How to make curd at home

Ingredients

Whole milk - 2 cups

Curd - 1 to 2 tsp ( beaten)

( curd must be in room temperature)

Method

Pour milk in a pan and boil, simmer it for 2 to 3 minutes. Switch off the stove and let it cool down.

When milk is luke warm transfer to the bowl in which you are going to set the curd..

Add the beaten curd / culture and mix evenly.

Cover and set it in room temperature for 8 hours or overnight.

Next day your curd is ready to serve,

Keep it in fridge and enjoy cold!

Note:

a) Thickness of the curd depends upon the quality of the milk. So use whole milk if possible.

b) Make sure the culture is fresh and good quality.

c) Mix the culture evenly into the luke warm milk to get get good result.

d) Keep the milk in warm place to set curd, warm environment helps for best result.

e) Do not mix the culture in hot milk.

Nasturtium Butter

Ingredients

Butter - 1 stick ( 1/2 cup / 8tbsp /4 oz / 113 gms)

( bring the butter to room temperature)

Salt and pepper powder to taste

Chilly flakes - 1/2 tsp

Lemon juice - few drops

Lemon zest - 1/8 tsp

Chopped coloured Nasturtium flowers - 1/2 cup

Herbs of your choice (optional)

Edible Flowers and Herbs Butter
Method

Take softened butter into a bowl add all the other ingredients mentioned and mix well till combined.

Place it on a plastic cling wrap or parchment paper and roll it to a log.

Press few petals and fresh herbs if using on top of the log.

Wrap the log tightly and chill till firm . cut into slices

Enjoy this flavored butter on steamed vegetables, meat, poultry, toasted bread , corn or on charcuterie board.

Note:

You can make this butter with any edible flowers and herbs of your choice.

Flaxseed Mukhwas

Ingredients

Flaxseed - 1 cup

Lime juice - 2 tsp

Salt - 1/4 tsp

Black salt - 1/2 tsp

Water 1 & 1/2 tbsp

Turmeric powder - 1/4 tsp

Method

Take a bowl all above ingredients and mix well till combined.

Cover and rest for 30 minutes. Add this to a heavy bottomed or non stick pan, in low flame dry roast till it starts to give nice aroma and starts to crack.

Switch off the stove cool completely and store it in a clean jar.

Take a teaspoon after meal.

Ingredients

Water - 1 cup

Cornflour - 1 tbsp

Food colours of your choice

Method

Pour water in a pan add the food colour and cornflour mix till they dissolve.

Switch on the stove and in low flame keep mixing till the mixture turns thick.

Switch off the stove while still hot using a brush spread this mixture evenly on a thick plastic sheet.

The spread should be slightly thick,if too thin they will stick to the sheet and you can't remove them.

Dry it inside the house for 10 to 15 hours or till completely dry.

Gently peel the sheet from the plastic sheet , break into pieces and dry grind to a fine powder.

Sieve the powder and your edible glitter is ready to sprinkle on top of cakes or cup cakes.

New Year Eve Feast




















We had a lovely & memorable New Year Eve.All the husbands cooked & we ladies had a Day Out!!!!!!! They cooked a variety of dishes & the greatest gift was they even Baby Sitted our Kids.Hats off to our hubbys.....................
You all must be thinking what they prepared ?Here comes the menu....
1.Plain Rice
2.Rasam
3.Curd
4.Fish kuzhanbu
5.Fish fry
6.Shrimp fry
7.Tandoori chicken
8.Mutton chukka
9.Mango sambar
10.Egg curry
11.Chicken Biriyani
12.Ice cream & Chocolate cake
(store bought)
They even served it to us with great LOVE!!!!!!!!!!!!!!! A great Thanks to one & all.Eagerly waiting for another occasion like this.
