Sel Roti / Nepali Sweet Bread / Selroti / Crispy Rice Doughnuts

This is a dish from Sikkim !!!!!!.I tried my best to get the round shape.

Sel Roti
Ingredients 
Basmati rice-1 cup 
Coconut-1tsp 
Cashew nut-1tsp 
Almond-1tsp 
Milk-1/2 cup 
Maida-6tsp 
Sugar-1/4 tsp 
Salt-1/4tsp 
Butter-1 tbsp 
Cardamom powder-1tsp 
Vanilla essence-1/2tsp 
Oil to deep fry 
Method 
Soak rice,nuts & coconut for 1 hour in water.
Grind it with milk till a coarse paste.Add the remaining ingredients & mix it like the consistency of a pancake batter.
Heat oil in a pan,take a ladle of batter pour it inside a funnel or use your hand & make a round shape in the hot oil.
Cook it both sides till its brown.
Serve it with Shimi Ko Achar.

Shimi ko Achar / String Bean Pickle / Shimi Ka Achar - Sikkim Cuisine

This is a recipe from SIKKIM.This is one of the favourite of the people of Sikkim. It is yummy to have it with Sel roti !!!!!!!

Shimi Ko Achar

Ingredients

String beans cut into thin slanting slices -1 cup

Sesame seeds roasted & powdered-1tsp

Salt to taste

Oil-1tsp

Green chillies sliced - 2

Lime juice-1tbsp

Method 

Boil beans in salt water for 5 minutes,strain it & put it in a bowl.

Heat oil in a pan fry green chillies for a minute & pour it on top of the beans.

Add lime juice,salt & sesame seed powder,mix it well & serve it with Sel roti(crispy rice doughnuts).

Rose Petal & Spring Onion Soup

Ingredients
Rose petals dry-5 small flowers
Spring onion -1 small bunch
Green chillies-2
Parsley chopped(optional)-2tsp
Garlic-1
Carrot-1/4 cup
Salt & Pepper to taste
Method
Cook all above ingredients with little water till the vegetables are soft.Cool & grind it to a smooth paste.Strain it.Add enough water to dilute,season with salt & pepper.Give a boil.Serve it hot.

Aloo Postu

This is a very easy & tasty thick gravy recipe from WEST BENGAL.This dish has no oil at all.....

Ingredients
Cubed &boiled small red Potato-5
Green chillies slit-2
Grind to a smooth paste
Poppy seeds-4tsp
(soaked for 30 minutes)
Green chillies-1
Turmeric powder-1/4tsp
Salt to taste
Method
Heat a pan add the boiled potato,slit green chillies & the ground paste.Cook it till the gravy is thick .Serve it with basmati rice or roti.


Rose Petal Thogayal

Ingredients
Rose Petal (dry) - 1 cup
(you can use any colour)
Channa dhal-1 tbsp
Urad dhal-1tbsp
Garlic-3
Curry leaves-3
Hing-1/4tsp
Tamarind paste-little
Red chillies-3
Jeera-1tsp
Coconut-1 tbsp
Salt to taste
Oil-1tsp


Method
Heat oil in a pan fry dhals,jeera,red chillies,garlic & coconut till light brown colour.Switch off the gas & add other ingredients.Cool it & grind it to a coarse paste.Serve it with rice.

Note:You can grind it like a powder without adding water & use it like a podi or grind it to a smooth paste & serve it like a chutney to any tiffin.Tempering will be needed.
Tips:Before drying the rose petals wash it.

Peanut Butter Chocolate Balls

Ingredients for the filling
Peanut butter-3/4 cup
Butter-1/4 cup
Vanilla essence-1/2tsp
Salt-1/4tsp
Powdered Sugar-1/2 cup
Chopped Pecan-2tbsp
Honey bunch cereal crushed-1 cup
Cocoa Puffs cereal crushed-1/2 cup
Ingredients for coating
Chocolate chips-1 cup
Crisco shortening-1 tbsp


Method
Mix all filling ingredients together.
The dough will be sticky to handle so better keep it in fridge for 20 minutes.
Now make small balls from the dough.
Melt shortening & chocolate chips in microwave for 30 seconds.
Dip each balls in it to coat it well,keep in fridge till sets.
Your crunchy peanut butter balls are ready........

Bread Cones


Ingredients
Maida-3 & 1/2 cups
Yeast-2 & 1/4tsp
Egg-1
Sugar-1/4 cup
Oil-3tbsp
Water-1/2 cup
Milk-1/2 cup
Salt-1 tsp
Sesame & Poppy seeds to sprinkle on top
Egg wash on top.
Egg-1
Milk-1tbsp
(beat both together)











These buns are made with left over dough!!!!!



Method
Heat milk & water till its hot(before boiling stage).Let it become warm add oil,sugar &salt.Mix it well.In another bowl mix egg,maida & yeast.Pour the milk mixture into this & knead it to a soft dough.Place it on a greased bowl,cover & leave it to ferment for 1 hour.Punch it well to release bubbles.Take small balls roll it like a long rope.Make paper cones & cover it with foil completely(like mehendhi cones).Grease these cones,roll the cone with the dough made like rope.Brush it with egg wash & sprinkle poppy seeds & sesame seeds on top.Bake it at 350 deg.C for 20 minutes or till top is brown.Serve it with any filling of your choice.
Note: As per the original recipe it says bread flour but I used maida.....

1.Iam basically a Hotel management & Catering technology student From Asan memorial catering college in Chennai.

2. I should thank my dad who found my interest in cooking & put me in a catering college.Iam not a very bright student at school but good at sports & extra curricular activities.

3.I must say i started to cook from the age of 7 yrs.My sister use to make roti's & Iam the person who makes the side dish every night.My favourite dish is any kind of Biriyani!!!!

4.My hubby & kids(13yrs & 61/2 yrs) also encourages me to participate in lots of competitions & TV programs.In fact should say my full swing started only after my marriage.I love to try new dishes with some changes from the original recipe.I like to cook it that way.

Baked Gulab Jamun



Ingredients For Jamun
Milk powder-3 cups
Heavy cream-300ml
Self raising flour-1 cup
salt a pinch
Sugar-1tsp
Cardamom powder-1/2tsp
Milk to make a smooth paste(Toothpaste consistency)
Ghee-1tsp to grease the tray
Nuts little (optional)
Sugar syrup
Sugar-2 cup
Water-1 & 1/2 cup
Cardamom powder-1/2tsp
Rose essence-a drop
Method
Mix the jamun ingredients together ,add very little milk to make a smooth paste (toothpaste consistency).Pour it on a greased tray & bake it at 300 deg.C for 15 minute or till top is slightly brown.Boil all the syrup ingredients together & give a boil for 5 minutes.Pour this on top of the hot baked jamun.Garnish it with nuts .

Note:If you want to replace maida for self raising flour add 1 & 1/2 tsp of baking powder & a pinch of salt for each cup of maida.

Shrimp Chilly Flakes & Garlic fry

Ingredients
Shrimp-1/4 pound
Chilly flakes-4tsp or more
Coriander powder-1/4tsp
Crushed garlic-8 to 10
Crushed ginger-1/4tsp(optional)
Curry leaves-little
Onion & Tomato-each 1tbsp
Garam masala-1/4tsp
Turmeric powder-1/4tsp
Lime juice-1tsp
Oil-2tbsp
Method
Heat oil in a pan add the onion,tomato,curry leaves & garlic.Fry it till light brown.Add shrimp & other ingredients.Fry it well till its brown in colour & cooked(in medium high flame).Garnish it with curry leaves & lime juice .

Focaccia Bread


Ingredients
Maida / All purpose flour-3 & 1/2 cup
Sugar-1tsp
Salt-1tsp
Yeast-1tbsp
Warm water-1 cup
Olive oil-3tbsp
Vegetable oil-2tbsp
Egg-1
Rosemary crushed-1tsp



Method
Combine flour,salt,sugar & yeast in a bowl.
Mix beaten egg & vegetable oil in warm water.Pour it in the flour mixture & knead it well.
Place on your kitchen counter top & knead it for at least 5 minutes.Apply little oil on top of the dough.Cover it & keep it in a greased tray for 30 minutes( in a warm place).
Once it is raised punch it & make it a bit flat.Poke holes on top & drizzle olive oil.
Sprinkle rosemary on top & bake it at 375 deg.C for 25 minutes or till its light brown in colour on top.
Cool & cut into squares  serve.

Lettuce & Mango Pappu

Ingredients
Romaine lettuce chopped -1/2 bunch
Dry mango pieces-4
Masoor dhal-1 cup
Chopped tomato-1/2
Chopped onion-1/4
Chopped garlic-4
Turmeric powder-1/2tsp
Green chillies-4
Salt to taste
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1tsp
Uraddhal-1/2tsp
Hing-1/2tsp
Method
Pressure cook all above ingredients together.Mash it well.Temper it & serve it with hot rice.
Tips
Use can also replace with use raw mango with dry mango.

Khatta Brinjal

Ingredients
Chopped round medium brinjals-3
Chopped onion-1
Chopped big tomato-2
Chopped garlic-2
Tamarind paste-1tbsp
Salt to taste
Chilly powder-1tsp
Turmeric powder-1/2tsp
Curry & Coriander leaves-little
Dry roast 2tsp of jeera & 1/2tsp methi & powder it.
Oil-1tbsp
Mustard-1tsp
Method
Heat oil in a pan temper it with mustard.Fry the onions & garlic till light brown.Add the brinjal,tomato,dry powders(except methi & jeera) & tamarind.Pour water & cook it till its mashed well.Add the methi & jeera powder,mix it.Garnish it with lots of coriander leaves.

Lettuce Kesari

Ingredients
Ghee-1/2 cup
Fine white rawa-1 cup
Sugar-2 cups
Boiling water-3 cups
Romaine lettuce -3 leaves
(Remove the white part at the bottom)
Fried nuts in ghee-2tsp
Cardamom powder-1tsp
Green food colour -a pinch(optional)
Method
Put the lettuce in boiling water for 2 minutes.Drain & immediately rinse it in cold water to retain its green colour.Cool & make a puree .Heat ghee in a pan fry the rawa till light brown colour,add the lettuce puree & fry a bit in low heat.Add the boiling water,stir it so no lumps are formed( like you make uppuma).Once the rawa is cooked add the sugar,nuts & cardamom.Cook it till ghee separates the pan.Serve it warm.

Yellow Peas Chat in Fillo Cups


Ingredients
Athen's fillo shells-1 packet
Chat masala,Black Salt -Little
Chopped Coriander leaves & Onion -little
Boiled & Cubed Potato-1
Method
Fill the fillo shells with potato then peas gravy & chutney.Garnish it with onion & coriander leaves.Sprinkle chat masala & black salt on top.Serve it immediately otherwise the shells will become soggy.
Tips
With this fillo shells you can create your own filling.

Moongh dhal & Lettuce Soup

Ingredients
Chopped Romaine Lettuce-1 leaf
Moongh dhal-2tbsp
Onion chopped-1tbsp
Chopped garlic-1
Chopped tomato-1tbsp
Turmeric powder-a pinch
Roasted jeera powder-1/4tsp
Salt & Pepper to taste
Water to dilute .
Method
Pressure cook lettuce, dhal,onion,tomato,turmeric & garlic.Cool & make a smooth paste in mixi.Dilute it with water & just give a boil.Mix salt,pepper & jeera.Serve it hot.

Amritsari Fish Fry

Ingredients
Any boneless fish-8 pieces
(I used with bones)
Salt to taste
Chilly powder-2tsp
Coriander powder-1/2tsp
Turmeric powder-1/2tsp
Ginger & Garlic paste-1tbsp
Besan-2tsp
Ajwain crushed-3/4 tsp
Curry leaves crushed-4(optional)
Oil to shallow fry
Method
Make a thick paste with all above ingredients.Evenly spread on both sides of the fish.Marinate it for 10 minutes.Shallow fry till both sides are cooked & till golden brown.Serve it with lemon wedges.

Broccoli & Parsley Soup

Ingredients
Finely chopped broccoli florets-5
Parsley chopped-2tbsp
Salt & Pepper to taste
Spring onions chopped -1tbsp
Chopped garlic-1
Maida-1tbsp
Milk-1 cup
Water or Stock-1 cup
Olive oil-1tbsp
Method
Heat oil in a pan saute broccoli ,parsley & spring onions.Add maida fry for 2 minutes.Add milk,water,salt & pepper.Simmer it for 5 minutes .Serve it hot garnished it with spring onions.

Fresh Vegetable Salad

Ingredients
Sliced Tomato,Onion,Pickled Jalapeno,Lettuce leaves,Carrot(any veg. of your choice)
(required quantity)
Salt & Pepper to taste
Olive oil-1tsp
Kraft's Thousand Island Dressing -required quantity
Method
Toss all above ingredients together & serve it cold.
Tips
Garnish it with any nuts for extra taste.

Digestive Cookie

I took this recipe from Madhuram's Egglesscooking...but made slight changes......Enjoy the cookie

Ingredients.
Whole Wheat flour-1 & 1/3 cup
(I used King Arthur)
Maida-1/4 cup
Baking Powder-1tsp
Salt -1/2tsp
Corn flakes crushed-2tbsp
( I Picked only the corn flakes from the honey bunches cereal box)
Butter-5tbsp
Brown sugar-1/2 cup
Sugar-1/2 cup
Milk-1/3 cup
Method
Mix wheat flour,maida,baking powder & salt in a bowl.Now add the crushed corn flakes mix it slightly.Add the cold butter & mix it till it forms crumbs.Now add both the sugars & milk & make a soft ball consistency.Cover & keep it in fridge for 40 minutes.Preheat oven at 375 deg.C.Roll out the dough,cut it into circles( not very thin).Prick it with a fork on top.Place it on a greased & dusted with flour baking tray & bake it for 12 minutes.Cool & store.

Shrimp Chukka Fry


Ingredients to Crush it in Mixi
Onion-1
Ginger & Garlic paste-1tbsp
Fennel seed-1tsp
Salt to taste
Chilly powder-1/4tsp
Coriander powder-1/2tsp

Garam masala-1/4tsp
Other ingredients
Shrimp-1/2 pound
Chopped tomato-1
Curry leaves-little
Oil-1tbsp
Method
Heat oil fry the crushed ingredients till raw smell goes away.Add the shrimp & tomato,fry it till its cooked & brown in colour.Fry it till dry.Garnish it with curry leaves.


Yellow Peas Gravy Recipe

This is a very simple & easy gravy.Can be served with roti ,bread ,chat items or rice.

Ingredients
Dry yellow peas-2 cups
(soaked overnight)
Salt to taste
Chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Garam masala-1/4tsp
Chopped onion-2tbsp
Tomato paste-1tsp
Ginger & Garlic paste-1tsp
Coriander leaves
Tempering
Oil-1tsp
Cinnamon-1/4'',Cloves-2,Cardamom-1,Star anise-1
Method
Heat oil in a cooker temper it.Fry the onion,tomato paste & ginger garlic paste fry till light brown.Now add all dry ingredients,peas & water.Cook it till done.Garnish it with chopped onion & coriander leaves.

Vepampoo Rasam(Neem flowers)

Ingredients
Tomato crushed-1
Tamarind paste-1/2 tsp
Salt to taste
Turmeric powder-1/4tsp
Hing-1/4tsp
Curry & Coriander leaves-little
Grind
Jeera-1/4tsp
Pepper-1/4tsp
Green chillies-1
Garlic-2
Curry leaves-3
Tempering
Dry vepampoo-1/2tbsp
Thur dhal-1tsp
Mustard-1/4tsp
Oil-1tsp
Method
In a bowl mix crushed tomato,salt ,turmeric,hing,ground paste & tamarind paste,add enough water & dilute it.Heat oil in a pan temper it.Pour the tomato mixture,curry & coriander leaves.Switch off the gas once it starts to form a froth on top (do not boil it) .Serve it with hot rice.

Homemade Wheat Bread


Ingredients
Warm water-1 cup
Milk-1tbsp
Oil-2tbsp
Honey-2tbsp
Brown sugar-2tbsp
Salt-1tsp
Maida-1 & 1/2 cup
Whole wheat flour-1 & 1/2 cup
Yeast-2tsp


Method

Mix first 6 ingredients together in a bowl.Add maida,wheat flour & yeast knead it well for at least 10 minutes till soft & elastic.Keep it on a greased bowl ,cover & rest it for 40 minutes till it doubles.Punch the dough for few minutes & then shape it like a loaf.Keep it in a greased loaf pan.Cover & let rise in a warm place until almost doubled in size, about 30 minutes.Bake it for 30 to 35 minutes at 350 deg.C.Remove from pan cool it & cut into slices.

(Heat 2tsp of oil & fry above ingredients till brown ,cool & make a paste)
Other ingredients
Mutton-1 pound
Oil-2tsp
Curry leaves-little
Mustard-1tsp
Red chillies-2
Method
Heat a cooker & put the mutton,ground paste & water.Cook it till done.Temper it with mustard,curry & red chillies(optional).
Note
This dish can be made dry or like gravy.....

Potato 65


Ingredients
Potato -3
(cut into strips)
Salt to taste
Chilly powder-1tsp
Ginger & Garlic paste-1tsp
Rice flour-1tsp
Corn flour-1tsp
Maida-3tsp
Yellow food colour (optional)-a pinch
Soy sauce-1tsp
Oil to deep fry
Method
Mix all above ingredients together & leave it for 10 minutes.Sprinkle very little water(the mixture would have already left some water ).Drop one by one in oil & deep fry.Cook it till its crispy & golden brown.Serve it hot with ketchup.
Tips
Do not add too much of water otherwise it will become like bajji & will not be crisp.The potato should be just coated with the mixture.

Method
Heat oil & ghee in a pan temper it with above ingredients.
Add the ginger & garlic paste,green chillies & peas,.fry a bit,now add parsley,mint & rice saute for a minute.
Add salt ,water& cook the rice till done.
Your herb rice is ready with a wonderful flavour & colour.
Tips
Do not fry the spices too much as it may loose their colour ,flavour & its medicinal value.

(soak it in water for 15 minutes)

Curry leaves-little

Method
Heat oil in a pan temper it.Add the vegetable,curry leaves,turmeric powder & salt.Saute for few minutes.Now add the dhal with the water,cover & cook it till done & dry.Garnish it with grated coconut.

Shrimp Coconut Fry

Ingredients
Shrimp-2 cups
Oil-2tsp
Mustard-1/2tsp
Jeera-1tsp
Curry & Coriander leaves
Grind to a smooth paste
Coconut-2tbsp
Onion-1/4
Garlic-6
Fennel seeds-1tsp
Pepper-1tsp
Salt to taste
Chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Garam masala-1/2tsp
Method
Heat oil in a pan temper it with mustard & jeera.Now add the shrimp & ground paste fry a bit.Sprinkle very little water cover & cook it till oil separates the masala.Garnish it with curry & coriander leaves


Cucumber Avakai

I brought some cucumbers from the store....after cutting & tasting found it was a bit bitter.Not worth doing a raita.So came out of this idea....a pickle with it .It was good & no bitter taste at all.The lime juice removed the bitterness.

Ingredients
Peeled & cubed cucumber-1 big
(It was 3 hand full)
Salt-3tsp
Chilly powder-2tsp
Lime juice-6tsp
Turmeric powder-1/2tsp
Sliced garlic-4
Oil -to cover the whole mixture(1/4 cup)
Dry grind to a smooth powder
Mustard-2 & 1/2tsp
Methi-1/2tsp
Method
In a bowl mix all above ingredients together.Pour enough oil to cover the whole mixture(oil should float on top).Store it in fridge.It will taste better to eat the next day.
Tips
Use bright red chilly powder,mine didn't give good colour.I have no idea about the shelf life.....so try to make small quantity & finish it as fast as you can.

Yam Poriyal

Ingredients
Frozen Yam-1packet

Method
Heat oil in a pan temper it.Add onion,garlic,curry leaves & yam ,fry a bit.Add the dry ingredients,tamarind paste & sprinkle water .Cover & cook it till done .Add coconut & garnish it with curry leaves.

Fresh Fruits & Bread Halwa

Ingredients
Fresh pineapples chopped-1 cup
Green apples chopped -4
Plums chopped-5
Black grapes-1 cup
Mango chopped-1
Sugar-1/2 cup or less
Cardamom powder-1tsp
1tbsp of Corn flour diluted in 2tbsp of Milk powder
Melon seeds(Char Magaz) for garnishing
Ghee-2tbsp
Cubed & fried wheat bread in 1tsp of ghee -4 slices
Red food colour -a pinch (optional)
Method
Heat 1tbsp of ghee in a pan add the cut fruits & milk powder & fry a bit.Cover & cook it till all the fruits are cooked & the water is evaporated.Now add the sugar,cardamom powder & remaining ghee.Fry till ghee separates the pan .Mix the bread at the last & garnish it with melon seeds.
Tips
This halwa can also be made with any left over fruits.If fruits are too sweet reduce the sugar.This can be served even with Vanilla ice cream.

Mutton & Drumstick Gravy

Ingredients For Grinding
Ginger & Garlic paste-1tbsp
Chilly powder-1/2tsp
Coriander powder-1tsp
Salt to taste
Turmeric powder-1/2tsp
Pepper-2tsp
Coconut-2tbsp
Fennel seeds-1tsp
Other Ingredients
Mutton-1 pound
Cut drumstick-1 cup
Chopped onion-1
Chopped tomato-1
Curry leaves-little
Cinnamon-1/4'',Cloves-2,Bay leaf-1,Cardamom-2
Oil-2tsp
Coriander leaves-little
Method
Heat oil in a pressure cooker temper it with the spices.Add onion & curry leaves fry till brown colour.Now add the tomato & ground paste.Fry till oil separates.Add the mutton & water,cook it till soft.Add the drumstick & cook it open till done.Garnish it with coriander leaves.
Tips
You can replace drumstick with any other Veg. like radish,potato,ridge gourd or bottle gourd.

Radish & Mint Chutney

Ingredients
Chopped radish-1/2 cup
Mint leaves-1/4cup
Salt to taste
Green chillies-4
Ginger & Garlic-1/4tsp
Tamarind paste-1tsp
Urad dhal-1tsp
Channa dhal-1tsp
Coconut-1tbsp
Tempering
Oil-2tsp
Mustard,Jeera & Curry leaves-little
Method
Heat 1tsp of oil fry all above ingredients one by one till radish is cooked.Cool & grind it to a smooth paste.Then temper it.Serve it with any tiffin

Murungai Keerai Adai / Drumstick Leaf Adai / Moringa Leaf Pancakes - Moringa Recipe


Ingredients to grind
Wild & Brown rice together-1/2 cup
Long grain rice-1/2 cup
Thur dal / Pigeon Pea-1/4 cup
Channa dhal-1/2 cup
Yellow moongh dal-1/4 cup
Red chillies-8
Ginger-1/4''
Salt to taste
(Soak above ingredients together for 2 hrs & grind it coarsely with salt.Batter should not be too thick)
Other ingredients
Murungai Keerai / Moringa leaves chopped-1 cup
Chopped onion-1/4
Grated coconut-1tbsp
Hing-1/4tsp
Jeera/Cumin-1/4tsp
Oil-to fry
Method
Mix above ingredients together and grind it to a coarse batter.
Heat a tawa pour 1/2tsp of oil ,pour a ladle of batter spread it like a dosa/pancake but a bit thick.
Pour oil around the adai & cook it on both sides till crisp.
Serve it with butter & any chutney.

Cornmeal Payasam

Ingredients
Cornmeal powdered-1 & 1/2tbsp
Milk-5 cups
Brown sugar-1/2 cup
Cardamom powder-1tsp
Saffron-little(optional)
Fried cashewnut , Charoli & raisins-1tbsp
Ghee-2tsp
Method
Heat 2tsp of ghee in a pan add the cornmeal & fry till raw smell goes & gives a light brown colour.Pour milk & simmer it for 15 minutes or till cooked.Add the brown sugar,saffron,cardamom powder & nuts mix it well.Give a boil switch off fire & serve it hot.
Tips
For extra taste & richness you can add coconut milk & condensed milk.

Vegetable Quesadilla

Ingredients
Basil & Tomato tortillas-2
Cheese slice or Shredded cheese-little
Butter-2tsp
Filling
Shredded mixed vegetables of your choice-1 cup
Tomato paste-1tsp
Chilly powder-1/4tsp
Salt to taste
Garam masala-1/4tsp
Chopped onion-1tbsp
Ginger & Garlic paste-1/2tsp
Oil-1tsp
Method
Heat oil in a pan add onion,ginger & garlic fry till light brown.Add the vegetables & dry ingredients fry it till cooked.Spread butter on top of the tortilla then the filling & sprinkle the cheese on top.Cover it with another tortilla,apply 1 tsp of butter on top & bake it for 5 minutes in the oven at 350deg.C.Serve it hot.

Karuvepillai Podi(Curry leaf podi)

Ingredients
Fresh curry leaves-3 cups
Oil-2tsp
Channa dhal-2tbsp
Urad dhal-2tbsp
Salt to taste
Sesame seeds-1tbsp
Coriander seeds-1tbsp
Hing-1tsp
Tamarind -small lime size
Red chillies-15
Garlic-4
Brown sugar-1tsp
Method
Dry roast the curry leaves with 1tsp of oil till crisp.Keep aside.Heat 1tsp oil fry all other ingredients till light brown colour.Cool it dry grind to a smooth powder in mixi.

Wild & Brown Rice Oothappam

Ingredients
Wild & Brown rice together-1 cup
Long grain rice-1 cup
Urad dhal-1 hand full
Thur dhal-1 hand full
Methi-1/2tsp
Salt to taste
Method
Soak above ingredients together for 2 hours.Grind it to a smooth batter.Add salt & ferment it overnight.Next day mix the batter & make oothappam in a tawa.Close with a lid & cook it on medium flame(do not turn).Serve it with any chutney or Podi.
