Shahi Tukda Recipe / Shahi Tukra Recipe - Holi Recipes

Today is my 400th post.........Thought of sharing a rich royal dessert of the Navabs(Mughal Cuisine).

Shahi Tukda recipe / Shahi Tukra Recipe
Shahi Tukda
Ingredients for rabdi .
Milk-2 cups
Saffron-a pinch
(boil till it reduces to half & thick)

Ingredients for sugar syrup
Sugar-6tsp
Water-1/2cup
Cardamom powder-1/4tsp
Saffron-a pinch
(boil everything together for 2 minutes till slightly sticky)
Other ingredients
Whole wheat bread cut into triangles-3slices
(preferably white bread ,trim the ends.Deep fried in ghee)
Chopped nuts fried in ghee-2tbsp
(cashew nut,raisins,pistachio,almonds)
Edible silver foil -1(optional)
Ghee - to fry the bread



Method
Dip each fried bread in warm sugar syrup & place it on a flat serving dish.
Pour the thickened milk mixture on each slice.
Then garnish it with silver foil & nuts.
Left over sugar syrup can be poured on top of the bread ,chill & serve them.

Vegetable & Fruit Carvings

Today tried my best to do some carvings with minimum kitchen equipments ........




Palm tree - with carrot,green chillies,onion.
Rat/Mouse- with tomato,almond,semiya,cloves,green chillies,star anise
Bug- with orange,carrot ,cloves
Boat- with cucumber,carrot,almond
Basket- with orange,grapes,carrot,parsley
Bowl with a lid- with Apple,carrot,grapes,parsley

Baked Chicken Taquitos

Filling Ingredients
Minced chicken-1 cup
Salt & pepper to taste
Oil-1tsp
Chopped onion-1/2
Ginger & Garlic paste-1/2tsp
Green chillies-1
Curry powder-1/2tsp
Jeera powder-1/2tsp
Chopped parsley-2tsp(optional)
Tomato paste-1/2tsp
Other ingredients
Small white corn tortillas-12 count
(Mission brand)
Shredded cheese
Butter to grease the tray & apply on top
Method
Heat oil in a pan fry onion,green chillies,ginger,garlic & parsley to light brown,Now add remaining ingredients & cook it in high till dry.Keep it aside.Take a tortillas keep a spoon of mixture at one corner,sprinkle some cheese on top & start rolling it like a flute.You can use a tooth pick to hold the shape .Arrange it on a greased tray apply some butter on top.Bake it till crisp & brown at 400 deg C.

Zebra Cake Recipe


Ingredients
Egg-4
(room temperature)
Sugar-1 cup
Milk-1 cup
Oil-1 cup
Vanilla essence-1/2tsp
Maida-2 cups
Baking powder-1tbsp
Hershey's Coco powder-2tbsp

Method
In a bowl sieve maida & baking powder & keep it aside.In another bowl beat egg & sugar till mixture is creamy and light in colour,now add milk & oil mix till every thing is blended.Slowly add maida mixture to the wet ingredients and beat just until the batter is smooth and the dry ingredients are thoroughly incorporated.Divide the mixture equally into 2 bowls.Add cocoa powder to one bowl & mix it well.Grease a baking tray take a ladle of white batter pour it at the middle,next take cocoa batter & pour it on top of white mixture.Do not spread it or tilt the pan to distribute the mixture it will spread by it self.Repeat the process alternatively till your batter is over(see the picture).I poured the left over batter in muffin pan & followed the same process. Bake it at 350 deg.C for 35 minutes or till done..

Chicken Kheema Wraps

Ingredients for Chicken Kheema
Oil-1tsp
Minced chicken-1 cup
Chopped onion-1/2
Ginger & Garlic paste-1/2tsp
Chopped mint leaves-a hand full
Salt & pepper to taste
Chopped green chillies-1
Garam masala, Meat masala or Tandoori masala-1/2tsp
Kastoori methi-1tsp
Instant onion pickle
Thin slices of onion-1/2
Lime juice-2tsp
Salt & red chilly powder-required quantity
(mix all together & keep it aside)
Other Ingredients
Flat bread(Multi grain)-2
Shredded carrot -little
Lettuce leaves-little
Sliced tomato-little
Chat masala,roasted jeera powder & Kala namak( black salt)-little
Method
Heat oil on a pan fry onion,mint,green chillies,ginger & garlic till light brown.Now add all the seasoning & chicken.Cook it in high flame till cooked & dry.Keep it aside.Take a flat bread keep some shredded carrots,lettuce then 4tsp of chicken mixture.Top it with onion pickle & sprinkle it with jeera powder,kalanamak & chat masala.Tightly wrap it cut into half.Each end wrap it with a foil & serve it immediately
Note:Vegetarian can replace chicken with minced soy chunks,paneer or tofu.You can use any vegetable of your choice for filling.

Keerai Kunukku


Ingredients
Left over Kunukku batter
Chopped mint,parsley,palak & vallarai keerai-each a hand full
(or any variety of greens in your fridge)
Oil-to deep fry
Method
Mix all the greens with the batter.Heat oil in a pan drop spoon full of the mixture.Deep fry it till all sides are golden brown & crisp.Serve it hot with any dip.

Palak Soup


Ingredients
Palak-1 cup
Tomato-1/2
Garlic-2
Carrot-1
Yellow moongh dhal-3tsp
Salt & Pepper to taste
Roasted jeera powder-1/2tsp
Grated cheese or paneer for garnish
Method
Pressure cook all vegetables & dhal together.Cool,blend it in mixi & filter the puree.Dilute it with water season it with jeera,salt & pepper.Give a boil & switch off.Before serving garnish it with cheese.
