Carrot Halwa
Ingredients
Grated carrots - 1 & 1/2 cups
Sugar-1/2 cup
Milk-1 cup
Ghee-2tbsp
Chopped cashew nuts or almonds-2tsp
Cardamom powder-1/4tsp
Method
Heat 1tsp of ghee in a pan fry the nuts till light golden brown,keep it aside.
In the same pan add remaining ghee & saute the grated carrot in low flame till raw smell disappears & shrinks.
Now pour the milk & cook the carrots till its soft & all the milk is absorbed by the carrots.
Now add the sugar,cardamom powder & cook till everything is well combined.
Cook till ghee separates from the pan,mix in the fried nuts.
Switch off the stove,garnish with some chopped pistachio & serve them warm !
Note :
a) Make sure that the carrots are fried well till raw smell disappears before adding milk.
b) Sugar quantity depends upon the sweetness of the carrot,so add accordingly.
c) Condensed milk can be added for extra richness.

Kathirikai Rasavangi
Ingredients roasted & ground to a smooth paste
Urad dal -1 tbsp
Coriander seeds - 1 tbsp
Channa dal -1/2 tbsp
Red chillies-2
Grated coconut - 3 tbsp
Oil-1/4 tsp
(Heat oil & fry above ingredients till light brown.Cool & grind to a smooth paste)
Tempering
Oil-2tsp
Mustard-1tsp
Urad dal -1/2 tsp
Red chillies-1
Curry leaves -few
Hing-a pinch
Other ingredients
Brinjal -6 cut into cubes
Tamarind a small gooseberry size
( soak in water & remove the extract )
Cooked & mashed toor dal -1 cup
Salt to taste
Jaggery-1/2tsp
Turmeric powder-1/4tsp
Method
Heat 1tsp of oil & fry the brinjals for 1 or 2 minutes.
Add the tamarind juice,turmeric powder & salt.Cook till brinjals are cooked.
Now add the cooked dal,ground masala & jaggery.Boil till the gravy is semi thick.
Switch off the flame.
Heat oil in a pan & temper it with above ingredients.
Pour this tempering into the gravy.
Add curry & coriander leaves,mix & best served with plain rice.

Achu Murukku
Ingredients
Rice flour -1 cup
Maida / All purpose flour-1/4 cup
Sugar-1/2 cup
Coconut milk-1 cup
(I used the tin)
Water- 1/2 cup
Jeera / cumin-1/2 tsp
Salt- a pinch
Oil-to fry
Method
Mix all above ingredients together in a bowl.
Beat it with a fork or whisk to get a smooth batter,consistency should be little thicker than a dosa batter.
Heat oil in a pan/kadai,dip the Achu murukku mould into the oil.Wait till it gets well heated.
Now slowly dip it in the batter (dip it only 3/4th of the mould).
Take the mould from the batter and dip into hot oil.Do not touch the bottom of the kadai they may stick.
After a few seconds slightly shake the mould so that the Achu murukku separates from the mould.
Fry both sides on a medium heat till light golden brown.
Remove it on a paper towel,cool completely & store it in an air tight container.
Note:
a) Each time you make the achu murukku,dip the mould into the hot oil once well heated then dip it in batter.
b) Instead of jeera you can use black sesame seeds.
c) Fry the achu murukku in medium flame.
d) If you murukku doesn't come out easily from the mould if shaken,then use a knife to release it from the mould.

Eggless Whole Wheat Carrot Cake
Ingredients
Whole wheat flour - 2 cups
( You can replace with maida / all purpose flour)
Baking powder - 2tsp
Baking soda - 1tsp
Cinnamon powder - 1tsp
Nutmeg powder - 1/2 tsp
Dry ginger powder - 1/4 tsp
Sugar -1/4 cup
Brown sugar -3/4 cup
Buttermilk - 1 cup
Oil - 3/4 cup
Milk - 1 cup
Vanilla essence - 1 & 1/2 tsp
Grated carrot - 2 cups
Chopped almonds or walnuts - 1 cup
( I used almonds)
Raisin - 1/2 cup
Method
Pre. heat oven at 350 F ,grease a baking pan with butter & dust it with flour.
Sieve all the dry ingredients together & keep it aside.
Mix the chopped almonds & raisins into the flour.
Beat all the wet ingredients together in a bowl.Make sure the sugar has completely dissolved.
Now add the carrots & the four mixture.Gently fold it to make sure they are well combined.
Pour this into the greased baking pan.Tap slightly to make sure the batter is evenly spread.
Now bake this for 30 minutes or till done.
Coll completely & then cut the cake.
Serve them warm or cold with a scoop of  vanilla ice cream.

Note:
Sugar was right for our family ,Increase the quantity if you need them sweeter.

Christmas Rum Cake
Ingredients soaked for overnight
Rum-1/4 cup
Orange juice-3/4 cup
Chopped nuts-each 1/3 cup
(macadamia,almond,walnuts or any nuts of your choice)
Chopped dates-10
Raisins-1/3 cup
Dry cherry,cranberry or tutti frutti-1/3 cup
Ingredients for the batter
Maida/all purpose flour-1 &1/2 cups
White sugar-3/4 cup
Brown sugar-1/4 cup
Eggs-2
Baking soda - 1/4 tsp
Salt - 1/4tsp
Oil-3/4 cups
Honey-1tbsp
Vanilla essence-1tsp
Cinnamon powder-1/2tsp
All spice powder-1/2tsp

Christmas Fruit Cake
Method
Sieve flour,salt,baking soda & all spice powders, keep it aside.
Beat oil,eggs,sugar,brown sugar & essence together till fluffy.
Dust the soaked nuts with 1 or 2 tsp of flour, make sure they are evenly coated.
Add the flour to the beaten liquid ingredients, mix it thoroughly.
Fold in the dusted nuts,pour it into a greased pan & bake it for 30 minutes or till done at 350 deg. F
Cool completely & then cut.

Note:
a) Brush the cake with some rum on top, wrap it with a butter paper & cut it next day.It gives a rich taste when eaten the next day.
b) If your batter is thick squeeze some orange juice,mix well to get a nice pouring consistency and then bake.
c) Use any combination of nuts and dry fruits you like.

Karuvadu Thokku
Ingredients
Karuvadu / Dry Fish -8 small pieces
Chopped onion - 1
Chopped tomato - 2
Chopped garlic -10
Curry leaves few
Salt to taste
Turmeric powder - 1/4tsp
Red chilly powder - 1 tsp
Coriander powder - 1 & 1/2 tsp
Crushed whole pepper - 1 tsp
Tamarind - a small lime size
(Dilute tamarind in water make a thick extract)
Tempering
Mustard-1tsp
Fennel seeds-1/4tsp
Red chillies-4
Oil- 3tbsp
Method
Wash & clean the dry fish to make sure there is no sand.
Rinse with little turmeric powder & salt,keep it aside.
Heat oil in a pan & temper it with above ingredients.
Fry onion,garlic & curry leaves till light brown.Now add the tomato & saute till its mashed well.
Add all the dry ingredients & the dry fish,fry for couple more minutes.
Pour the tamarind extract & needed water.
Cover & cook till the fish is well cooked & the masala leaves the sides of the pan.
Switch off the flame sprinkle the freshly powdered pepper,mix well.
Garnish with curry & coriander leaves.Best served with plain rice.

Kollu Chutney / Horse Gram Chutney / Kollu Paruppu Chutney / Ulavalu Chutney

Kollu Chutney
Ingredients
Kollu / Horse gram -1/4 cup
Coconut-2 tbsp
Channa dal-1tbsp
Jeera/cumin-1tsp
Coriander seeds/dhaniya-1/4tsp
Red chillies - 3
Salt to taste
Tamarind paste-1tsp or a very small piece
Tempering
Oil-2tsp
Mustard-1/2tsp
Urad dal- 1/4tsp
Curry leaves - few
Hing-a pinch
Method
Dry roast kollu till light brown,keep it aside
In the same pan dry roast channa dal,jeera,coriander seeds,coconut,red chillies till light brown.
Cool all the ingredients & grind with salt,tamarind & little water to a smooth paste.
Heat oil & temper it with above ingredients.
Pour it into the chutney mix & serve with any tiffin .

Vankaya Perugu Koora
Ingredients
Brinjal -6
(Small size purple long brinjal)
Chopped onion-1/2
Chopped curry & coriander leaves-2tsp
Ginger & Garlic paste-1tsp
Slit green chillies-2
Turmeric powder-1/2tsp
Red chilly powder-1/2 tsp
Coriander powder-1tsp
Salt to taste
Besan-1 tsp
Curd-3tbsp
Oil-6tsp
Method
Slit the brinjals on top like a "X",do not cut all the way to the end.
Take a bowl add the turmeric powder,salt,besan & curd.Make a smooth paste,keep it aside.
Heat oil in a kadai add the onion,green chillies & curry leaves,fry till its transparent.
Now add the ginger/garlic paste red chilly powder,coriander powder & some salt.Fry till raw smell disappears.
Add the slit brinjals saute for 2 to 3 minutes.Sprinkle very little water ,cover & cook till its half cooked.
Pour the curd mixture & cook till the brinjals are fully cooked & the masala leaves the sides of the pan.
Switch off the flame garnish with curry & coriander leaves & serve hot with rice or roti.
