Walnut Burfi
Ingredients
Powdered walnuts-1 cup
Sugar-3/4 cup
Water-1/4 cup
Cardamom powder-1/2tsp
Ghee-1tsp
Edible silver paper for decoration(optional)
Method
Boil sugar & water till you get a 2 string consistency,switch off the stove.
Remove from heat, add the walnut powder & cardamom powder and mix it well till it forms a soft ball.
Add ghee & knead it well.
Spread it on a grease plate or on a wooden cutting board, roll it to any thickness you want.
Decorate with edible silver foil,cool & cut it into desired shape.
Yummy Walnut Katli /Burfi is ready to serve.

Stuffed Bitter Gourd
Ingredients ground to a smooth powder
Fennel seeds/somph-1 & 1/2tsp
Jeera/cumin-1tsp
Cloves-3
Cinnamon-a piece
Amchur/dry mango powder-1tsp
Red chilly powder-1 & 1/2tsp
Turmeric powder-1/2tsp
Coriander powder-2tsp
Salt-1tsp or to taste
Other ingredients
Crushed onion-1/2
Ginger & garlic paste-1tsp
Tempering
Oil-8tsp
Mustard-1tsp
Curry leaves-little
Chopped tomato-1
Diluted tamarind juice-1/2 cup
Brown sugar-1tsp
Method
Take bowl mix the crushed onion,ginger& garlic paste & the ground dry masala.
Mix it well & keep it aside.
Cut the karela into half remove the seeds.Stuff the karela with the masala.
Heat oil in a pan temper it .
Arrange all the stuffed bitter gourd,add the tomato,brown sugar,tamarind juice & curry leaves.Cover & cook it on low flame till brown on all sides &  the masala is cooked well & dry.
Garnish with curry leaves & serve it with plain rice or roti.

Eggless Whole Wheat Pecan Cookies
Ingredients
Whole wheat flour- 1 cup
Chopped pecan-1/4 cup
(Original recipe says almonds)
Sugar- 1/2 cup
Salt -1/4tsp
Vanilla essence -1/2tsp
(Original recipe says cardamom powder)
Butter softened -1/2 cup
Milk-1 or 2 tbsp
Method
Mix all the above ingredients together in a bowl.
Slowly add the milk (required amount) & form into a soft dough.
Make small balls,flatten then slightly with your palm.Arrange them on a ungreased baking tray about 1/2 inch. apart.
Bake for 10 to 12 minutes or till light golden brown on all sides at 360 deg.F.
Cool completely & store them in an air tight container.

Note:
I felt the cookies were a bit sweet for me, you can remove 1tsp of sugar.Its up to you.
Do not over bake the cookies,it will become hard.

Tomato Rasam
Ingredients dry roasted & powdered (Rasam powder)
Pepper-1/2tsp
Jeera/cumin-1/2tsp
Coriander seeds-1/2tsp
Thur/thoor dal-1tsp
Red chillies-1
(dry roast all above ingredients till light brown & make a powder.Do not burn them)
Tempering
Oil or ghee-1/2tsp
Mustard-1/4tsp
Hing-1/4tsp
Curry leaves-few
Other ingredients
Diluted tamarind juice-3 cups
Finely chopped tomato-1big
Salt to taste
Turmeric powder-1/8tsp
Chopped coriander & curry leaves for garnish

Tomato Rasam / Thakkali Rasam /Thakkali Rasam Recipe / Simple Tomato Rasam Recipe
Method
Heat oil in a pan & temper it.Pour the tamarind juice,add the chopped tomato,salt & turmeric powder.
When the rasam starts to froth add the rasam powder & switch off the stove ( Do not boil or simmer the rasam,it loses  its flavour).Garnish with curry & coriander leaves.

Note: 
Do not boil or simmer the rasam,it loses its taste/flavour.
Crushed garlic can be added it gives a nice flavour.Add it while adding the tomatoes.
You can even add thoor/thur dal water.
Instead of red chillies even green chillies can be added.

Baking soda-1tsp
Salt-1/2tsp
Oil-5tbsp
Butter milk-1 cup
Instant coffee powder-2tsp( dissolved in 1tbsp of water)
Chopped walnuts-1tbsp
Chocolate chips-1tbsp (dusted with little flour)

Ingredients for the dough
Maida/All purpose flour-2 cups
Sooji/White rawa-1/4 cup
Salt-1/2tsp
Sugar-1tsp
Baking powder-1/4tsp
Thick butter milk-1 cup or little more
Method
Mix all above ingredients in a bowl.
Add the butter milk & make a semi thick dough (like poori dough).
Cover & rest it for at least 2 hours.Take small lime size ball,dust it with flour & roll it to a semi thick disc/circle.
Heat oil in a pan & deep fry in medium high flame till its light brown on both sides.
Place the bhatura on a kitchen towel to absorb the excess oil.Serve it hot with Chole/Channa masala.

Chole/Channa Masala

Ingredients dry roasted & powdered
Jeera/Cumin-1tsp
Kastoori methi-1tsp
Coriander powder-1tsp
Nutmeg-less than 1/8tsp
Ingredients ground to a coarse paste
Onion-1/4
Tomato-2
Ginger & Garlic paste-1tsp
Turmeric powder-1/8tsp
Red chillies-1/2tsp
Other ingredients
Channa/Garbanzo/Chickpea-1 cup
(soaked overnight in water)
Slit green chillies-2
Salt to taste
Chopped coriander leaves-2tsp
Amchur powder/dry mango powder-1tsp
Tempering
Oil-3tsp
Jeera/cumin-1/4tsp

Channa Bhatura
Method
Heat oil in a pan & temper it.
Add the onion,tomato,ginger & garlic paste & fry till oil separates the pan.
Add the green chillies,salt,dry roasted & powdered masala,amchur powder fry for a minute & add the soaked channa.
Pour 2 & 1/2 cups of water & cook it till done.
Garnish it with chopped onions & coriander leaves just before serving.

Cabbage Tomato Chutney
Ingredients
Oil-1tsp
Chopped cabbage-2 cups
Chopped tomato-1
Ginger & Garlic paste-1/4tsp
Green chillies-2
Jeera-1/2tsp
Tamarind-a small piece
Salt to taste
Tempering
Oil-1tsp
Mustard-1tsp
Channa & Urad dal-each 1/2tsp
Jeera/cumin-1/8tsp
Curry leaves-little
Method
Heat 1tsp of oil & fry tomato,cabbage,chillies,ginger & garlic till raw smell disappeared.
Cool & grind to a smooth paste along with  tamarind,jeera & salt.
Heat oil in a pan temper it,pour it on top of the ground chutney.
Mix & serve with any tiffin or with plain rice.

Eggless Custard Cake
Ingredients for the cake
Maida/All purpose flour -1 & 1/2 cups
Vanilla custard powder -3/4 cups
Sugar -3/4 cups
Baking powder-2 & 1/4tsp
Vanilla essence -1tsp
Butter softened -1/2 cup + 3tbsp (150 gms)
Milk -1 cup
Method
Pre.heat the oven to 350 deg.F.Grease a baking pan with little butter & dust it with flour, keep it ready.
Sieve maida,baking powder,custard powder & keep it aside.
Cream butter & sugar till it doubles,add the essence and milk,mix well till smooth.
Add the dry ingredients & fold in the batter till its smooth.
Pour this into the greased pan & bake it for 30 to 35 minutes or till done.
Cool completely & then pour the glaze on top,cut & enjoy!
Ingredients for the chocolate glaze
Powdered sugar -1/2 cup
Cocoa powder-1 & 1/2tbsp
Butter softened-1tbsp
Warm milk-2tbsp
Vanilla essence-1/4tsp
Method
Cream sugar,cocoa powder & butter well.
Add the essence & milk,whisk it well until well combined.
Pour it over the cooled cake slice & enjoy!
