-4 tsp
Jeera/cumin-1tsp
Cloves-2,Cardamom-1,Bay leaf-1,Cinnamon-a small piece


Method
Soak both the dals together overnight in water.Next day pressure cook it with salt & turmeric powder.
Heat oil in a pan & temper it with spices,then add ginger & garlic paste fry till raw smell disappears.
Add the tomato puree & mix it well,add all the dry masala powders.
Fry till oil separates the pan,pour the cooked dal & in low flame cook till everything is well blended.
Switch off the stove add the butter & crushed kastoori methi.
For extra richness cream can be added after switching off the stove.
Garnish with thin strips of ginger & serve hot with rice or roti.

Tempering
Oil-2tsp
Mustard,Urad dhal,Jeera-each 1/2tsp
Jeera-1tsp
Curry leaves -little
Other ingredients
Thur dhal-1/2 cup
Betal leaf (Vetralai) chopped-1 or 2 small leaves
Chopped onion-1/4
Chopped tomato-1/2
Handful of Cranberries
Turmeric powder-1/8tsp
Salt to taste
Red chilly powder-1/4tsp
Green chillies-2
Method
Heat 1tsp. oil oil & fry onion,green chillies,tomato & betal leaf till raw smell disappears.Now add all above ingredients,pour some water & pressure cook the dhal till soft.Cool & mash it well.Heat oil in a pan temper it.Pour it in dhal ,mix & serve it with hot rice.

Ingredients to be pressure cooked & slightly mashed
Dosakaya -1(cubed)
Chopped onion-1/2
Chopped tomato-1
Chopped green chillies-2
Turmeric powder-1/2tsp
Toor dal-1 cup
Tamarind -a small piece
Salt to taste
Tempering
Oil-3tsp
Crushed garlic-4
Curry leaves-little
Red chillies-2
Mustard,Jeera,Urad dhal-each 1/2tsp
Method
Heat oil in a pan & temper it with above ingredients.
Pour it in the pressure cooked dal,mix & serve it hot with rice or roti.

Celery Kootu

Ingredients pressure cooked till soft
Channa dhal-1 cup
Chopped celery-1/2 cup
Salt -to taste
Turmeric powder-1/8tsp
Tempering
Coconut oil-1tbsp
Mustard,Uraddhal,Jeera-each-1/4tsp
Red chillies-2
Curry leaves-little
Chopped onion-1tbsp
Ingredients ground to a smooth paste
Coconut-1tbsp
Jeera-1/2tsp
Green chillies-2
Method
Heat oil in a pan temper it,fry the onions till light brown.Add the ground paste to the cooked dhal & give a nice boil.Switch off the stove add the tempering & mix it well.Serve it with hot plain rice.

Split green moongh dhal-1 cup
Chopped lettuce leaves-1 small bunch
Turmeric powder-1/4tsp
Salt to taste
Dry roast & make a smooth paste
Pepper-5
Jeera-1/4tsp
Coriander seeds-1/4tsp
Red chillies-2
Curry leaves-5Garlic-1
Coconut-2tbsp
Tempering
Oil-1tsp
Mustard-1tsp
Hing-1/2tsp
Method
Pressure cook lettuce,dhal & turmeric powder till soft.Mash it slightly.Add the ground paste,salt & give a boil.Temper it & serve it with hot rice.

Lotus Stem & Channa Dhal Kurma

Ingredients pressure cooked
Chopped lotus stem-1 cup
Channa dhal-1/3 cup
Salt to taste
Red chilly powder-1tsp
Ingredients roasted in 1/2tsp of oil & ground to a smooth paste
Pepper-10
Cardamom-1
Cloves-2
Cinnamon-a small bit
Poppy seeds-1tsp
Coconut-1tbsp
Fennel seed(somph)-1/2tsp
Jeera-1/4tsp
Ginger & garlic paste-1/2tsp
Tempering
Oil-2tsp
Mustard-1tsp,Curry leaves-little
Method
Mix the ground masala to the pressure cooked ingredients & give a nice boil.Temper it.Serve it hot with rice.

Tomatillo Kootu

Ingredients
Split moongh dhal(with skin)-1/3 cup
(cooked with 1/4tsp of turmeric)
Tomatillo cubed-3
Salt to taste
Fry in 1/2tsp oil & make a smooth paste
Coconut-1tbsp
Coriander seeds-1tsp
Red chillies-1
Ginger-1/4''
Mustard-1/4tsp
Cumin-1/2tsp
Methi-6
Tempering
Coconut oil-1tsp
Mustard ,jeera & curry leaves-little
Method
Cook the tomatillo & ground paste with the dhal.Cook it till tomatillo are cooked.Temper it.Serve it with hot rice.

Carrot & tomato Dhal


Ingredients.
Masoor Dhal/Red lentils-1 cup
Carrot-2
Tomato-1
Onion-1/2
Green chilles-2
Salt-to taste
Turmeric powder-1/4tsp
Curry leaf/Coriander leaf-to garnish
For tempering
Oil/Ghee-1tsp
Mustard-1/2tsp
Jeera-1/4tsp
Garlic(Crushed)-1
Whole Dhania-1/4 tsp
Hing-1/4 tsp
Method.
In a pressure cooker boil all the above ingredients,except the tempering,with enough water.Once its mashed well temper it and garnish with curry/coriander leaf.Its excellent for plain rice or chapaties.

Simple Dhal

Ingredients
Masoor dhal- 1 cup
Salt to taste
Turmeric powder-1/2tsp
Water required amount
Tempering
Ghee-1tsp
Jeera-1tsp,Mustard-1/2tsp,Hing-1/4tsp,Crushed garlic-3,Curry leaves-little.
Method
Pressure cook dhal with salt & turmeric powder.
Heat oil in a pan & temper it.
Pour it into the dal mix & serve it with rice or roti.

Vazhai Thandu Kootu




Ingredients
Vazhlai Thandu chopped-2 cups
Yellow Moongh dhal -1 cup
Turmeric powder-1/4tsp
Salt to taste
For Grinding
Coconut-2tbsp
Jeera -1tsp
(grind it to a smooth paste)
For Tempering
Coconut oil-3tsp
Mustard-1tsp
Uraddhal & Channa dhal -1tsp each
Curry leaves-little
Hing-1/2tsp
Method
Pressure cook dhal,thandu & turmeric powder.Mash it while its hot .Add the ground paste & salt, give a boil.Temper it & serve it with hot rice.

Lettuce & Mango Pappu

Ingredients
Romaine lettuce chopped -1/2 bunch
Dry mango pieces-4
Masoor dhal-1 cup
Chopped tomato-1/2
Chopped onion-1/4
Chopped garlic-4
Turmeric powder-1/2tsp
Green chillies-4
Salt to taste
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1tsp
Uraddhal-1/2tsp
Hing-1/2tsp
Method
Pressure cook all above ingredients together.Mash it well.Temper it & serve it with hot rice.
Tips
Use can also replace with use raw mango with dry mango.

Vazhai Poo Sambar

Ingredients
Masoor dhal-1cup
Turmeric powder-1tsp
Salt to taste
Chopped Vazhai poo-1 cup
Tamarind paste-1/2tsp
Onion diced-1/2
Tomato-1
Curry & Coriander leaves-little
Chille powder-1/2tsp
Hing-1tsp
For Grinding
Channa dhal-1tbsp
Methi-1/4tsp
Coriander seeds-2tsp
Jeera-1/2tsp
Coconut-3tsp
Red chillies-2
(Dry roast & powder it)
For tempering
Oil-3tsp
Mustard-1/2tsp
Jeera-1/4tsp
Urad dhal-1/4tsp
Methi-1/4tsp
Method
Boil masoor dhal with turmeric,mash it well keep it aside.Heat oil in a pan add the tempering .Now add the onion,tomato ,Vazhai Poo and all dry masalas.Fry it well ,add the tamarind paste.Pour water & cook the Vazhai Poo .Once its cooked pour the dhal & the ground masala , give a boil.Garnish it with curry & coriander leaves.Serve it with rice.

Chopped Mango-1/2 cup
(I used dry mango,you can reduce the amount if your mangoes are too sour))
Masoor dhal-1 cup
Turmeric powder-1/4tsp
Hing-1/4tsp
Salt tp taste
Onion chopped-1/2
Tomato chopped-1
Garlic-3
For tempering
Oil-2tsp
Mustard-1tsp
Uraddhal-1tsp
Jeera-1/2tsp

Method
Pressure cook above ingredients.Mash it well.Temper it & serve it with hot rice.

Masoor dhal-1 cup
Turmeric powder-1/2tsp
Salt to taste
Grind
Coconut-1/4cup
Greenchilles-3
Jeera-11/2tsp
Mustard-1/4tsp
Ginger-1/4''
Tempering
Oil-3tsp
Mustard-1/4tsp
Uraddhal-1/4tsp
Hing little
Curry leaves-little
Method
Pressure cook Dhal,Karamani,salt & turmeric.Mash it well.Add the ground masala & give a boil.Temper it .Your Kootu is ready to eat.
Tips
For extra taste you can use coconut oil for tempering.You can use other vegetables like Bottle gourd,Pumpkin,Cabbage,Ridge gourd,Bottle gourd,Chayote.You can also use moongh or channa dhal.

Turnip leaf sambar
Ingredients
Red masoor dal-1 cup
( Or Toor Dal)
Turnip leaf chopped-1 bunch
Onion-1/2
Garlic crushed-3
Tomato-1
Turmeric powder-1/2tsp
Salt to taste
Sambar powder-1 &1/2 tsp
(if you don't have add chilly & dhania powder to your taste)
Hing-1/4tsp
Tamarind paste-1tsp
For Tempering
Oil-2tsp
Mustard-1/4tsp
Methi/fenugreek seeds-little
Uraddal-1/4tsp
Channa dal-1/4tsp
Jeera/cumin seeds-1/4tsp
Curry leaf
Method
Pressure cook red masoor dhal,turnip leaf & turmeric powder.
Mash it well add salt and keep it aside.
Heat oil in a pan temper it with above ingredients.
Add onion,garlic,tomato,sambar powder & hing.fry it well till raw smell has disappeared.
Add the cooked dhal,tamarind paste.give a nice boil.
Garnish with curry leaves & enjoy with hot plain rice.

Watercress & Split green peas Masiyal




Ingredients.
Watercress-1 bunch
(cut the roots off)
Split green peas-1 cup
salt-to taste
Turmeric powder-1/4tsp
Oil-2tsp
Tempering
Mustard-1/2tsp
Jeera-1/2tsp
Roast & dry grind.
Uraddal-3tsp
Whole pepper-8
Red chilles-3
Grated coconut-1tbsp
(you can add if you want more)
Hing-1/2tsp
Method.
Pressure cook dal,watercress,salt & turmeric powder till done.Mash it well.Pour 1tsp of oil and dry roast all the ingredients.Cool and powder it.Mix it well with the dal give just one boil.temper it .your tasty dhal is ready.

Moong & Turnip leaf dhal







These Turnips are from my friends garden wow!!!!!!!!!!!! i can't believe we can grow these type of vegetables in a desert like Arizona.I have tried a Dhal using the leaves of the turnips.It was good.Why don't you try here is the recipe.

Ingredients.
Turnip leaves-1 bunch(chopped)
Whole moong dhal-1 cup
Salt-to taste
Turmeric powder-1/2tsp
Onion-1/4th
Tomato-1
Garlic-2
For tempering
Oil-1tsp
Mustard-1/4tsp
Jeera-1tsp
Uraddal-1/4tsp
Channadal-1/4tsp
Hing-1/4tsp
Red chilles-4nos
Method
Soak the dal overnight.In a pressure cooker add the above ingredients except tempering, till done.Mash it well.Temper it serve it with rice or chapathies.
Tips
These leaves are rich in Vit.A,If you are concerned about rheumatoid arthritis, turnip greens are a good food to add to your shopping list.
