Thakkali Sadam Made With Cauliflower Rice / Tomato Rice With Cauliflower Rice / Thakkali Sadam / Tomato Rice

Thakkali Sadam with Cauliflower Rice
Ingredients for tempering
Oil - 3 tsp
Ghee - 2 tsp
Mustard,Channa & Urad dal - each 1 tsp
Fennel seeds /Somph - 1 tsp
Cinnamon - 1 small piece
Other ingredients 
Frozen cauliflower rice - 1 pack (12 oz /340 g)
Red chilly powder - 1/4 tsp
Garam masala - 1/2 tsp
Salt to taste
Turmeric powder - 1/2 tsp
Slit or chopped green chillies - 3
Grated ginger and Garlic paste - 1 tsp together
Curry leaves few
Thinly sliced onion - a handful
Diced small tomato - 3
( I used cocktail tomato with vine)
Lemon juice - 1 tsp

Method
Heat oil & ghee in a pan and temper it with above ingredients.
Now add the onion,green chillies & curry leaves,fry till its light brown.
Add the tomato,ginger and garlic paste & fry till tomatoes are mashed and raw smell has disappeared, Now add the other spicepowders & fry for a minute.
Add the cauliflower rice,salt and garam masala,saute in low flame till rice is cooked.
Switch off the stove and squeeze the lemon,mix and serve hot with raita.

Cauliflower Rice Paneer Biriyani / Paneer Cauliflower Rice / Cauliflower Rice Biriyani / Biriyani With Cauliflower Rice

Cauliflower Rice Paneer Biriyani
Ingredients
Frozen cauliflower rice - 2 cups
Paneer cubes - 1/2 cup heaped
( heat 1 tsp of oil and fry the paneer till light brown)
Frozen peas - 1/4 cup
Sliced onion - a handful
Slit green chillies - 3
Chopped  tomato - 1 small
Chopped mint and coriander leaves - 2 tsp together
Ginger and Garlic paste - 1/4 tsp
Salt to taste
Red chilly powder - 1/4 tsp
Turmeric powder - 1/8 tsp
My biriyani masala - 3/4 tsp
Curd - 1 tbsp
Ghee - 1 tsp
Oil - 3 tsp

Method
Heat oil and ghee in a pan add the onion and green chillies fry till onions are translucent.
Next add tomato,ginger/garlic paste and few mint leaves fry for a minute.
Add the spice powders and salt mix and add curd once raw smell has disappeared add the peas,fried paneer and cauliflower rice.
Saute well reduce flame cover it with a lid and cook till done,stir in between.
Lastly sprinkle some biriyani masala and mint leaves.
Serve hot with raita.

Cauliflower Arisi Paruppu Sadam
Ingredients
Frozen cauliflower rice-2 cups heaped
( If using fresh cauliflower then grate the cauliflower and steam till cooked and then use)
Thoor dhal - 1/4 cup
Water - 1 & 1/2 cups
Turmeric powder-1/2 tsp
Salt to taste
Diced tomato-1
Chopped onions - 1/2
Curry leaves-little
Chopped garlic-4
Tempering
Oil -6 tsp
Mustard-1tsp
Urad dal-1tsp
Channa dal-1tsp
Jeera - 1/4 tsp
Hing-1/4 tsp
Red chillies - 3


Method
Wash thur dal and add it into a pressure cooker,pour water add turmeric powder pressure cook.Do not cook till the dal is soft and mashed.
Heat oil in a pan temper it with above ingredients.Next add the onions,curry leaves,tomato & garlic fry till onions are light brown.
Now add the cauliflower rice,salt and turmeric powder and saute for 2 minutes,lastly add the cooked dal and in low flame cook till well combined.
Garnish with curry leaves and enjoy with any side dish you like.

Cauliflower Rice Pongal
Tempering ingredients
Oil - 1 tsp
Ghee - 2 tbsp
Crushed whole black pepper - 3/4 tsp
Jeera - 1/2 tsp
Cashew nuts - 8 chopped
Grated ginger - 1 tsp
Slit green chillies - 2
Curry leaves few
Hing - 1/8 tsp
Other ingredients
Frozen cauliflower rice - 2 cups
( If using freshly grated cauliflower then steam till cooked or microwave for 5 to 6 minutes)
Yellow moongh dal - 1/4 cup
Salt to taste
Turmeric powder - 1/4 tsp

Cauliflower Ven Pongal
Method
Add moongh dal to a pressure cooker and dry roast till nice aroma comes out,pour 1 & 1/2 cups of water and turmeric powder pressure cook till soft.
Heat ghee and oil in a pan and temper it with above mentioned ingredients.
Now add the cooked dal,cauliflower rice and salt mix well.
Pour 1 cup of hot water and in low flame cook till cauliflower rice is cooked and well combined.
Switch off the stove garnish with curry leaves and serve hot.

Ingredients
Frozen cauliflower rice - 2 cups ( heaped)
( If using fresh cauliflower then grate the cauliflower and steam till cooked and then use)
Freshly grated coconut - 1/2 cup
Salt to taste
Pepper powder - 3/4 tsp
Chopped green chilies - 2
Curry leaves few
Tempering
Oil - 1 tbsp
Mustard - 1/2 tsp
Urad dal - 1 tsp
Channa dal - 1 tsp
Hing - 1/4 tsp
Chopped cashew nuts - 8

Cauliflower Coconut Rice
Method
Heat oil in a pan temper with mustard,urad dal,channa dal,cashew nuts and hing saute till light brown.Add green chillies,few curry leaves and fry for a minute.
Now add the cauliflower and grated coconut,in low flame saute till raw smell has disappeared and cauliflower is dry and cooked.
Lastly add salt and pepper powder,toss them well.
Garnish with curry leaves & serve them warm.

Cauliflower Lemon Rice / Lemon Cauliflower Rice

Cauliflower Lemon Rice
Tempering
Oil - 2 tsp
Mustard - 1/2 tsp
Urad dal and Channa dal - together 1 tsp
Mor milagai or red chillies - 2
Peanuts - 2 tsp
Hing - 1/8 tsp
Curry leaves few
Other ingredients
Cooked cauliflower rice - 1 cup
( boil cauliflower florets in hot water for a minute,strain it out and let it cool.Pulse or grate the cooked cauliflower,they should resemble like coarse bread crumbs.Do not grind it to a paste,your cauliflower rice is ready to use)
Salt to taste
Turmeric powder - 1/8 tsp
Lemon juice - 1 tbsp
( add more if you want too sour)

How to make cauliflower rice

Method

Heat oil in a pan temper it with above ingredients.
Add the lemon juice and salt immediately switch off the stove.
Now add the cauliflower rice and gently mix till everything is well combined.
Ready to serve with papad and pickle.

Cauliflower Curd Rice / How To Make Cauliflower Curd Rice

Cauliflower Curd Rice
Ingredients
Cauliflower florets - 6 to 7 medium size
Salt to taste
Beaten curd as needed ( around 2 cups)
Chopped ginger - 1/8 tsp
Coriander leaves for garnish
Tempering
Oil - 2 tsp
Mustard - 1/2 tsp
Urad dal - 1/2 tsp
Hing a generous pinch
Chopped green chillies - 1
Chopped curry leaves few


Method
Boil water in a pan add the washed cauliflower florets and give a nice boil ( may be for a minute) and switch off the stove.
Strain out the water and let it cool.
Add these to a chopper or food processor and finely grate,do not over grind and make it a paste.
Heat oil in a pan and temper it with above ingredients.
Pour this tempering into the cauliflower rice,add salt,chopped ginger,chopped coriander leaves and the curd.Mix till everything is well combined.
Enjoy this Cauliflower Curd Rice with pickle!
