Pudalangai Poriyal(Snake gourd)

Ingredients
Frozen Pudalangai-1 packet
(chopped)
Salt to taste
Yellow moong dhal-2tbsp
(soak it in water for 15 minutes)
Coconut grated-2tsp
Turmeric powder-1/4tsp
Curry leaves-little
Tempering
Oil-1tsp
Mustard-1/2tsp
Urad dhal-1/4tsp
Red chillies-2
Hing-1/4tsp
Method
Heat oil in a pan temper it.Add the vegetable,curry leaves,turmeric powder & salt.Saute for few minutes.Now add the dhal with the water,cover & cook it till done & dry.Garnish it with grated coconut.

Shrimp Coconut Fry

Ingredients
Shrimp-2 cups
Oil-2tsp
Mustard-1/2tsp
Jeera-1tsp
Curry & Coriander leaves
Grind to a smooth paste
Coconut-2tbsp
Onion-1/4
Garlic-6
Fennel seeds-1tsp
Pepper-1tsp
Salt to taste
Chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Garam masala-1/2tsp
Method
Heat oil in a pan temper it with mustard & jeera.Now add the shrimp & ground paste fry a bit.Sprinkle very little water cover & cook it till oil separates the masala.Garnish it with curry & coriander leaves


Cucumber Avakai

I brought some cucumbers from the store....after cutting & tasting found it was a bit bitter.Not worth doing a raita.So came out of this idea....a pickle with it .It was good & no bitter taste at all.The lime juice removed the bitterness.

Ingredients
Peeled & cubed cucumber-1 big
(It was 3 hand full)
Salt-3tsp
Chilly powder-2tsp
Lime juice-6tsp
Turmeric powder-1/2tsp
Sliced garlic-4
Oil -to cover the whole mixture(1/4 cup)
Dry grind to a smooth powder
Mustard-2 & 1/2tsp
Methi-1/2tsp
Method
In a bowl mix all above ingredients together.Pour enough oil to cover the whole mixture(oil should float on top).Store it in fridge.It will taste better to eat the next day.
Tips
Use bright red chilly powder,mine didn't give good colour.I have no idea about the shelf life.....so try to make small quantity & finish it as fast as you can.

Yam Poriyal

Ingredients
Frozen Yam-1packet
(Cut it into fine cubes)
Onion chopped-1tbsp
Garlic chopped-6
Curry leaves-little
Grated coconut-1tbsp
Tamarind paste-2tsp
(to remove the itchiness from yam)
Salt to taste
Turmeric powder-1/2tsp
Chilly powder-1tsp
Coriander powder-1/2tsp
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1/2tsp
Method
Heat oil in a pan temper it.Add onion,garlic,curry leaves & yam ,fry a bit.Add the dry ingredients,tamarind paste & sprinkle water .Cover & cook it till done .Add coconut & garnish it with curry leaves.

Fresh Fruits & Bread Halwa

Ingredients
Fresh pineapples chopped-1 cup
Green apples chopped -4
Plums chopped-5
Black grapes-1 cup
Mango chopped-1
Sugar-1/2 cup or less
Cardamom powder-1tsp
1tbsp of Corn flour diluted in 2tbsp of Milk powder
Melon seeds(Char Magaz) for garnishing
Ghee-2tbsp
Cubed & fried wheat bread in 1tsp of ghee -4 slices
Red food colour -a pinch (optional)
Method
Heat 1tbsp of ghee in a pan add the cut fruits & milk powder & fry a bit.Cover & cook it till all the fruits are cooked & the water is evaporated.Now add the sugar,cardamom powder & remaining ghee.Fry till ghee separates the pan .Mix the bread at the last & garnish it with melon seeds.
Tips
This halwa can also be made with any left over fruits.If fruits are too sweet reduce the sugar.This can be served even with Vanilla ice cream.

Mutton & Drumstick Gravy

Ingredients For Grinding
Ginger & Garlic paste-1tbsp
Chilly powder-1/2tsp
Coriander powder-1tsp
Salt to taste
Turmeric powder-1/2tsp
Pepper-2tsp
Coconut-2tbsp
Fennel seeds-1tsp
Other Ingredients
Mutton-1 pound
Cut drumstick-1 cup
Chopped onion-1
Chopped tomato-1
Curry leaves-little
Cinnamon-1/4'',Cloves-2,Bay leaf-1,Cardamom-2
Oil-2tsp
Coriander leaves-little
Method
Heat oil in a pressure cooker temper it with the spices.Add onion & curry leaves fry till brown colour.Now add the tomato & ground paste.Fry till oil separates.Add the mutton & water,cook it till soft.Add the drumstick & cook it open till done.Garnish it with coriander leaves.
Tips
You can replace drumstick with any other Veg. like radish,potato,ridge gourd or bottle gourd.

Radish & Mint Chutney

Ingredients
Chopped radish-1/2 cup
Mint leaves-1/4cup
Salt to taste
Green chillies-4
Ginger & Garlic-1/4tsp
Tamarind paste-1tsp
Urad dhal-1tsp
Channa dhal-1tsp
Coconut-1tbsp
Tempering
Oil-2tsp
Mustard,Jeera & Curry leaves-little
Method
Heat 1tsp of oil fry all above ingredients one by one till radish is cooked.Cool & grind it to a smooth paste.Then temper it.Serve it with any tiffin

Murungai Keerai Adai / Drumstick Leaf Adai / Moringa Leaf Pancakes - Moringa Recipe


Ingredients to grind
Wild & Brown rice together-1/2 cup
Long grain rice-1/2 cup
Thur dal / Pigeon Pea-1/4 cup
Channa dhal-1/2 cup
Yellow moongh dal-1/4 cup
Red chillies-8
Ginger-1/4''
Salt to taste
(Soak above ingredients together for 2 hrs & grind it coarsely with salt.Batter should not be too thick)
Other ingredients
Murungai Keerai / Moringa leaves chopped-1 cup
Chopped onion-1/4
Grated coconut-1tbsp
Hing-1/4tsp
Jeera/Cumin-1/4tsp
Oil-to fry
Method
Mix above ingredients together and grind it to a coarse batter.
Heat a tawa pour 1/2tsp of oil ,pour a ladle of batter spread it like a dosa/pancake but a bit thick.
Pour oil around the adai & cook it on both sides till crisp.
Serve it with butter & any chutney.

Cornmeal Payasam

Ingredients
Cornmeal powdered-1 & 1/2tbsp
Milk-5 cups
Brown sugar-1/2 cup
Cardamom powder-1tsp
Saffron-little(optional)
Fried cashewnut , Charoli & raisins-1tbsp
Ghee-2tsp
Method
Heat 2tsp of ghee in a pan add the cornmeal & fry till raw smell goes & gives a light brown colour.Pour milk & simmer it for 15 minutes or till cooked.Add the brown sugar,saffron,cardamom powder & nuts mix it well.Give a boil switch off fire & serve it hot.
Tips
For extra taste & richness you can add coconut milk & condensed milk.

Potato & Carrot Poriyal

Ingredients
Diced potato-2
Diced carrot-4
Salt to taste
Chilly powder-1/2tsp
Turmeric powder-1/4tsp
Tempering
Jeera-1tsp
Crushed garlic-4
Curry leaves-little
Oil-2tsp
Hing-1/4tsp
Method
Heat oil in a pan temper it.Add the vegetable & dry ingredients,fry a bit.Sprinkle little water cover & cook it till done.Garnish it with curry leaves.
