Eggless Brownies / Eggless Brownies Recipe

Ingredients
All purpose flour-1 cup
Cocoa powder-1/2 cup
Icing sugar-3/4 cup
Baking soda-1tsp
Salt-1/2tsp
Oil-5tbsp
Butter milk-1 cup
Instant coffee powder-2tsp( dissolved in 1tbsp of water)
Chopped walnuts-1tbsp
Chocolate chips-1tbsp (dusted with little flour)

2 Layered Sandwich


Ingredients for Avocado spread
Avocado-2
(scoop out the flesh)
Coriander leaves- handful
Lemon juice-1 tsp
Green chillies-1
Garlic -1
Salt & Pepper to taste
(blend everything in a blender to a semi smooth consistency,do not add water)
Other ingredients
Tomato ketchup-1tbsp
Butter-1tsp
(Mix butter & ketchup to a smooth consistency)

Ingredients 
Softened butter -1 cup
Sugar-1 cup
Egg yolk-2
Vanilla essence-4tsp
Milk-2tbsp
All purpose flour-3 cup
Baking powder-1tsp
Cocoa powder-6tbsp
(mix cocoa powder with 2tbsp of melted butter & 2tbsp milk)

Baking temperature- 325 deg.F

Baking time -12 to 15 minutes

Allam Pachadi / Ginger Pickle (Andhra Style Ginger Pickle)

Oil-1/8 cup
Mustard-1/2tsp
Uraddhal-1/8 cup
Channa dhal-1/8 cup
Red chillies-6
Jeera-1tsp
Curry leaves-a handful
Ginger chopped-1/2 cup
Salt to taste
Hing-1/4tsp
Turmeric powder-1/2tsp
Coriander seeds-1tsp
Brown sugar-4tsp
Tamarind soaked in warm water-a small lime size
Method
Heat oil in a pan,fry all above ingredients one by one till light brown in colour.Cool it completely & grind it with tamarind & salt to a smooth paste.Serve it with any tiffin.

Kosambari / Kosumalli /Carrot,Cucumber & Moongh Dhal Salad

Ingredients
Grated Carrot-2
Yellow Moongh dhal-1/2 cup
(soak it in water for 30 minutes & drain)
Sal to taste
Chopped Coriander leaves-2tsp
Grated fresh coconut (Optional)-1tsp
Lime juice-2tsp
Chopped Cucumber(optional)
(I didn't use it)
Tempering
Oil-1tsp
Mustard & Urad dhal-each 1/2tsp
Hing-a pinch
Chopped green chillies-1
Curry leaves
Method
Mix all above ingredients together in a bowl.Heat oil in a pan & temper it.Mix this tempering into the above mixture.Mix it well & serve.

Chayote/Chow Chow Paratha

Ingredients
Whole wheat flour-2 cups
Grated chayote/chow chow-1 cup
Salt to taste
Red chilly powder-1tsp
Jeera powder-1/2tsp
Turmeric powder-a pinch
Kastoori methi-2tsp
Oil-2tsp + for cooking parathas
Water to need the dough
Method
Mix all above ingredients together,pour water & make a soft dough.Take small balls out of the dough,roll it out into semi thick circle.Cook this on a tawa with little oil smeared on top,till its light brown on all sides.Serve it with any gravy you like.
