Simple Bhindi Fry

Ingredients
Bhindi/Okra chopped-2 cups
Salt to taste
Chilly powder-1/2tsp
Turmeric powder-1/4tsp
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1/2tsp
Curry leaves-little
Method
Heat oil in a pan temper it.Fry the bhindi till 3/4 done.Add all dry ingredients & fry it till cooked.Serve it as a side dish.

Vallarai Keerai(Penny wort) Kuzhambu


Ingredients
Chopped onion-1/4
Chopped garlic-4
Chopped tomato-1/2
Fry it in 1tsp of oil & grind to a smooth paste.
Vallarai Keerai(Penny wort)-a handful
Pepper-1tsp
Jeera-1tsp
Methi seeds-1/4tsp
Coriander seeds-1tsp
Red chillies-2
Urad dhal-1tsp
Channa dhal-1tsp
Coconut-3tsp
Salt to taste
Turmeric powder-1/4tsp
Tamarind paste-1/4tsp
Tempering
Oil-6tsp
Mustard-1tsp
Method
Heat oil in a pan temper it.Fry onion,garlic & tomato till light brown colour.Add the ground paste & fry for 2 minutes.Pour water & cook the gravy till its thick.Serve it with hot rice or for any tiffin.

Chicken Dry Fry

Ingredients to marinate chicken for 30 minutes or more if you have time.
Cubed chicken-2 pounds
Red chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/2tsp
Ginger & Garlic paste-2tsp
Salt to taste
Pepper powder-2tsp (Sprinkle at the last when the dish is done.Do not marinate)
Tempering
Sliced onion-1
Curry leaves-little
Slit green chillies-3
Jeera-1/2tsp
Oil-1tbsp
Method
Heat oil in a pan temper it.Add the chicken & fry it in medium high flame.Sprinkle very little water & cook it till done & dry.Before removing from fire sprinkle pepper powder.Serve it garnished with curry leaves.

Cucumber Kurma

Ingredients
Cucumber-1 big
(Peeled & cubed)
Onion chopped-1/2
Tomato diced-1/2
Curry leaves-5
Tempering
Oil-3tsp
Cloves-1,Cardamom-1,Cinnamon-1/4''
Grind to a smooth paste
Coconut-3tsp
Khuskhus-1tsp
Curry powder-1/4tsp
Chilly powder-1/2tsp
Salt to taste
Turmeric powder-1/4tsp
Ginger & Garlic paste-1/4tsp
Method
Heat oil in a pan temper it.Fry onion,curry leaves & tomato till light brown.Pour the ground masala & fry it till oil leaves the sides of the pan.Add the cucumber & water cook it till gravy is thick .Serve it with rice or roti.

Simple Dhal

Ingredients
Masoor dhal- 1 cup
Salt to taste
Turmeric powder-1/2tsp
Water required amount
Tempering
Ghee-1tsp
Jeera-1tsp,Mustard-1/2tsp,Hing-1/4tsp,Crushed garlic-3,Curry leaves-little.
Method
Pressure cook dhal with salt & turmeric powder.
Heat oil in a pan & temper it.
Pour it into the dal mix & serve it with rice or roti.

Pudalangai(Snake gourd) & Egg Puttu

Ingredients
Chopped frozen Pudalangai-1 pck
Egg-3
(Beat it with little turmeric powder & pepper)
Chopped onion-1/2
Grated ginger-1/4tsp
Chopped green chillies-1
Curry leaves-little
Garam masala-1/4tsp(optional)
Tempering
Oil-2tsp
Mustard-1tsp,Jeera-1/2tsp.
Method
Heat oil in a pan temper it.Fry the onion,ginger ,chillies & curry leaves till light brown.Add the pudalangai & salt,cover & cook it till done.Add the beaten egg & garam masala mix it well .Cook it till done(like a scrambled egg).Serve it as a side dish.

Ingredients
Chopped Bottle Gourd-1 big
Chopped onion-1/4
Curry leaves-little
Turmeric powder-1/4tsp
Salt to taste
Tempering
Oil-2tsp

Urad dhal-1/2tsp
Dry fry & grind to a dry powder
Peanuts-3tsp
Coconut-3tsp

Red chillies-2
Method
Heat oil in a pan temper it.Fry the above ingredients for 2 minutes,cover & cook it till done & dry(do not add water).Switch off the fire & sprinkle the powder & mix it well.Serve it with hot rice or roti.


Shrimp & Methi leaves Pulusu

Ingredients
Frozen Shrimp-40 nos.
Frozen Methi- 2 cubes
Chopped Onion-1/2
Chopped Garlic-5
Curry leaves-little
Chopped tomato-1
Chilly powder-1 & 1/2tsp
Coriander powder-1tsp
Salt to taste
Turmeric powder-1/4tsp
Tamarind paste-1tsp
Tempering
Oil-4tsp
Methi-1/4tsp,Mustard -1tsp & Jeera-1/2tsp
Method
Heat oil in a pan temper it.Fry onion,garlic,tomato & curry leaves till light brown colour.Add all the dry ingredients fry till raw smell goes.Add shrimp,methi leaves & tamarind paste diluted in water.Cook it till its done & thick .Serve it with hot rice.

Spicy Shrimp Vadai

This is a very easy & tasty vadai with very few ingredients.....




Ingredients
Frozen shrimp-35nos.
(thaw & make a coarse paste in mixi without water)
Chopped onion & Mint-1tbsp
Ginger paste-1/4tsp
Red chilly paste-2tsp
Salt to taste
Curry powder-1/4tsp
Oil-to deep fry
Corn flour-2tsp
Besan just for binding
Bread crumbs for dusting(Optional)
Method
Mix all above ingredients together(do not add any water).Take a small ball flatten it dust it with bread crumbs & deep fry it in medium flame till golden brown.Serve it with ketchup.


Poornam Kolukattai & Plain Sweet Kolukattai

Ingredients
Raw rice-1/2 cup
Boiled rice-1/2 cup
Salt -a pinch
(Soak both rice for 2 hrs & grind it to a smooth paste with a pinch of salt).
Oil-2tsp
Ingredients for Poornam(Filling).
Dry roasted black sesame seeds-8tsp
Jaggery-6tsp
(Put it in a mixi & make a dry powder with above ingredients)
Method
Heat 2tsp of oil in a pan add the ground rice paste & keep mixing till all the water evaporates & forms a soft ball.Cover & let it cool.Knead the dough,apply oil in your hands.Take a small ball flatten it.Place 1/2 tsp of filling,close & seal it by pressing the ends.Steam it like Idli till done.
Plain sweet Kolukattai.
Ingredients
Raw rice-1/2 cup
Boiled rice-1/2 cup
Salt a pinch
Sugar-1/2 cup
Grated coconut-1/4 cup
Cardamom powder-1/4tsp
Oil-2tsp
Method
Soak both the rice for 2 hrs.Grind it to a smooth paste with coconut,salt,sugar & cardamom powder.Heat oil in a pan pour the ground rice paste & keep mixing in medium flame till it forms a soft ball.Cover & let it cool.Knead the dough,apply oil in your hands.Make small ball or any shape you desire & steam it till done.

Simple & Easy Aloo Gobi /Potato Cauliflower Fry

Step by step method/picture to make  Aloo Gobi Fry


Ingredients
Peeled & cubed Potato-3
Sliced cauliflower/gobi-2 cups
Salt to taste
Turmeric powder-1/2tsp
Chilly powder-1/2 tsp
Amchur/Dry mango powder-1/4tsp
or Lime juice-1/2tsp
Kastoori methi-2tsp
Tempering
Oil-2tsp
Jeera/Cumin-1tsp
Ginger grated-1/2''
Method
Heat oil in a pan temper it with jeera & ginger.Add the potato & fry a bit in low flame.Pour some water,cover & cook till its 3/4th done.Add cauliflower & fry it till its fully cooked.Switch off the stove,sprinkle kastoori methi & amchur powder.Mix it well & serve it with roti or pulao.


Badam Halwa Recipe / Almond Halwa Recipe - Easy Diwali Sweet Recipe

Badam Halwa
Ingredients
Badam/Almond-1 cup
(Soak in hot water then peel the skin.Grind it with milk to a smooth paste)
Sugar-1 cup
(I used only 3/4 cup for less sweet)
Saffron soaked in 1 tbsp of warm milk
Cardamom powder-1/4tsp
Ghee-3 tbsp
Method
Pour the ground badam & sugar together in a non stick pan or heavy bottomed vessel.
Cook this mixture in medium low heat till the mixture gets slightly thick (like a shiny jam consistency).Keep stirring to avoid burning at the bottom.
Pour the ghee,cardamom powder & saffron,mix till the halwa leaves the sides of the pan.
Switch off the stove and serve them warm.
Note:
If you get super fine almond flour you can make this halwa with it.

Ingredients
Basmati rice-1 cup
Coconut milk-1/2 cup
Water-1& 1/4 cup
Salt to taste
Chopped Vallarai Keerai-1/2 cup
Cubed Squash-2
Sliced garlic-5
Mint leaves-1tbsp
Sliced onion-1/2
Chopped tomato -1 small
Slit green chillies-3
Cashew nut-6
Tempering
Ghee-1tsp
Oil-3tsp
Fennel seeds-1tsp,Cloves-3,Bay leaf-2,Cardamom-2,Cinnamon-1/2'' stick
Method
Heat a oil & ghee pressure cooker add the spices.Fry onion ,garlic & green chillies till transparent.Now add other ingredients & fry for 2 minutes.Add salt,coconut milk & water cook it till done.Serve it with any gravy or raita.

Ingredients
Mushroom sliced-1 packet
Salt to taste
Crushed pepper-2tsp
Curry powder-1/2tsp
Coriander powder-1/4tsp
Ginger & Garlic paste-1/4tsp
Tempering
Curry leaves-little
Oil-2tsp
Jeera-1/2tsp
Method
Heat oil temper it.Add all above ingredients one by one & fry it till cooked & dry(do not add water).Serve it as a side dish.

Nendram Pazhlam Sandwich Cutlet


Ingredients for outer filling
Mashed potato-1 cup
Salt & Pepper to taste
(Mix all the ingredients well)
Ingredients for sandwich
Mint & Coriander leaves-a hand full each
Green chillies-1
Peanuts-1tsp
Salt to taste
Lime juice-1/2tsp
Ginger-1/4''
(Grind all above ingredients to a thick paste.Do not add water).
Other ingredients
Nendram Pazhlam sliced-1
Oil-to shallow or deep fry
Maida -3tsp
(diluted in water for coating)
Vermicelli -required quantity for rolling it.



Method
Take a slice of pazhlam apply little mint chutney on it close it with another slice.Prepare all the slices the same way.Take each sandwich cover it fully with the mashed potato mixture.Dip it in maida mixture & roll it well with vermicelli(see the picture).Keep it for 10 minutes in fridge(if you have time).Shallow or deep fry these cutlets in medium flame till its brown on all sides.Serve it with any dip.



You can think it will take long time to make this but No....if all the ingredients are ready, in 10 minutes your cutlets are ready.It was sweet & tangy.

Oats Adai


Ingredients
Quick Oats-3/4 cup
Aval(Flattened Brown Rice)-1/4 cup
Yellow moongh dhal-1/4 cup
(with skin)
Masoor dhal-1/4 cup
Channa dhal-1/2 cup
Red chillies-2
Ginger-1/4''
Salt to taste
Hing-1/4tsp
Chopped onion,Curry leaves-little(Optional)
Oil-required amount.
Method
Soak the dhals ,ginger & red chillies for 1 hr.Soak aval & oats separately for 30 minutes.Grind everything to a coarse consistency.Add remaining ingredients & mix it well.Pour a ladle of batter on a tawa( a bit thick) pour oil & cook it both sides till crisp & done.Serve it hot with any chutney.

Cauliflower Fry




Ingredients
Cauliflower chopped-1cup
Onion chopped-1/2
Tomato chopped-1/2
Curry leaves-Little
Garlic chopped-2
Salt-to taste
Chilly powder-1/4tsp
Turmeric powder
Mustard-1/4tsp
Jeera-1/4tsp
Oil-1tsp
Method
Heat oil temper with mustard & jeera .
Add onion,tomato garlic fry a bit.Now add cauliflower & all dry masala.
Sprinkle very little water,close & cook till done.
Garnish with curry leaves.

Lotus Stem Chutney


Ingredients
Finely chopped lotus stem-1 cup
Coriander seeds-1/4tsp
Channa dhal-1tsp
Peanuts-1tsp
Jeera-1/2tsp
Red chillies-1
Sesame seeds-1/4tsp
Garlic-1
Tempering
Oil-1tsp
Curry leaves-little
Mustard-1/2tsp
Jeera-1/4tsp
Method
Heat oil in a pan fry the lotus stem till its slightly cooked,keep it aside(I usually just saute).Fry other ingredients till light brown colour.Cool everything & grind it together.Temper it.This goes very well with rice or tiffins.

Method
Heat oil temper it.Add onion & fry till light brown.Add the ground masala & fry it till raw smell disappears.Add potato,tomato & curd mix it well .Pour water & cook the gravy till thick.Serve it with rice or as a side dish.

Vazhai Poo (Banana flower) Paratha


Ingredients
Finely chopped vazhai poo-1/2 cup
Green chillies chopped-1
Onion chopped-1tbsp
Salt to taste
Turmeric powder-little
Coriander powder-1/4tsp
Kastoori methi-1tsp
Whole wheat flour-1 cup
Maida-1/4 cup (Optional)
Oil to make parathas
Method
Mix all above ingredients together.Add water & make a soft dough.Take small ball roll out like parathas & cook it on a tawa .Pour oil & cook it till both sides are done.Serve it hot with my Potato Chops or raita.

Pistachio Pudding

Ingredients
Milk-3 cups
Agar agar-1/2 stick
(or China grass)
(Melt it in 1 cup of boiling water)
Sugar-2tbsp
(add more if you like sweet)
Crushed pistachio -1 tbsp
Green food colour-a pinch
Pistachio essence few drops or Cardamom powder-1/2tsp
Method
Boil milk with sugar,pista,cardamom powder & food colour for 5 minutes.Add the melted agar agar .Pout it immediately into a serving bowl.Set it in fridge when warm.Serve it cold with nuts & cherry.

Cornmeal Dosa


Ingredients
Finely powdered Cornmeal-1 cup
Rice flour-1/2 cup
Besan-1 tbsp
Curd-3tsp
Chilly powder-1/2tsp
Salt to taste
Cumin seeds-1tsp
Oil to make dosas
Method.
Mix all above ingredients together pour water & mix it to a dosa batter consistency.Rest it for at least 3hrs(Cornmeal will take time to soak).Heat a tawa pour a ladle of batter in a circle shape.Pour oil & cook it both sides till light brown.Serve it hot.

Note:This dosa was tasting fine even after it became cold.

Boiled & grated corn-1

Ginger grated-1/2tsp
Coriander leaves-for garnish

Oil-1/2tsp
Mustard-1/2tsp
Channa & Urad dhal-1/2 tsp each

Method
Heat oil temper it.Fry onion,tomato,curry leaves,ginger,corn & green chillies till light brown.Add the bread toss it.Sprinkle lime juice & garnish it with coriander leaves.

Ginger & Garlic paste-1tsp

Method
Heat oil temper it.Fry onion & ginger garlic till light brown.Add the mushroom,methi & all dry powders.Sprinkle very little water & fry it till dry.Sprinkle 1/4 tsp of pepper before removing from fire.Serve it with roti or chapathi.....

Vazhai Poo(Banana flower) & Green Moongh Dhal Pulao

Ingredients
Basmati rice-1 & 1/2 cup
Green moongh dhal-1/2 cup
(Soak it overnight)
Vazhai poo chopped (Banana flower)-1 cup
Chopped onion-1/2
Chopped Tomato-1/2
Mint leaves-a hand full
Oil-2tsp
Ghee-1tsp
Grind to a smooth paste.
Cloves-4
Cinnamon-1/2''
Cardamom-1
Green chillies-1
Chilly powder-1/2tsp
Turmeric powder-1/4tsp
Salt to taste
Coriander leaves-a hand full
Fennel seeds-1/2 tsp
Ginger & Garlic paste-1tsp
Method
Heat oil & ghee in a pressure cooker fry the onion,tomato & mint till light brown.Now add the ground paste & fry till oil separates.Add the vazhai poo,moongh dhal & rice,fry for 2 minutes.Pour water & cook it till done.Serve it with any pachadi.

Ingredients.
Shredded Cucumber-1
(squeeze out the water-optional)
Curd-1 cup
Salt to taste
Grind to a smooth paste
Coconut-1tsp
Green chillies-1
Vallarai keerai -15 leaves
(dry fry for 2 minute till leaves slightly shrinks)
Tempering (Optional)
Oil-1tsp
Mustard-1/2tsp
Jeera-1/4tsp
Curry leaves-4
Method
Mix all above ingredients together & temper it.I like to serve it cold.

Method
Heat oil in a pan temper it.Fry the onion,garlic & keerai till its light brown colour.Add salt & dhal,cover & cook it till done.Garnish it with grated coconut.

Multi Colour Idiappams

Home made Idiappams- required quantity.
(mix orange food colour to the rice flour dough before steaming)
Chopped tomato,onion,Curry leaves,green chillies & ginger-required quantity
Tempering
Oil,mustard,jeera,Fennel seeds
Method:Heat oil temper it.Fry tomato,onion,Curry leaves,green chillies & ginger till light brown.Mix the idiappam with the above masala.



Ingredients for Egg Idiappam(White).
Home made Idiappams- required quantity.
Egg,salt & pepper,onion,green chillies & oil-required quantity.
Method:
Heat oil fry onion,green chillies till light brown.Add the egg & seasoning mix till its scrambled.Add the Idiappam & mix it well.

Ingredients for Parsley Idiappam(Green)Home made Idiappams- required quantity.(mix green food colour to the rice flour dough before steaming).
Chopped Parsley,sliced onion &garlic,salt to taste,green chillies chopped,oil & biriyani or garam masala-required quantity.
Method:
Heat oil fry the above ingredients till slightly cooked then mix the idiappam with it.

Kondai Kadalai Gravy



Ingredients
Kondai Kadalai-1 cup
(Soaked overnight & cook it with salt & turmeric powder)
Tempering
Oil-1tsp
Mustard-1tsp
Curry leaves little
Fry in 1tsp of oil till light brown & grind it to a smooth paste.
Onion-1/2
Tomato-1/2
Cinnamon-1/2''
Cloves-2

Mixed Flour & Vallarai Dosa

Ingredients
Powdered Oats-1 cup
Rice flour-1 cup
Ragi flour -1/2 cup
Besan-1/4 cup
Wheat flour-1/2 cup
Salt to taste
Jeera-1tsp
Chilly powder-1tsp
Chopped Vallarai Keerai-1/2 cup
Method
Mix all above ingredients together.Pour water & dilute to a dosa batter consistency.Heat a tawa pour a ladle of batter & make dosa. Pour oil & cook on both sides till done.Serve it with any chutney

Squash & Carrot Stir fry

This is a quick side dish......Can be eaten with rice or roll it inside a chapathi for kids lunch box.


Ingredients
Squash sliced-1cup
Carrot sliced-1 cup
Turmeric,hing & Chilly powder-little
Salt to taste
Mustard & Jeera-each -1/4tsp
Oil-1/2tsp
Method
Heat oil temper it.Add the remaining ingredients fry a bit.Sprinkle very little water & cook it till done.

Cabbage Thogayal

Ingredients
Cabbage chopped-1 cup
Chopped spring onion-1/4 cup
Urad dhal-1/2tbsp
Channa dhal-1/2tbsp
Mustard-1/4tsp
Methi-1/4tsp
Coriander seeds-1/2tsp
Hing-1/2tsp
Salt to taste
Green chillies-2
Ginger-1/4''
Tempering (Optional)
Oil-1tsp
Curry leaves
Mustard-1/4tsp
Jeera-1/4tsp
Method
Heat 1tsp of oil fry urad,channa dhal,methi,mustard & coriander seeds till light brown.Keep it aside.In same pan fry other ingredients till slightly cooked.Cool everything & grind it to a smooth paste.Temper it.

Chegodilu (Rice Flour Rings)

Ingredients
Rice flour-2 cups
Boiling water-2 cups
Sesame seeds-1tsp
Ajwain-1/4tsp
Hing-1/2tsp
Butter-1tbsp
Salt & Chilly powder to taste
Soaked yellow moongh dhal-1tbsp
Oil to deep fry
Method
In a bowl mix rice flour,salt,chilly powder,moongh dhal,ajwain,sesame seed & hing.Add boiling water and mix it well .Cover & keep it for 5 minutes.Knead it well so that there are no lumps.Grease your hands & take small ball roll it like a rope ,then join both the ends like a ring(see the picture).Make all the rings & cover it with a wet cloth so that it doesn't dry.Heat oil & deep fry them in batches in medium high flame.Cook it both sides till its brown in colour.Cool & store it in a air tight container.

Note:Deep fry your chegodilu immediately otherwise it will start to drink oil.

Rava/Semolina/Sooji Ladoo



Ingredients
Rava(Semolina)-4 cups
Powdered Sugar-4 cups
Desiccated coconut-1/4 cup
Cardamom powder-3tsp
Raisins-2tbsp
Fried cashew nuts-3tbsp
Ghee-1 cup
Milk for binding
Method
Heat 1tbsp of ghee & roast the rava till raw smell goes off switch off the gas.Add the coconut & mix it with rava.Cool & grind it to a powder.Add the remaining ingredients & sprinkle milk little by little & make ladoos.
Note:As we are adding milk finish it fast or store it in fridge for shelf life.My mom uses only ghee for binding.As every one is health conscious I have used milk.

Broccoli & Potato Poriyal


Ingredients
Chopped broccoli-1 cup
Chopped potato-1 cup
Chopped onion-1/2
Chopped tomato-1
Ginger & Garlic paste-1tsp
Red chilly powder-1/2tsp
Turmeric powder-1/4tsp
Salt to taste
Tempering
Oil-1tsp
Mustard-1tsp
Jeera-1/2tsp
Curry leaves-little
Method
Heat oil temper it.Add onion,ginger & garlic paste fry till light brown.Add the vegetables & dry masala powders.Sprinkle water cover & cook it till done.Serve it with rice or chapathi.

Parsley Parupu Rasam


Grind to a coarse paste
Chopped parsley-2tbsp
Garlic-4
Pepper-1tsp
Jeera-1/2tsp
Turmeric powder-little
Hing-little
Salt to taste
Green chillies-1
Curry leaves-4
Coriander seeds-1/4tsp
Other ingredients
Masoor dhal-1/4cup
Tomato big-1
Coriander leaves -little
Oil-1tsp
Mustard-1/4tsp
Method
Heat oil in a pressure cooker temper it with mustard.Add the ground paste & fry for 1 minute.Add the tomato & dhal.Pour water & cook it till done.Mash & dilute it. Garnish it with coriander leaves.
Note:You can also drink it like a soup......
