Khoba Roti Recipe / Masala Khoba Roti Recipe / Rajasthani Khoba Roti Recipe

Khoba Roti
Ingredients for the dough
Whole wheat flour - 1 cup
Salt - 1/4 tsp
Turmeric powder - 1/4 tsp
Red chilly powder - 1/2 tsp
Ajwain - 1/4 tsp
Ghee - 2 tbsp
Chopped fresh coriander leaves - 2 tsp
Hot water - 1/4 cup
Other ingredients
Ghee to pour on top of roti

Khoba Roti
Method
Take a bowl add wheat flour,salt,turmeric powder,red chilly powder,coriander leaves,ajwain & ghee.Mix it well till it resembles like bread crumbs.
Now slowly pour water little by little to form a firm dough.Apple little ghee on top cover & rest it for 5 minutes.
You can divide the dough into two or just roll out to one roti.
Roll this dough to a semi thick disc about 1/2'' thick.
Take a knife and make cuts on one side of the roti.
Place this roti on a tawa and in medium low heat cook,when the dough is still raw on top pinch the dough fully to make a pattern ( see the picture).
Once the bottom is light brown flip to the other side & cook till light brown.
Lastly you can directly place it on the gas flame or use a wire mesh  for a minute to get a slight colour to your roti ( This step is optional ).
Remove it on a plate & pour 2 to 3 tsp of ghee on the holes of the roti.
Serve them hot with Dal or Raita.
Note:
a) Without spices you can also make plain khoba roti.
b) Grated garlic or kasturi methi can also be added for extra flavour.

Aloo Mutter Paratha
Stuffing Ingredients
Boiled & mashed potato-1medium size
Frozen peas -1 cup
(Thawed & coarsely ground)
Chopped coriander leaves-2tbsp
Chopped onion-1tbsp
Grated ginger-1/2tsp
Chopped green chillies-1 large
Salt to taste
Turmeric powder-1/8tsp
Red chilly powder-1/4tsp
Amchur powder/Dry mango powder- less than 1/8tsp
Oil-1tsp
Jeera/Cumin-1tsp
Method
Heat oil temper it with jeera.Add the onion,ginger,green chillies saute till its light brown.
Now add the peas fry till raw smell has disappeared.Add the dry masalas and fry for 1 to 2 minutes.
Add the potato mix till everything is well combined.
Switch off the flame and mix the coriander leaves.
Divide the mixture into equal size balls.
Outer covering ingredients
Whole wheat flour-2 cups
Salt to taste
Oil-1tsp
Warm water-required amount
(Mix all above ingredients together in a bowl.Pour water & form a soft dough.Cover & keep it aside for 5 minutes)
Method
Divide the dough into small equal size balls.Take a small ball of the dough,shape it like a cup.
Keep the filling inside the cup cover & seal it well to make sure the filling doesn't come out.
Flatten it well with your palm,gently roll the parathas to a semi thick disc.
Heat a tawa/griddle & cook these parathas in medium low flame till its light brown on both sides with little oil smeared both sides of the parathas.
Serve it hot with any gravy or raita of your choice.

Garlic Naan

Ingredients for the dough
All purpose flour-2 cups
Baking powder-1/2 tsp
Salt-1/4tsp
Warm milk-2tbsp
Plain curd-1/3 cup
Milk-1/3 cup
Egg beaten-1/2
Ghee-1tbsp
Sugar-1tbsp
Dry yeast-1tbsp
Other ingredients
Chopped coriander leaves & garlic-little
Butter to brush on top
Method
Mix yeast & sugar in warm milk,rest it for 10 minutes for the yeast to froth.
In another bowl mix egg,milk ,curd & ghee,whisk.
Mix flour,salt,baking powder in another bowl.Now pour the yeast mixture & the curd ,milk mixture into the flour & knead it to a soft dough.
Apply oil in a bowl & keep the dough,cover it with a cloth & rest it for 2 hours for the dough to double.
Divide the dough into 4 equal parts,roll it out to a semi thick oval shape.
Apply butter on a aluminum foil,place the dough on the tray.Apply some butter on top & sprinkle some garlic & coriander leaves on top,slightly press them.
Bake this at 400 deg.F for 8 minutes or till the top is slightly brown & cooked.
Remove from oven & brush with butter on top & enjoy them hot.

Ingredients
Whole wheat flour - 2 cups 
All purpose flour / Maida- 1 cup
Kastoori Methi - 2 & 1/2 tbsp
(dry fenugreek leaves )
Thick Yogurt- 1& 1/2 tbsp
Water - 1 cup + 1 tbsp
Dry yeast- 1tsp
Baking powder- 1/4 tsp
Sugar- 1 tsp
Salt- 1 tsp
Oil- 2 tbsp
Butter - to spread on top of the naan
Method
Mix yeast & sugar in warm water.Keep it aside for 20 minutes until foamy.
Mix all the above ingredients together in a bowl.Pour the yeast mixture,knead to a soft pliable dough.If more water is needed add little by little.
Keep this dough covered with a plate for 30 minutes till the dough rises & doubles.
Punch the dough to release the air .knead once & divide it to 6 equal size balls.
Dust the ball with flour & roll out to a oval shape roti.
Heat a iron tawa & place the roti ,when you see bubbles appearing from the base flip it other side.
Remove once both sides puffed up well & cooked.
Transfer to  a plate & brush butter both sides & serve them hot.

Lachha Paratha
Ingredients for the dough
Wheat flour-2 cups
Salt to taste
Warm milk to knead the dough ( around 1 cup)
Ghee- 1tbsp
(Mix all the above ingredients together & make a soft dough,add water if needed)
Other ingredients
Oil to cook
Wheat flour for dusting

Lachha Paratha
Method
Divide the dough into equal sized balls and roll it into a round shape as thin as possible.
Apply 1tsp of oil over it, dust with some dry flour and then start pleating. 
Once you have pleated it all the way through, it forms into a long rope.
Start spiraling it starting from one end till the other end,once spiralled give it a little press. 
Now with a rolling pin, slightly roll it into a circle,don’t press too hard and don’t roll it too thin. 
Place it on a tawa and cook it with some oil both sides till light brown.
Serve it with any side dish.
Note:
a) Do not give much pressure to roll,you will loose the layers.
b) Make sure your dough is not hard,it should be a soft & pliable dough.

Kulcha Recipe / Plain Kulcha Recipe / Punjabi Flatbread Recipe

Ingredients
Maida / All purpose flour - 2 cups
Warm milk - 1 cup
( kept 1 minute in microwave)
Salt -1 tsp
Sugar - 1 & 1/2 tsp
Yeast - 1 tsp
Oil-1 tsp
Water - 25 ml (1/8 cup)
For topping
Chopped fresh coriander leaves - 2 tsp
Chopped green chillies-1
Sesame seeds- 1 tsp
Grated garlic - 2
Butter to brush on top



Method
Pour warm water in a bowl,add yeast & sugar.
Mix & leave it covered for 10 minutes until foamy.
Take a wide bowl add maida & salt,mix .Now pour the yeast mixture & mix well.
Slowly pour the warm milk into the flour mixture & knead to a soft dough.
Add little oil to form a non sticky dough.Grease a bowl place the dough,cover the dough with a warm wet cloth.Place a lid & cover the bowl.leave it to ferment for an hour.
After an hour you will see the dough has doubled in size.Pull out small balls from the dough.
Place it on a greased sheet,spread the dough to a semi thick disc.
Apply water on top,sprinkle the topping ingredients.
Gently press them so that the ingredients sticks to the top.
Bake it at 375 deg F for 10 minutes or till top is light brown.
Remove from oven & apply butter on top.
Serve them hot with any gravy.

Note:
The below picture is done on tawa.For this method I rolled it out a bit thin.

Grated paneer-1/2 cup
Roasted jeera powder-1/8tsp
Salt to taste
Chopped coriander leaves-1tsp
Grated green chillies-2
(Mix all the above ingredients together in a bowl.Add salt just before starting to stuff ,otherwise water will start to leave & your stuffing will be soggy.I usually sprinkle salt while filling each paratha, so that left over filling can be stored in fridge))
Dough ingredients
Whole wheat flour-2 cups
Salt to taste
Oil-1tsp
Water to make a dough-required amount.
(Make a soft pliable
dough with flour,oil,salt & water.Knead it well & rest it for 5 minutes covered)
Method
Divide the dough into small equal balls.Take a small ball of the dough,shape it like a cup.
Keep a teaspoon of filling inside the cup & seal it well to make sure the filling doesn't come out.
Flatten it well with your palm,gently roll the parathas to a semi thick disc.
Heat a tawa/griddle & cook these parathas in medium low flame till its light brown on both sides with little oil smeared both sides of the parathas.
Serve it hot with any gravy or raita of your choice.
Note: 
a) Make sure your paneer is water free otherwise rolling will be difficult.

Take a bowl & mix the wheat flour,oil,sesame seeds & the ground liquid.
Sprinkle water & knead it to a soft dough,cover & rest for 5 minutes.
Take small balls from the dough,roll it out into semi thick circle.
Cook it on a hot tawa/grigle with little oil smeared on both sides till light brown in colour.
Serve it hot with any side dish you prefer.

Cabbage Paratha

Stuffing ingredients
Finely shredded cabbage-1 cup
Salt to taste
Red chilly powder-1tsp
Chopped coriander leaves-3tsp
Curry powder-1/2 tsp
Turmeric powder-1/4tsp
Ginger & Garlic paste-1/4tsp
(mix all above ingredients together)
Dough
Whole wheat flour-2 cups
Salt to taste
Oil-3tsp + for cooking
(pour water & make a soft dough with the above ingredients)
Method
Take small ball of the dough flatten it slightly.Keep a teaspoon of the filling inside close & seal it well.Roll it out carefully to a semi thick circle(make sure the filling doesn't come out).Cook on a tawa in medium flame with little oil on both sides till light brown. Serve it hot with side dish of your choice.

Grated chayote/chow chow-1 cup
Salt to taste
Red chilly powder-1tsp
Jeera powder-1/2tsp

Mix all above ingredients together,pour water & make a soft dough.Take small balls out of the dough,roll it out into semi thick circle.Cook this on a tawa with little oil smeared on top,till its light brown on all sides.Serve it with any gravy you like.

Make a soft dough with above ingredients.Cover the dough & rest it for 10 minutes.Divide the dough into small balls,roll them out to a semi thick circles.Heat a tawa/griddle & cook the chapathi/paratha with little oil smeared on both sides till its light brown.Serve it hot with any side dish you want.

Ingredients
Grated beetroot-1 cup
Whole wheat flour-2 cups
Besan-2tsp
Curd-3tsp
Oil-1tsp
Salt to taste
Fennel powder-1/8tsp
Chilly powder-1/2tsp
Roasted & powdered jeera powder-1/4tsp
Garam masala-1/4tsp(option)
Oil-to cook the paratha
Method
Mix all above ingredients together.Pour very little water & make a soft dough.Roll it out into semi thick circles.Cook it both sides on a tawa with little oil till light brown on both sides.Serve it with any raita ot gravy.

Brinjal Paratha
Ingredients for brinjal masala
Big eggplant chopped-1/2
Turmeric powder-1/4tsp
Red chilly powder-1/2tsp
Roasted jeera powder-1/4tsp
MDH Kitchen king masala-1/8tsp
(or any garam masala-optional)
Chopped coriander leaves-3tsp
Oil-1tsp
Other ingredients
Whole wheat flour-1 & 1/2 cup
Salt to taste
Oil-to cook parathas
Method
Heat oil in a pan fry the brinjals till slightly cooked.Add all the dry ingredients & fry a bit.Cool & grind to a coarse paste.Add coriander leaves & mix it.Add wheat flour,salt to the mixture add very little water if required & make a soft dough.Take a small ball roll it out into circles.Cook it on tawa/griddle with little oil till coked & light brown on all sides.Serve it hot with any side dish.........

Ingredients
Whole wheat flour-2 cups
Crumbled firm tofu-1 cup
Salt to taste
Red chilly powder-1tsp
Coriander powder-1/2tsp
Turmeric powder-1/4tsp
Kastoori methi-3tsp
Black sesame seeds-1tsp
Curd-1tbsp
Oil-to cook paratha
Method
Mix all above ingredients together.Sprinkle some water & knead it to a soft dough.Take a small ball, roll it out into thick circles.Cook on a tawa with little oil brushed on both sides till done.Serve it with raita or any side dish.

Ingredients
Whole wheat flour-1 cup
Mashed sweet potato-1/2 cup
Salt to taste
Curry powder-1/2tsp
Chilly powder-1/2tsp
Black sesame seeds-1tsp
Oil to make parathas
Method
Mix all above ingredients together.Sprinkle very little water & make a soft dough.Roll it out into slightly thick circles.Cook it on tawa applying oil on both sides till done.Serve it hot with raita or any side dish.

Ingredients dry roasted & powdered
Coriander seeds-1tsp
Ajwain-1/4tsp
Jeera-1/2tsp
Fennel seeds-1/2tsp
Other ingredients
Whole wheat flour-2 cups
Salt to taste
Crushed onion-1/2
Red chilly powder-1tsp
Curd-2tsp
Oil to cook parathas
Method
Mix all above ingredients together.Make a soft dough by adding very little water.Take small balls roll it out into circles.Heat a tawa & cook it both sides with little oil till done.Serve it with any side dish or raita.

Broccoli Stuffed Paratha / Broccoli Paratha / How to make Broccoli Stuffed Paratha.

Ingredients for stuffing
Grated broccoli-1cup
Grated ginger-1/2tsp
Chilly powder-a pinch
Turmeric powder-little
Grated green chillies-1
Salt to taste
Jeera /cumin powder-1/4tsp
Other ingredients
Whole wheat flour-2 cups
Milk-1/4 cup
Salt to taste
Water required amount
Oil-1tsp + to make parathas
(make a soft dough using above ingredients)
Method
Mix all stuffing ingredients together except salt & keep it aside for 10 minutes.(I usually keep it open for all the moisture to evaporate & mixture is dry)Just before making the parathas/parata add salt to the mixture.Take a small amount of dough,shape it like a cup,keep little filling inside.Close & seal it well & roll it out slowly into thick parathas,make sure the filling doesn't come out.Cook it on tawa/griddle in medium flame till brown on both sides by brushing oil.Serve it hot with raita or any gravy .

Note: Once the filling is sealed well,flatten it & prick it once with a fork on top. By this the air inside the filling will release & while rolling out your filling will not come out.I usually follow this method for any stuffed paratha.

Avocado & Potato Chapathi

Ingredients
Whole wheat flour-2 cups
Mashed avocado-1
Mashed potato-1
Salt to taste
Red chilly powder-1/2tsp
Turmeric powder-a pinch
Ajwain-1/4tsp

Oil-to make chapathi
Method
Mix all above ingredients together.Sprinkle water & make a soft dough.Roll it out into circles & cook it both sides on a tawa.Serve it hot with any side dish.

Avocado Chapathi


Ingredients
Wheat Flour-2 cups
Avocado mashed-2
Salt to taste
Chilly powder to taste
Ajwain-1/4tsp
Turmeric powder-1/4tsp
Oil-cook chapathies
Method
Mix all above ingredients to a soft dough(you won't need much water for this).Make small balls,roll it out & cook the chapathis on a hot griddle till light brown on all sides with little oil.Serve it as desired.These chapathies are very soft to eat.
