Quinoa Urad Dal Kanji / Quinoa Ulundhu Kanji / Quinoa Kanji

Quinoa Ulundhu Kanji
Ingredients
Red quinoa - 1/2 cup
Whole green moongh dal - 1/8 cup
Whole black urad dal - 1/3 cup
Vendhayam / Methi seeds / Fenugreek seeds- 1 tsp
Salt to taste
Garlic - 4 cloves
Ghee - 1tsp
Jeera/Cumin seeds - 1 tsp
Curry leaves few
Freshly grated coconut - 6 tsp
Water - 6 cups

Quinoa Urad Dal Kanji
Method
Heat a pressure cooker add the urad dal,moongh dal and dry roast till colour changes.Add the quinoa and roast till just hot.
Add methi seeds,garlic,coconut and water,pressure cook till soft.Cool and open the pressure cooker lid add salt and mash the kanji using a ladle or masher.
Heat ghee in a pan temper with jeera and curry leaves,pour the tempering into the cooked kanji and mix well.
Serve hot with any thogayal/chutney of your choice or mor milagai or papads/appalams.

Quinoa Thattai
Ingredients
Rice flour - 1 & 1/2 cups
Red quinoa - 1/2 cup heaped
( Dry roast & powder it fine)
Salt - 1 tsp heaped or to your taste
Red chilly powder - 1 tsp heaped
Hing - 1/2 tsp
White sesame seeds - 1 tbsp
Coarsely powdered peanuts - 2 tbsp
Melted butter - 1 tbsp
Water - 1 cup approximately
( Add if needed more)
Chopped curry leaves - 15
Other Ingredients
Oil to deep fry

Quinoa Thattai
Method
Take a bowl add all the above mentioned ingredients except oil & water.
Add water little by little to form a semi soft dough.Do not make it too soft or too tight.
Grease a plastic sheet with oil take a small ball of dough & flatten it to a semi thin disc.
Prick the thattai with a fork all around,this prevents them to puff up & helps to fry evenly.
Heat oil in a pan when hot slide each thattai carefully into the oil.
In medium high flame fry both sides till crisp & light brown.
Remove it on a paper towel for extra oil to get absorbed if any.
Cool them completely & store it in a air tight container.
Note:
a) Soaked channa dal & garlic can be added for extra taste.

Quinoa Bisi bele Bath
Ingredients pressure cooked together
Quinoa-1 cup
Thoor dhal-3/4 cup
Salt to taste
Turmeric powder-1/2tsp
Water-3 cups
( Pressure cook the above ingredients together till done,keep it aside)
Tempering ingredients to be added at the end
Chopped cashew nut-10
Curry leaves-little
Red chillies-3
Ghee-1tbsp
(Heat ghee in a pan & temper it,keep it aside to add at the end)
Other ingredients
Oil-3tsp
Mustard-1tsp
Chopped onion-1/2
Chopped tomato-1
Curry leaves-little
Chopped vegetables-3 cup
(I used potato,carrot,beans,peas,zucchini)
Red chilly powder-1/4tsp
Turmeric powder-1/2tsp
Salt to taste
Semi thick tamarind water-1 cup
Water-2 cups
Bisi bele bath powder
Urad dal-1tbsp
Channa dal-1tbsp
Coriander seeds-2tbsp
Methi / Fenugreek seeds-1/4tsp
Pepper-5
Jeera / Cumin-1tsp
Cinnamon stick-1 ''
Cloves-3
Marati moggu -a small piece
Star anise-1
Red chillies-5
Dessicated coconut-1tbsp
( Dry roast the above ingredients except coconut till light brown.Cool & dry grind to a smooth powder along with coconut & keep it aside )
Method to make Bisi bele bath
Heat oil in a pan temper it with mustard.
Fry onion,tomato & curry leaves till light brown.
Add the vegetables saute for a minute,add all the dry masala powder,bisi bele bath powder,tamarind juice & water.
Cook till vegetables are cooked add the pressure cooked quinoa & dhal.
Give a boil & switch off the stove.
Pour the fried cashew,red chilly & curry leaves fried in ghee on top,garnish with chopped coriander leaves ,mix & serve them hot with raita or papad.

Curd Quinoa
Ingredients 
Quinoa - 1/2 cup
Water - 1 & 1/2 cup
Milk - 1/4 cup
Curd as needed ( around 1/2 cup )
Salt to taste
Grated carrot - 1 tbsp
Grated cucumber - 1 tbsp
Chopped coriander leaves - 1tsp
Ingredients for tempering
Oil - 1 tsp
Mustard - 1 /2 tsp
Ural dal - 1/4 tsp
Red chillies -1
Hing a pinch
Grated ginger - 1/8 tsp
Chopped green chillies -1
Curry leaves few
Cashew nuts - 4 (option)
Method
Heat oil in a pan and temper it with above ingredients and keep it aside.
Wash quinoa well and cook it with water till done.Add salt and slightly mash it.
Once the quinoa is warm add the milk,curd,carrot,cucumber,coriander leaves and the tempering. Gently mix everything and serve it with pickle .

Quinoa Vegetable Dhal Kichidi / Quinoa and Dal Khichdi / Quinoa Vegetable Khichdi

Quinoa dal Khichdi
Tempering
Oil-2tsp
Red chillies-2
Mustard,Urad Dal,Jeera-each 1/4tsp
Turmeric powder-1/8tsp
Hing-1/8tsp
Crushed garlic-3
Curry leaves-little
Other ingredients
Mixed vegetables of your choice-2 cups
( I have used beans,peas,carrot and potato)
Small onions-10
Quinoa-3/4 cup
( Wash the quinoa 2 to 3 times before cooking)
Yellow masoor Dal-1/2 cup
Water-3 cups
Salt to taste
Method
Heat oil in a pressure cooker temper it with above ingredients.
Add the onion and fry till light brown colour,add the vegetables & saute for 2 minutes.
Add salt,pour water,add the soaked quinoa,Dal & pressure cook till done.
Serve it with any side dish or raita.

Quinoa Payasam Recipe /Quinoa Kheer Recipe /Quinoa Porridge /Quinoa Pudding Recipe

Quinoa Payasam

Ingredients
Quinoa-1/2 cup
( wash couple of times by massaging the seeds to get rid of the bitter saponin completely)
Water-2 cups
Milk -5 cups
Sugar-1/2 cup
(As i was preparing for a party i added 1tbsp extra to make it a bit sweet)
Crushed pistachio & almonds - each 1 tbsp
Cardamom powder-1/2 tsp
Saffron a pinch (optional for garnish)
Rose essence - few drops (optional)
Method
Pressure cook quinoa with 2 cups of water,may be just a whistle.Once cooked open the pressure cooker,add the milk give a stir.
In low flame cook the kheer till semi thick or consistency you want for about 15 minutes.Add the sugar,cardamom powder & crushed nuts,cook it for another 1 or 2 minutes.
Switch off the stove ,garnish with saffron & rose essence if using,serve it hot or cold.

Note:
a) Condensed milk can be added for extra richness.
b) Always use whole milk for any kind of payasam/kheer.
c) If you like you can also add fried raisins & cashew nuts in ghee.
d) Wash quinoa couple of times my massaging the seeds to get rid of the bitter saponin completely.
e) Some people also add jaggery instead of sugar & slight coconut milk to give extra richness.

Quinoa Carrot Pulao

Ingredients
Quinoa-1 cup
(washed & soaked in 2 cups of water for 10 minutes)
Salt to taste
Grated carrot-1/2 cup
Mint leaves chopped-3tsp
Green chillies chopped-1
Onion chopped-1/4
Tomato chopped-1/4
Tempering
Oil-2tsp
Jeera-1/8tsp
Cloves,cardamom-1 each
Cinnamon-a small piece
Method
Heat oil in a pan temper it.Fry onion,mint,tomato,carrot & chillies till light brown.Add the washed quinoa,salt & water.Cover with a lid and cook it till done in medium low flame.Serve it with raita..

Quinoa Adai

Ingredients

Red quinoa - 3/4 cup
Sona masoori rice - 1/4 cup
Channa dal -1/4 cup
Thur dal -1/4 cup
Yellow moongh dal - 1/4 cup
Ginger-a very small piece
Chopped drumstick leaves - 1/2 cup
Red chillies-4
Chopped curry leaves-little
Chopped onion - a handful ( optional)
Salt to taste
Hing - 1/2tsp
Grated coconut - 2 tbsp
Oil -required amount to cook adai

Method

Wash & soak quinoa, rice,red chillies,ginger & dals together for 3 hours.
Grind it to a semi thick coarse batter, transfer the batter into a bowl.
Do not add too much water while grinding.
Add hing,grated coconut,salt,chopped curry leaves and drumstick leaves,mix well.
Fermentation is not needed.
Heat a tawa pour a ladle of batter spread it to a semi thick circle.
Pour oil around & cook it till crisp & brown on both sides.
Serve hot!

Quinoa Murukku

Ingredients
Rice flour-1 & 1/2 cup
Slightly dry roasted & powdered quinoa-1/2 cup
Besan-1/2 cup
Salt to taste
Red chilly powder-1/2tsp
Cumin seeds-1 tsp
Hing-1tsp
Water-required amount to make a soft dough
Hot oil-1tbsp
Oil-to deep fry
Method
Pour water little by little & make a soft dough with all above ingredients.Heat oil in a pan,fill some dough in the murukku press/mould.Press directly into the hot oil.Deep fry in medium flame till light brown on all sides & crisp .Remove on a kitchen paper. Cool & store in a air tight container.

Quinoa Pesarattu


Ingredients
Quinoa-1 cup
(washed & soaked for 1 hour)
Whole green moongh dhal-1/2 cup
(soaked for 4 hours)
Ginger -a small piece
Jeera-1tsp
Salt to taste
Green chillies-2 or 3
Chopped onion little for filling
Oil-to cook pesarattu
Method
Grind all above ingredients to a smooth batter(no need to ferment).Heat a tawa,pour a ladle of batter.Spread it a bit thin, pour little oil around & cook it both sides till light brown.Before removing sprinkle some chopped onions fold the pesarattu & serve it hot with any chutney.

Instant Quinoa Idly

Ingredients
Slightly dry roasted & coarsely powdered Quinoa-1/2 cup
Slightly dry roasted & coarsely powdered quick oats-1/2 cup
Slightly dry roasted semolina/Sooji-1/4 cup
ENO fruit salt-1/2 tsp
Salt to taste
Turmeric powder-a pinch
Curd-less than 2 cups
Tempering
Oil-1tsp
Mustard-1tsp
Jeera-1/2tsp
Urad dhal-1/2tsp
Chopped green chillies-1
Chopped curry leaves-little
Grated ginger-1/8tsp
Hing-a pinch
Method
Mix all above ingredients together except ENO.Heat oil in a pan & temper it.Cool & pour it in the above mixture.Just before pouring it in greased Idly pans add the ENO beat it well & pour immediately & steam it till cooked.Serve it with any chutney.

Quinoa & Sweet Potato Cutlet

Ingredients
Finely shredded or chopped vegetables-1 cup
(I used cabbage,carrot,beans)
Boiled & mashed sweet potato-1/2 cup
Cooked quinoa-1/4 cup
Boiled & mashed potato-1
Chopped onion-1tbsp
Ginger & Garlic paste-1/2tsp
Chopped coriander leaves-a handful
Red chilly powder-1/2tsp
Coriander powder-1/4tsp
Turmeric powder-1/8tsp
Salt to taste
Garam masala-1/4tsp
Other ingredients
Oil-to fry
Bread crumbs & beaten egg
Method
Heat 1tsp of oil fry onion till transparent.Add the vegetables,ginger & garlic paste,salt dry ingredients & fry for 2 minutes.Switch off the stove cool a bit & mix the potato,coriander leaves,cooked quinoa & sweet potato.Mix it well & take a small ball & slightly flatten it.Dip it in egg & roll it in bread crumbs.Heat oil in a pan & shallow fry it.Serve it with ketchup.

Quinoa Sponge Dosa

Ingredients
Quinoa-1/2 cup
Brown rice-1/2 cup
Aval(Poha)-1/2 cup
Uraddhal-1/8 cup
Butter milk-1 cup
Salt to taste
Cooking soda-1/2tsp
Oil-to make dosa
Method
Wash & soak all above ingredients(except salt & cooking soda) overnight.Next day grind it to a smooth semi thick batter.Add salt & cooking soda just before making.Pour a ladle of batter on a tawa,spread it slightly.Pour oil around it,cover & cook it both sides till done.Serve it with any side dish you desire.

Quinoa Idli with Idli Rice
Ingredients
Brown rice or Idly rice-1 cup
(I used brown rice)
Quinoa-1 cup
Urad dhal-1/2 cup
Methi/fenugreek seeds-1/2 tsp
Salt to taste
Quinoa Idli / Quinoa Idly Recipe / A Very Healthy Steamed Cakes/idli recipe
Quinoa Idli With Brown Rice
Method
Wash & soak quinoa,methi & brown rice together & dhal separately for 3 hrs.
Grind dhal till fluffy & keep it aside.Grind the rice till a smooth batter.
Mix both the batters together,add salt & leave them to ferment overnight.
Next day mix the batter,grease Idli plates.Pour a ladle of batter into the idli plates & steam them for 7 to 8 minutes or till cooked.
Serve it with any chutney of your choice.

Tomato & Tofu Quinoa Bath

Ingredients
Quinoa-1 cup
(washed & soaked in 1 & 1/2 cup water for 10 minutes)
Hunt's Tomato sauce-1/4 cup
Cubed firm tofu-1/4 cup
Salt to taste
Turmeric powder- a pinch
Sliced onion-2tbsp
Slit green chillies-1
Grated ginger-1/4tsp
Tempering
Oil-3tsp
Mustard-1/4tsp
Fennel seeds-1/2tsp
Urad dhal-1/4tsp
Jeera-1/4tsp
Channa dhal-1/4 tsp
Curry leaves
Method
Heat oil in a pan temper it.Fry chillies,ginger & onion till light brown.Add the tofu,salt,turmeric powder & sauce.Cook for 2 more minutes.Add the soaked quinoa with water & tomato sauce.Cover & cook it in low flame till dry.Serve it with raita.

Quinoa & Mixed Vegetable Pakoras

Ingredients
Finely chopped vegetables-1 cup
(I used carrot,beans,cabbage,celery)
Chopped onion-1/4
Chopped coriander leaves-3tsp
Fennel seeds-1tsp
Salt to taste
Red chilly powder-1/2 tsp
Ginger & Garlic paste-1/2 tsp
Rice flour-3tsp
Besan-6tsp
Cooked quinoa-1/3 cup
Oil to deep fry
Method
Mix all above ingredients together(do not add any water,if required sprinkle very little).Heat oil in a pan & drop small pieces of dough.Deep fry it till brown & crisp on both sides.Serve it with any dip.

Coconut milk-1/2 cup
Water-1 cup
Frozen mixed vegetables-1/2 cup
Salt to taste
Turmeric powder-1/4tsp
Sliced onion-2tbsp
Slit green chillies-2
Chopped mint leaves-2tsp
Sliced garlic-2
Tempering
Oil-2tsp
Fennel seeds-1tsp
Cloves-1
Cardamom-1
Cinnamon-a small piece
Bay leaf-1
Method
Heat oil in a pan temper it.Fry onion,mint,garlic,onion,vegetables,salt & turmeric powder till light brown.Now add the washed quinoa,coconut milk & water.Cook it in low flame till done.Garnish with mint leaves.

Quinoa Peas Pulao

Ingredients
Quinoa-1/2 cup
Water-1 & 1/4 cup
Salt to taste
Peas-1/4 cup
Sliced onion-1tbsp
Slit green chillies-1
Sliced garlic-1
Mint-8 leaves
Tempering
Oil-1/2 tsp
Ghee-1tsp
Jeera-1/4tsp
Cloves,Bay leaf & cardamom-1 each
Cinnamon-a small piece
Method
Wash & soak quinoa with 1 & 1/4 cup of water for 10 minutes.Heat oil & ghee in a pan temper it .Fry onion,mint ,chillies & garlic for 2 minutes.Add the peas & soaked quinoa with water.Cover & cook it in low flame till dry.Serve it with any gravy or raita.

Ingredients
Quinoa-3tsp
Masoor dhal-2tsp
(or Thur dhal)
Urad dhal-1tsp
Jeera-1/2tsp
Red chillies-3
Grated coconut-1tsp
Hing-1/4tsp
Garlic chopped-1
Salt to taste
Oil-1tsp
Method
Heat oil in a pan fry all above ingredients till light brown.Cool,add water,salt & grind it to a smooth paste.Serve it with rice or any tiffin.

Quinoa Ven Pongal

Ingredients
Quinoa-1 cup
Yellow moongh dhal-1/2 cup
(I used slit green moongh dhal)
Grated ginger -1/2tsp
Salt to taste
Turmeric powder-1/8tsp
Water-3 & 1/2 cups
Tempering
Jeera & Crushed black pepper-each-1/2tsp
Curry leaves-little
Ghee-1tbsp
Cashew nuts-2tsp
Method
Heat a pressure cooker dry roast moongh dhal till light brown colour & nice aroma comes out.Add the quinoa,turmeric powder,salt,ginger & water,cook it till done.Temper it,mix it well & serve it hot with any chutney.
