Avocado Chutney

Ingredients
Avocado-2
Garlic-3
Salt-to taste
lime juice or tamarind paste-1tsp
coriander leaves -for garnish
green chillies
For tempering
Oil-1 tsp
Mustard-1/4 tsp
Hing-a pinch
Jeera-1/4 tsp
Method
Mash the pulp of the avocado with salt & lime juice.Grind green chillies & garlic.Mix it with the avocado mixture.Temper it with mustard,jeera & hing.Garnish with coriander leaves .Serve it with idli,dosa or chapathi.

Coconut Chutney / Red Coconut Chutney Recipe / Side Dish For Idli & Dosa Ingredients
Fresh coconut -1/2 cup
Red chillies-2
Garlic-1
Pottukadalai-4tsp
(Roasted Split chick peas)
Salt to taste
Tempering
Oil-1tsp
Mustard-1/2tsp
Jeera/cumin-1/4tsp
Urad dhal-1/4tsp
Curry leaves-little
Method
Grind all above ingredients to a smooth paste.Dilute the chutney according to the consistency you want.Heat oil in a pan & temper it.Pour it into the ground chutney mix & serve with Idli or Dosa.

Paper Dosa



Ingredients
Dhal Idly Batter
(Dilute it with water,not very thin)
Oil to make dosa

Method
Make dosa as usual in an iron tawa.Cook it till crisp(do not turn the dosa).

Dhal Idly

Ingredients
Idly rice-3 & 1/2 cup
Urad dhal-1 & 1/2 cup
Methi-1tsp
Aval (Poha)-1 cup
Masoor dhal-1/4 cup
Channa dhal-1/4 cup
Yellow moongh dhal-1/4 cup
Sabudana /Sago-1/4 cup
Salt to taste
Method
Soak urad dhal separately & all other ingredients together separately.Grind urad dhal batter till fluffy ,keep it aside.Grind the other ingredients to a smooth batter.Mix both the batters add salt & leave it to ferment overnight.Next day make Idly asusual.
Note:The batter should not be very watery to make idly.To make dosa dilute a bit.

Chicken Lettuce Wraps


Ingredients for the sauce
Sugar-1/2tsp
Soy sauce-3tsp
Rice vinegar or plain vinegar-1tsp
Tomato ketchup-1tbsp
Lime juice-1tsp
Sesame oil-1tsp
Mustard paste-1/2tsp
Red chilly paste-2tsp
Salt & pepper to taste
(Mix all above ingredients together in a bowl)
Other ingredients
Lettuce leaves-4 or 5
Minced chicken-1 cup
Chopped onion-1/2
Chopped garlic-5
Ginger paste-1tsp
Chopped spring onions-1 bunch (optional)
Sesame oil-1tsp
Method
Heat oil in a pan fry onion,garlic,ginger & spring onions till light brown.Now in high flame fry the chicken for 2 minutes.Now add the sauce & fry it till cooked & dry.Cool it & place 2 tsp of the mixture in each lettuce leaves,roll & serve it immediately.
Note:Vegetarians can replace chicken with minced soy chunks.You can also roll it in steamed cabbage leaves instead of lettuce .

Jeera Rice

Ingredients
Basmati rice-1 cup
Salt to taste
Tempering
Ghee-1tsp
Oil-1tsp
Jeera-1tsp
Cloves-1.Cardamom-1,Cinnamon-a small piece.
Sliced onion-1tsp
Method
Heat oil & ghee in a pan tempet it.Add rice ,salt & water.Cover & cook it in medium flame till done.Serve it with my Gosht Ka Sherva.

Gosht Ka Sherva


Ingredients dry fried & made into a smooth paste.
Peanuts-2tsp
Desiccated coconut-2tsp
Sesame seeds-1 & 1/2tsp
Other ingredients
Mutton-1/2 pound
Green chillies-8
Sliced onion-2tbsp
Ginger & Garlic paste-1/2tsp
Mint leaves chopped-a hand full
Salt to taste
Turmeric powder-1/4tsp
Curd-1/4 cup
Fried onions till brown-1tbsp
Lime juice-1tsp
Tempering (Optional)
Oil-1tsp
Cloves-1,Cardamom-1,Cinnamon-1/4''
Method
Heat oil in a pressure cooker temper it.Fry onion,green chillies,mint,ginger & garlic paste for 2 minutes.Now add salt ,ground paste,turmeric powder & curd.Add little water & cook it till done.Before serving mix fried onions & lime juice.This goes very well with jeera rice .

Mushroom & Dill Leaves Varuval


Ingredients
Sliced mushroom-1 pck
Chopped onion-1/2
Chopped tomato -1/2
Chopped dill leaves-1/2 bunch
Ginger & Garlic paste-1tsp
Slit green chillies-5
Pepper powder-1/2tsp
Salt to taste
Tempering
Oil-2tsp
Mustard-1tsp
Curry leaves-little
Method
Heat oil in a pan temper it .Fry onions till light brown.Now add remaining ingredients & fry it till mushrooms are cooked & dry(do not add water).Serve it garnished with dill leaves.

Chicken Vegetable Noodles

This dish can be cooked within 10min,once every thing is kept ready.
Ingredients
Egg noodles boiled (12oz)-1 packet
Mixed vegetables chopped -each 1 cup
(cabbage,carrot,beans)
Minced Chicken-1 cup
Chopped spring onions-1/2 cup
Onion chopped-1
Chopped ginger and garlic-2tsp
Green chillies chopped-2
Salt & pepper-to taste
Chilly sauce(optional)-2tsp
Soy sauce-1/2 tbsp
Olive oil -1tbsp
Method.
Heat oil in a pan add chicken.Fry till its cooked,add vegetables one by one.Now add the other ingredients fry till its done.Add the noodles till every thing is mixed properly.Garnish it with spring onions.
Tips
Chinese dishes should be cooked in high flame.Cook the chicken in high flame otherwise it will start leaving water,and your dish will be very soggy.
