Katchi Fish Biriyani
Marination Ingredients
Boneless fish-1 pound
(I used Mahi Mahi)
Salt to taste
Red chilly powder-1tsp
Turmeric powder-1/2 tsp
Garam masala-1tsp
Chopped tomato-1
Fried onions-1tbsp
Mint & coriander leaves chopped-a handful
Cardamom-2
Cinnamon-a small piece
Shajeera & Jeera-each-1/4tsp
Curd-1tbsp
Ginger & Garlic paste-1tsp
Ingredients for rice
Basmathi rice-3 & 1/2 cups
Cardamom-3
Mint leaves-1tsp
Salt to taste
Ghee-1tsp
Water-5 cups
Other ingredients
Lime juice-2tsp
Oil-4tsp
Ghee-3tsp
Fried onion for garnish
Method
Mix all the marinate ingredients together & leave it for at least 1 hour.
Cook the rice with the salt & spices till 3/4th done.
Take a wide heavy bottom vessel, put some marinated fish with masala at the bottom,cover it up with some cooked rice.again layer it with fish marinate then rice (at least 2 layers/times).
Sprinkle the lime juice,pour oil,ghee & fried onions on top.
Close it tightly with a lid,make sure that the steam doesn't come out.You can also cover it up with an aluminum foil & then place the lid.
Keep a heavy weight on top of the lid & in very low flame keep it in DUM for 30 minutes.
Before serving mix it & serve it hot with any raita.

Masala Grilled Fish
Ingredients for marinating the fish
Fish fillets-4
(I used frozen tilapia)
Ground onion paste-2tsp
Ginger & Garlic paste-1/2tsp
Crushed curry leaves-1tsp
Salt to taste
Red chilly powder-1tsp
Turmeric powder-1/4tsp
Pepper powder-1/2tsp
Jeera/cumin powder-1/4tsp
Fennel powder-1/2tsp
Cinnamon powder-a pinch
Cloves powder-a pinch
Oil-1tsp
Method
Mix all above ingredients in a bowl,apply the masala to both sides of the fish.
Marinate the fish for 20 minutes.Grill the fish in oven till cooked & light brown on both sides.
Serve it with some lime juice squeezed on top.

Note:You can also shallow fry the fish if you like.

Fish Cutlet
Ingredients
Frozen salmon fish fillet-1
(You can make cutlet with any boneless fish fillet of your choice)
Salt to taste
Turmeric powder-1/2tsp
Garam masala-1/2tsp
Pepper powder-3/4tsp
Boiled & mashed potato-1 medium size
Oil-2tsp
Chopped onion-1/4 cup
Chopped green chillies-2
Chopped coriander & mint leaves together-a handful
Ginger & garlic paste-1tsp
Oil-to deep fry

Ingredients for the coating
All purpose flour-2tsp
Egg beaten with some salt & pepper-1
Plain bread crumbs-1tbsp
Panko(Japanese bread crumbs)-1tbsp
(mix both the bread crumbs together & keep it aside)

Method
Boil fish fillet in water with little salt & turmeric powder for 5 minutes.Strain out all the water & crumble, keep it aside.
Heat oil in a pan fry onion,green chillies,ginger & garlic paste till raw smell disappears & its light brown.Now add the coriander/mint leaves & all dry masala,fry a bit.Add the mashed potato & fish,fry for a minute & switch off the stove.Cool this mixture,take out small balls & shape it to your choice.
Dust this with flour then dip it in beaten egg,then roll this out into the bread crumbs.
Heat oil in a pan & medium flame deep fry or shallow fry these cutlets till light golden brown on all sides.
Remove it on a kitchen paper/towel to remove excess oil & then serve it with any dip you like.

Note:
I usually keep these patties in fridge for sometime before frying.This way it holds the shape of the cutlets.

Ingredients for marination
Any boneless fish cut into medium size cubes- 25 pieces
Salt to taste
Red chilly powder-1/2tsp
Turmeric powder-1/4tsp
Garam masala-1/8tsp
Ajwain/Omam-2 pinch
Chopped coriander leaves-1tbsp
Ginger & Garlic paste-1/2tsp
(Marinate the fish with the above ingredients for 30 minutes)
Other ingredients
Besan-2tsp (heaped)
Oil-to deep fry
Method
Mix the besan into the marinated fish,do not add water.Coat it well,heat oil in a pan.Drop the fish into the hot oil & in medium high flame deep fry the fish till cooked,crispy & golden brown on all sides.Remove it on a kitchen paper to remove excess oil.Serve them hot with any dip you wish.

Masala Fried Fish

Grind masala to a smooth paste
Green chillies-2
Pepper-1/2tsp
Red chilly powder-1/2tsp
Salt to taste
Turmeric powder-1/4tsp
Cinnamon stick-a small piece
Cloves-2
Fennel seeds-1/4tsp
Curry leaves-2tsp
Ginger & Garlic paste-1tsp
Yellow food colour(optional)-a pinch
Other ingredients
Fish fillets-3
(I used Tilapia)
Oil-to fry
White rawa/sooji/semolina to coat the fish
Curry leaves-little
Method
Apply the ground masala both sides of the fish.Marinate it for 10 minutes.Slightly dust it with rawa.Heat a non stick pan add the curry leaves & then the fish.In very low flame cook the fish till crisp & golden brown on all sides.

Oats Fish Pakora / Fish Pakoras/ Fish Fritters Recipe / Desi Battered Fish / Fish Pakoras Recipe
Ingredients marinated for 30 minutes
Boneless fish fillets cut into small pieces-25
(i used Tilapia)
Salt to taste
Red chilly powder-1tsp
Coriander powder-1/2tsp
Turmeric powder-1/4tsp
Ajwain /Carom seeds-2 pinches
Besan/Gram flour-8tsp
Baking soda-a pinch
(optional)
Water required amount to make a semi thick batter
Other ingredients
Oil-to deep fry
Ingredients for coating
Quick oats required amount
Method
Take a bowl & mix all the marinate ingredients together except the baking soda,leave it for 30 minutes.
Mix the baking soda only when you are ready to fry the fish,do not add it before.
Heat oil in a pan,roll each fish cubes into the oats.Deep fry them till golden brown on all sides in medium flame.
Before serving sprinkle some chat masala & serve it with any dip you desire.

Note:You can see in the picture some are fried plain,without the oats....

Fish Fry

Ingredients
Butter fish-5
Salt to taste
Hot curry powder-1tsp
Turmeric powder-1/4tsp
Lime juice-2tsp
Curry leaves-little
Oil-to shallow fry
Grind to a smooth paste
Ginger & Garlic paste-1tsp
Cinnamon-a small piece
Cloves-2
Pepper-1/4tsp
Method
In a plate mix all the above ingredients together.Apply the mixture both sides on the fish & keep it for 20 minutes.Heat oil in a pan & shallow fry them till cooked & brown on all sides.

Anchovy Chips

Ingredients
Dry Anchovies-1 cup
Salt to taste
Red chilly powder-1 & 1/2 tsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Curry leaves-little-Oil 10 tsp
Method
Remove the heads off the fish.Wash it nicely so that there is no sand.Add all dry ingredients & marinate for 10 minutes.Heat oil add curry leaves & the fish.Fry it in very low flame till crisp & brown on all sides.You can store it outside for more than 3 days.Goes very well with rasam rice.

Meen Varuval

Ingredients
Fish slices-8
(I used Sierra fish)
Salt to taste
Tamarind juice-3tsp
Ready made fish fry masala-3tsp
Red chilly powder-1/4tsp
Ginger & Garlic paste-1tsp
Oil-to shallow fry
Method
Marinate both sides of the fish with the above ingredients for 1 hr.Shallow fry them in a pan till crisp on both sides & cooked.

Masala Fish Gravy

Ingredients fried brown in 2tsp of oil & ground to a smooth paste
Onion-1/2
Tomato-1/2
Ginger & Garlic paste-1tsp
Curry leaves-little
Pepper-1tsp
Jeera-1/2tsp
Methi-1/4tsp
Somph-1/2tsp
Green chillies-6
Coconut-2tbsp
Salt to taste
Turmeric powder-1/2tsp
Coriander seeds-1tsp
Other ingredients
Fish slices-8
(I used sierra fish)
Tamarind-a lime size ball
(Diluted in water)
Tempering
Oil-6tsp,Mustard-1tsp,Methi-1/4tsp.Curry leaves-little
Method
Dilute the ground paste in the tamarind water & keep it aside.Heat oil in a pan temper it.Pour the tamarind mixture & boil it till raw smell goes off & thick.Now add the fish pieces ,give a boil & switch off the gas(Do not boil too much after adding the fish it will break).Garnish it with curry leaves.

Fish Biriyani

Ingredients for the rice
Basmati rice-2 cups
Water-3 & 1/2 cups
Salt to taste
Ghee -1tsp
Jeera-1tsp
Ingredients for the marination
Tuna or Salmon-1 small tin
(drain the water)
Salt to taste
Turmeric powder-1/2tsp
Chilly powder-1/4tsp
Curd-1tbsp
Ginger & Garlic paste-1/2tsp
(Mix all above ingredients together marinate for 10minutes)
Ingredients for frying
Onion sliced-1
Green chillies slit-4
Ginger & Garlic paste-1/2tsp
Tomato chopped-1
Mint leaves chopped-a hand full
Oil-1tbsp
Cardamom-2,Cloves-2,Cinnamon stick-1/4'',Bay leaf-1.
Method
Heat ghee in a pan temper it with jeera.Add washed rice & salt .Saute for a minute & pour water, cook it till done.Heat oil in a pan add the spices.Add the onion ,green chillies & mint fry till light brown.Add tomato, ginger & garlic paste & the marination.Cook it till all water has evaporated.Now add the rice mix it well till all the masala is coated with the rice.Garnish it with mint leaves.Serve it with raita.

Amritsari Fish Fry

Ingredients
Any boneless fish-8 pieces
(I used with bones)
Salt to taste
Chilly powder-2tsp
Coriander powder-1/2tsp
Turmeric powder-1/2tsp
Ginger & Garlic paste-1tbsp
Besan-2tsp
Ajwain crushed-3/4 tsp
Curry leaves crushed-4(optional)
Oil to shallow fry
Method
Make a thick paste with all above ingredients.Evenly spread on both sides of the fish.Marinate it for 10 minutes.Shallow fry till both sides are cooked & till golden brown.Serve it with lemon wedges.

Tuna Sandwich


Ingredients
Tuna-3tsp
(drain water from the tin)
Classic Cole Slaw-1 hand full
(shredded green cabbage and carrots)
Pepper & Salt to taste
Wheat bread toasted-2
Mayonnaise-2tsp
Method
Mix above ingredients well .Smear it on bread slice,cover it with another slice.Cut it into half & serve.This sandwich is very filling.

Nethili meen Kuzhambu (Anchovies)

Ingredients
Nethili Meen (dry)-1 cup
Onions-1
Tomato-1
Garlic chopped-6
Curry & Corriander leaves little
Salt to taste
Chille powder-1 &1/2tsp
Dhania powder-1tsp
Turmeric powdert-1/2tsp
Drumstick-1/4cup
Tamarind paste-3tsp
(dilute it with water)
Pepper powder-1/4tsp
Oil-6tsp(i added a bit more)
Vadavam for tempering
(mustard,methi,jeera,uraddhal)
Method
Heat oil in a pan add vadavam & temper it.Add the chopped onions fry till light brown.Add other ingredients fry till the raw smell goes.Pour the tamarind juice ,cook till Nethili meen is cooked.Garnish it with curry & corriander leaves.serve it with hot rice.
Tips
I usually make it the previous day and eat it the next day.These fishes are very small,you can eat it with bones.

Cornflour-1tbsp
Tempering (optional)
Onion-1/2
Greenchilles-3
Pepper powder-1/4tsp
Ginger & Garlic chopped-1tsp
Curry leaves-little
Mustard-1/4tsp
Jeera-1/4tsp
Oil
Method
Marinate the fish with above ingredients for 30 min.Shallow fry & keep it aside.In the same pan,pour little oil temper it and mix it with the fish.Before serving squeeze lime & serve it with rice or like an appetizer.
