Wild & Brown Rice Oothappam

Ingredients
Wild & Brown rice together-1 cup
Long grain rice-1 cup
Urad dhal-1 hand full
Thur dhal-1 hand full
Methi-1/2tsp
Salt to taste
Method
Soak above ingredients together for 2 hours.Grind it to a smooth batter.Add salt & ferment it overnight.Next day mix the batter & make oothappam in a tawa.Close with a lid & cook it on medium flame(do not turn).Serve it with any chutney or Podi.

Watermelon Skin Halwa

Ingredients
Finely grated watermelon skin-1 & 1/2 cup
(only green & white part)
Sugar-3/4 cup
Milk-2 cups
Ghee-4tsp
Fried Nuts & raisins in 1tsp of ghee- little
Green food colour-a pinch(optional)
Cardamom powder-1/4tsp
Method
Heat 3tsp of ghee fry the watermelon skin till all the water is evaporated & raw smell goes off.Add milk, close & cook in medium flame till its fully cooked.Add the sugar,food colour,cardamom powder & nuts.Fry a bit till it comes to a halwa consistency.Serve it warm.
Tips
This skin will be a bit hard to cook ,so you can also pressure cook to save time.But i like it to be cooked in low flame.

Watermelon Skin Kurma

Ingredients
Chopped Watermelon Skin-2 cups
(Only the white & green part)
Onion chopped-1/2
Tomato chopped-1/2
Curry & Coriander leaves little
Ingredients for grinding to a smooth paste.
Grated coconut-a hand full
Salt to taste
Turmeric powder-1/4tsp
Chilly powder-1/2tsp
Coriander powder-1/2tsp
Fennel seeds-1tsp
Ginger & Garlic paste-1tsp
Ingredients for tempering
Oil-2tsp
Cinnamon-1/4'',Cloves-2,Cardamom-2
Method
Heat oil in a pressure cooker temper it.Fry onion ,tomato & curry leaves till light brown.Now add the ground masala & fry till oil separates.Add the watermelon skin ,pour water & pressure cook it till done.Garnish it with coriander leaves .

Strawberry Lassi


Ingredients
Fresh strawberry-6
Curd-1 cup
(don't use sour curd)
Sugar-1tsp
Rooh Afza-1tsp
(or rose syrup)
Ice cubes
Method
Blend all above ingredients together in a mixi.Serve it with ice cubes.

Chocolate Muffins

Today is my Birthday made Chocolate Chip Muffins.One more recipe from Joy of Baking with a slight change........

Ingredients
Butter-1/2 cup melted
Egg-2
Maida-1 & 3/4 cup
Butter milk-1 cup
Vanilla essence-2tsp
Cocoa powder-2/3 cup
Brown sugar-1 & 1/4 cup
Baking powder-1tsp
Baking soda-1tsp
Salt -1/2tsp
Semi sweet chocolate chips-3/4 cup
Method
Pre heat oven at 375 deg. C.Mix all dry ingredients together(maida,baking powder,baking soda,salt,brown sugar ,chocolate chips & cocoa powder.In another bowl beat butter,butter milk,egg & essence.Pour it in the maida mixture & gently mix it with a spatula.
Pour it in greased muffin tins & bake for 10 minutes.

Chicken Kheema Vada

Saw the recipe of Lubna of Kitchen Flavours it was the same way of my Granny but a little different........

Ingredients to boil & grind to a smooth paste
Ground chicken kheema-2 cups
Channa dhal-1 cup
Onion-1/2
Green chillies-6
Ginger & Garlic paste-2tsp
Turmeric powder-1/2tsp
Chille powder-1/2tsp(optional)
Salt to taste
Khus Khus-2tsp
Fennel seeds-2tsp
Coriander powder-1tbsp
Cinnamon-1''stick
Cloves-4
Other ingredients
Egg-1 for binding
Oil to shallow fry
Curry & Mint leaves-1/4 cup together
Method
In a pressure cooker boil all the above ingredients with very little water(1/4 tumbler) till dhal & kheems is cooked.If water is still there fry it till dry.Cool & grind it with Curry & Mint leaves to a smooth paste.Add egg and mix it.Heat oil in a pan shape it into vada & shallow fry them in medium heat till brown.Serve it with ketchup or any dip.
Tips
Do not add too much of water while cooking the dhal.Grind the cinnamon stick & then cook it otherwise it may not get powdered in the mixi well.Do not fry them in high flame.

Chocolate Chip Muffins

Took this recipe from Joy of baking ,but made slight changes.....



Ingredient
Butter melted-1/2 cup
Egg-2
Milk-1 cup
Vanilla essence-1/4tsp
Cinnamon powder-1tsp
Chocolate chips(semi sweet)-3/4 cup
Maida-2 cups
Sugar-2/3 cups
Baking powder-1tbsp
Salt -1/2tsp
Method
In a bowl mix flour,baking powder,salt,cinnamon powder & chocolate chips with a spatula ,till everything is evenly mixed.
Beat milk,egg,essence & melted butter with a electric beater for 3 minutes.Mix the dry ingredients with the egg mixture with a ladle.
Grease a muffin tin pour ladle full & bake it for 10 minutes at 375deg. C

Buffalo Chicken Wings



This is my version of Buffalo wings...You can say its a fusion of Indian & American.

Ingredients for Marination
Chicken wings-1 pound
Salt to taste
Tandoori masala-1tsp
Sesame oil-2tsp
Rice vinegar-1tsp
Chilly powder-1tsp
Ingredients for the sauce
Flour-1tsp
Louisiana hot sauce-2tbsp
Tabasco sauce-1tsp
Ginger & garlic paste-1tsp
Tomato sauce-2tsp
Salt to taste
Brown sugar or honey-1tsp
(Mix above ingredients in a bowl)
Method
Marinate the chicken for 2hrs in the fridge.Heat a pan fry the wings in high flame till its light brown on all sides .Pour the sauce on top & fry it in medium flame ,cook it till all the sauces are absorbed completely & it gives a nice brown colour.serve it as a starter.

Coconut Stuffed Brinjal

Ingredients

Small purple brinjal -6
Oil -4tsp
( add more if needed)
Cinnamon stick-1/2''
Bay leaf - 1
Chopped onion - 1/4 cup
Curry leaves few

Ingredients for Grinding

Fresh or Frozen grated coconut - 1/2 cup

Ginger & Garlic paste -1tbsp

Fennel seeds -2tsp

Green chilies - 4

Turmeric powder-1/4 tsp

Salt to taste

(Grind all the ingredients to a smooth thick paste, do not add water )

Method

Slit the brinjals on top like a cross(do not cut it fully otherwise your filling will come out).
Fill the brinjals with the ground mixture.
Pour oil in a pan add cinnamon stick, curry leaves few and onion, fry till onion changes it's colour.
Arrange the brinjals in the pan sprinkle some water and in a low flame cover and cook till brinjals are cooked well on all sides and oil separates the masala. 
Switch off the stove and serve it with rice or roti .

Note:

Instead of brinjal you can make this recipe with raw banana cut into circles.

Onion Coriander chutney

Ingredients
Onion-1/2
Coriander leaves-1/2 bunch
Mint leaves-a hand full(optional)
Green chillies-3
Ginger-1/4''
Coconut-1tsp
Hing-1/4tsp
Tamarind paste-1tsp
Salt to taste
Turmeric powder-1/4tsp
Oil-1tsp
Uraddhal-1tsp
Mustard-1/4tsp
Jeera-1/2tsp
Method
Heat oil in a pan add uraddhal,mustard & jeera,let it splutter.Add the remanining ingredients one by one,fry till light brown.Cool & grind to a smooth paste.
