Tapioca Pakoda

Ingredients
Shredded tapioca-2 cups
Chopped onion-1/2
Chopped green chillies-1
Curry leaves-little
Jeera-1tsp
Besan-3tsp
Rice flour-3tsp
Salt to taste
Red chilly powder-1/4tsp
Turmeric powder-1/8tsp
Oil-to deep fry
Method
Mix all above ingredients together.Do not add water.Mix it well & drop it into small pieces in hot oil.Deep fry it till golden brown & crisp.Serve it hot with any chutney/dip.

Coca Cola & Marshmallow Cupcake

Today Sailajakitchen is turning ONE.I am very happy to celebrate it with a very different cupcake.Thanks to each & every one for making it a great success.The credit goes to all who encouraged me.
Part one ingredients:
Coca cola or other cola drink-1 cup
Butter-1/2 cup
Oil-1/2 cup
Cocoa powder-1/4 cup
(I used 1/2 cup because my kids love chocolate taste)
Large marshmallows-22
(I used 44 small ones multi coloured)
Part two ingredients:
Maida-2 cups
sugar-2 cups
Baking soda-1tsp
Vanilla essence-1tsp
Buttermilk-1 cup
Eggs-2
Method:
Pre. heat the oven to 325 deg.Grease the muffin tray.In a sauce pan mix part one ingredients except marshmallows.Bring it to a boil,remove from heat & add the marshmallows.Cover it & leave it to melt completely.Stir well.In a bowl mix part two ingredients together.Mix it well.Add the cooled part one ingredients & mix the batter well.Pour a ladle of the batter into the greased muffin tins & bake it for 10 minutes or till done.Cool completely & serve your soft cupcakes.I loved it with vanilla ice cream.

Bok Choy & Spaghetti Soup

Ingredients
Bok choy puree-1 cup
Stock-2 cups
(I used less sodium,fat free chicken broth)
Water-1 cup
Salt & pepper to taste
Garlic grated-2
Onion powder-1tsp
Roasted jeera powder-1/2 tsp
Cooked whole wheat thin spaghetti-a hand full
Cubed firm tofu-a hand full
Method
Boil the bokchoy puree,water,garlic,onion powder & stock till raw smell goes off.Add the cooked spaghetti & tofu,just give a boil.Switch off the gas.Sprinkle the seasoning & jeera powder on top & serve it hot.

Method
Blend everything in a blender & serve it cold.

Avocado & Potato Chapathi

Ingredients
Whole wheat flour-2 cups
Mashed avocado-1
Mashed potato-1
Salt to taste
Red chilly powder-1/2tsp
Turmeric powder-a pinch
Ajwain-1/4tsp
Crushed kastoori methi-2tsp
Oil-to make chapathi
Method
Mix all above ingredients together.Sprinkle water & make a soft dough.Roll it out into circles & cook it both sides on a tawa.Serve it hot with any side dish.

Oats & Tapioca Puttu

Ingredients
Rolled oats-1/2 cup
Shredded tapioca-2 cups
Salt to taste
Jeera-1tsp
Grated coconut-15tsp
(I used dessicated coconut)
Method
In a bowl mix tapioca,salt,jeera & oats.Leave it for 10 minutes.Now put 2tsp of coconut then some tapioca mixture in the puttu maker.Repeat this process till you reach the top.Close the lid & steam it for at least 5 minutes or till steam comes out from the holes on top.Serve it hot with any gravy.
Variation:For fussy kids serve it with some sugar/brown sugar & ghee.

Parsley Chutney

Ingredients
Parsley-1 bunch
Garlic-2
Tamarind-a small piece
Urad dhal-2tsp
Channa dhal-2tsp
Jeera-1/2 tsp
Black sesame seeds-1tsp
Red chillies-5
Grated coconut-a hand full
Salt to taste
Hing-1/4tsp
Oil-1tsp
Method
Wash & pat dry the parsley.Dry fry it on a pan till all the water is evaporated.Keep it aside.Heat oil in a pan fry all above ingredients till light brown.Switch off the gas & add the parsley,mix it & let it cool.Grind it to a semi coarse paste(adding very little water).Serve it with hot rice.

Salad with Orange Dressing

Dressing
Juice of one small orange
Salt & pepper to taste
Roasted black sesame seeds-1tsp
(slightly crushed)
Balsamic vinegar-1/2tsp
Olive oil-1/2tsp
(Mix all above ingredients together)
Salad
Lettuce,shredded carrots & red cabbage-2 cups
Black olives-6
Raisins-10
Sliced pecan-12
Sliced onion-2tsp
Coriander leaves-little
Method
In a bowl put all ingredients under salad together.Before serving pour the dressing on top & toss it well.Serve immediately.

Tangerine & Cereal Delight

Yesterday my daughter wanted to eat something while watching TV.It was an odd time didn't know what to give her?Opened my fridge found some ingredients.Just arranged it in a bowl & gave it to her.She liked it so much & finished the whole bowl.I am sure any fussy child will love this .Try it.....
Ingredients
Tangerine-1
(cut the segments into half & remove the seeds)
Kellogg's wheat flakes & strawberry cereal- a hand full
Lite cool whip or whipping cream-3tsp
Cherry for decoration
Raisins-1tsp
Cherry pie filling-2tsp
Method
Take a bowl place the tangerine at the bottom.Top it with some cool whip,on top some pie filling.Put some cereal & raisins on top.Decorate with cherry & cool whip.Serve it immediately.

Potato and Capsicum Masala Fry

Ingredients
Boiled & cubed potato-2
Cubed capsicum-2
Chopped tomato-1 big
Lime juice-1tsp
Ingredients ground to a semi coarse powder
Roasted sesame seeds-1 & 1/2 tsp
Roasted coriander seeds-1tsp
Roasted peanuts-2tsp
Grated coconut-3tsp
Hot curry powder-1/2tsp
(or just chilly powder)
Turmeric powder-1/8tsp
Salt to taste
Ginger & Garlic paste-1/2 tsp
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1/2 tsp
Curry leaves little
Method
Heat oil & temper it.Fry the capsicum till 3/4th cooked.Add the potato & ground masala,sprinkle very little water.Cover & cook it till dry.Garnish it with coriander leaves.Serve it with rice or roti.

Chilled Avocado Soup

Ingredients
Avocado-1
Salt & pepper to taste
Fat free milk-1 cup
Stock or water-1 cup
(I used 100% fat free,33% less sodium chicken broth)
Green chillies-1/2
Garlic-1/2
Lime juice-1tsp
Method
Blend everything in a blender.Season it with salt & pepper & serve it cold.

Double Beans Kurma

Ingredients ground to a smooth paste
Grated coconut-a hand full
Poppy seeds-1tsp
Ginger & Garlic paste-1tsp
Cinnamon-a small piece
Cloves-3
Cardamom-1
Red chilly powder-1tsp
Coriander powder-1/2 tsp
Turmeric powder-1/4tsp
Fennel seeds-1/2tsp
Salt to taste
Other ingredients
Double beans-2 cups
(soaked over night)
Oil-3tsp
Bay leaf-1
Chopped onion-1/2
Chopped tomato-1
Curry leaves-little
Slit green chillies-2
Method
Heat oil in a pressure cooker add bay leaf,onion,tomato,curry leaves & green chillies,fry till light brown.Add the ground masala & fry a bit.Add the beans,pour enough water for the gravy & cook it till done.Garnish it with coriander leaves.Best served with pulao or roti.

Black Forest Cake

Today is my 550th post.Celebrating it with a great joy!!!!!!!!!!!!!!!


Ingredients for the cake
Maida-1/2 cup
Baking powder-1tsp
Unsweetened cocoa powder-1/2 cup
Melted butter-3/4 cup
Eggs-6
Sugar-1 cup
Vanilla essence-1tsp
Salt a pinch
For filling
Cherry pie filling 15 oz-1/2 tin
Cool whip 8 oz-1pck
Vanilla essence-1/2tsp(I didn't use)
Garnish
Fresh or canned cherries,chocolate curls or grated
(I used maraschino cherries)
Syrup
Sugar-1/2 cup
Water-1 cup
Rum/Kirschwasser/Brandy/Whisky-1tbsp
(I used Rum)

(Boil sugar & water together for 2 minutes.Switch off the gas ,cool it & mix in the rum.Keep it aside)
Method

Pre heat oven to 350 deg.Grease a round pan.Sieve maida,salt ,baking powder & cocoa powder & keep it aside.Beat eggs,sugar & essence till fluffy for at least 5 minutes.Add the flour mixture slowly & mix it well.Stir in the melted butter.Now pour it in the greased pan & bake it for 35 minutes or till done.Cool the cake completely before decorating.

Assembling the cake
Cut the cake carefully into half or into three.Prick the cake with a fork.Sprinkle the bottom part with the sugar syrup,spread some pie filling on top.Apply a layer of cool whip on top.Place the second layer on top.Again repeat the process & finish it with the remaining cool whip & decorate it with grated chocolate.Keep it in fridge for at least 30 minutes,cut & serve it cold.

Oats Pesarattu

Ingredients
Rolled oats-1 cup
Whole green moongh dhal-2 cups
Long brown rice-a hand full
Ginger-a small piece
Green chillies-2
Salt to taste
Jeera-1tsp
Oil-to make dosas
Chopped onions to fill inside
Method
Soak moongh dhal,rice,green chillies & ginger for 6 hrs.Soak oats separately for 30 minutes.Grind everything together to a smooth paste.Mix in salt & jeera.Cook it like dosa on hot tawa.Before removing place a teaspoon of chopped onion,fold & serve it hot with any chutney.

Tangerine Sauce

Ingredients
Tangerine juice-1/3 cup
(around 3 small fruits)
Salt to taste
Lime juice-1/2 tsp
Butter-1tsp
Corn starch -1/4tsp
(diluted in little water)
Method
Take a pan & mix tangerine juice,salt,butter & lime juice.Boil it for a minute.Pour the corn starch liquid & mix it till thick.Switch off the gas.Pour this sauce & sprinkle some pepper on any steamed vegetables,fish or chicken & serve.

Microwave Dhokla Recipe / Dhokla Recipe in Microwave

Ingredients for dhokla
Besan/Gram flour-1 cup
Oil-3tsp
(I didn't use)
Salt to taste
Curd-2tbsp
Baking soda-1/2 tsp or ENO - 1/2tsp
( I have used ENO in this recipe, I prefer ENO for best result)
Sugar-1/8tsp
Lime juice-1tsp
Turmeric powder-less than 1/8tsp
Hot water-1/2 cup
Grated ginger & green chillies together-1tsp
Liquid to pour on top
Water-1/4 cup
Salt a pinch
Sugar-1 & 1/2 tsp
Lime juice-1tsp
(mix everything together)
Tempering
Oil-2tsp
Jeera/cumin-1/2 tsp
Mustard-1tsp
Curry leaves few
Chopped green chillies-1/4tsp (optional)
Garnish
Chopped coriander leaves & grated coconut
Method
Grease a glass tray & keep it aside.
Take a bowl mix besan,curd,salt,lime juice,sugar,grated ginger & green chillies.
Pour hot water & whisk it well without any lumps.
Now add the cooking soda mix it well & pour it immediately into the greased tray.
Microwave it for 3 minutes,each microwave is different adjust time accordingly.
Insert a tooth pick if comes out clean then your dhokla is done.
Cut into desired shape & pour the liquid on top while still warm.
Heat oil in a pan & temper it with above ingredients.
Garnish with coriander leaves & coconut.
Serve it with green chutney.
