Egg Pepper Roast / Muttai Milagu Varuval / Pepper Egg Fry / Egg Pepper Fry

Egg Pepper Roast
Ingredients dry roasted till light brown and grind to a fine powder
Coriander seeds/Dhania - 1/2 tsp
Pepper - 3/4 or 1 tsp
Jeera/Cumin seeds - 1/2 tsp
Cinnamon - a very small piece
Cloves -1
Fennel seeds - 1/4 tsp
Khus Khus - 1/8 tsp ( optional)
Other ingredients
Boiled eggs - 4
( make slits on all sides of the egg)
Sliced onion - a handful
Slit green chillies -1
Curry leaves few
Ginger and Garlic paste - 1/4 tsp
Salt to taste
Turmeric powder - 1/8 tsp
Tempering
Oil - 6 tsp
Mustard - 1/2 tsp
Red chillies broken -1
Method
Heat oil in a pan and temper it with above ingredients.
Add onion,curry leaves,green chillies fry till onions are light brown add the ginger /garlic paste,salt and turmeric powder saute for a minute.
Now add the eggs and fry them gently.add the ground powder and mix till the eggs are well coated.
Sprinkle very little water and give quick mix,switch off the stove garnish with coriander leaves.
Best served as side dish for rasam or sambar rice.
Note:
The above spice level was perfect for our family adjust according to your comfort.

Egg Kurma
Tempering ingredients
Oil - 6 tsp
Mustard - 1/2 tsp
Cloves -2
Cardamom - 1
Cinnamon - a small stick
Kadal pasi/Blackstone flower - a small piece
Ingredients ground to a smooth paste
Grated coconut - 1/2 cup
Fennel seeds/Somph - 3/4 tsp
Green chillies -1
Poppy seeds/Khus Khus - 1 tsp
Cashew nuts -6
Ginger and garlic paste - 1 tsp
Other ingredients
Boiled eggs -6
( make slits on all sides for the gravy to get into the eggs)
Chopped onion - 1 small
Chopped tomato - 1 medium size
Mint leaves - 5 big leaves
Curry and coriander leaves to garnish
Turmeric powder - 1/4 tsp
Chilly and coriander powder - 1/2 tsp each
Salt to taste
Method
Heat oil in a pan and temper it with above ingredients
Now add the onion,mint and tomatoes saute till the onions are light brown.
Add the ground masala and saute for few minutes,add all the dry powders and fry till raw smell has disappeared.Pour enough water and the boiled eggs cover and cook till the gravy is slightly thick.
Switch off the stove and garnish with curry and coriander leaves.
Best served with roti or rice.

Chilli Egg
Ingredients for the egg omelette
Eggs - 2
Salt & pepper to taste
Water - 2 tsp
Oil - 1/2 tsp
Method
Beat the eggs with salt ,pepper & water till fluffy.
Heat a pan smear oil pour the egg mixture,spread it evenly.Do not spread it very thin.
Once its cooked flip the other side & cook.
Switch off the stove cool & cut into thick cubes.Keep it aside
Batter ingredients
Maida / All purpose flour - 3 tsp heaped
Corn flour or Rice flour - 2 tsp heaped
Soy sauce - 1/4 tsp
Chilli sauce - 1/4 tsp
Salt a pinch
Method
Take a bowl add the above mentioned ingredients.
Sprinkle some water and make a thick batter,add the cut egg pieces.
Mix it gently to make sure all pieces are well coated.
Heat oil in a pan carefully drop drop batter coated egg pieces one by one, deep fry till light golden brown on both sides.
Remove it on a kitchen tissue.
Other Ingredients
Oil- 3 tsp
Chopped onion - a handful
Chopped spring onions - 1/4 cup
Chopped ginger - 1 tbsp
Chopped ginger - 1/2 tbsp
Soya sauce - 1/2 tbsp
Chilly sauce - 1/2 tbsp
Maggie tomato chilli sauce - 1/2 tbsp
Tomato Ketchup - 2 tbsp
Vinegar - 1/2 tbsp
Sugar a pinch
Salt & pepper to taste
Method
Heat oil in a pan fry onion,garlic & ginger in high flame till its light brown.
Lower the flame and add all the sauces,salt & pepper powder & saute for a minute.
Pour very little water to get a thick gravy.
Add the fried eggs quickly toss them well.
Garnish with spring onions & serve them hot.
Best served with Chinese fried rice or serve it as a starter.

Ingredients for outer covering
Boiled potato - 3 medium size
Chopped onion - 1/2
Chopped green chillies - 1
Ginger & Garlic Paste - 1 tsp
Chopped coriander leaves - 2 tsp
Salt to taste
Red chilly powder - 1/2 tsp
Coriander & Cumin seed powder - together 1 tsp
Chaat Masala powder - 1/2 tsp
Garam Masala Powder - 1/4 tsp
Oil - 1 tsp

Dimer Chop/Egg Chop
Method
Heat oil in a pan add onions & fry till its brown.
Now add the green chillies,ginger & garlic paste,saute till raw smell disappears.
Add all the spice powders & quickly give a mix.
Now add the mashed potato & chopped coriander leaves,mix till everything is well combined.
Switch off the stove and let the mixture cool,divide into 6 equal size balls.
Filling Ingredients
Eggs - 3
Salt & Pepper to taste
Method
Boil the eggs remove the shells.
Cut the eggs into half & sprinkle salt & pepper on top.
Coating ingredients
Egg beaten - 1
( or dilute maida/all purpose flour in water to make a semi thick paste for coating )
Bread crumbs as needed
Other ingredients
Oil to deep fry

Dimer Chop/Egg Chop
Method
Take a piece of egg cover it fully with the potato mixture to give an oval shape.
Dip it in maida liquid or beaten egg then roll in bread crumbs,make sure all sides are well coated.
I usually do a double dipping process to make sure while frying they don't break.This is optional.
Keep it in fridge for 30 minutes,heat oil in a pan and deep fry them in hot oil till crisp and light brown on all sides.Remove it on a kitchen tissue.
Serve them hot with any dip of your choice.
Note:
a) As these egg chop is heavy i usually give a double coating to make sure they don't break while frying.
b) While frying the oil should be hot otherwise they will break.
c) Before dropping it in the hot oil press the chop all sides to make sure they are sealed well.

Egg Biriyani
Ingredients for egg
Boiled eggs - 6
Salt to taste
Turmeric powder - 1/4 tsp
Red chilly powder - 1/2 tsp
Ingredients for rice
Basmati rice - 3 cups
Salt to taste
Black pepper - 10
Cloves - 5
Cardamom -5
Cinnamon stick - a small piece
Shajeera - 1/4 tsp
Water as needed to cook rice
Egg Biriyani
Method
Wash & soak rice in water for 30 minute.
Make slits on the boiled eggs,add chilly powder,turmeric powder & salt to the eggs mix well & rest for 10 minutes.
Heat 1 tbsp of oil add the eggs and roast for 1 or 2 minutes till all sides are slight brown,Remove & keep it aside.
Boil water in a wide vessel with the spices & salt.
Drain out the water from the rice & add it to the boiling water.
Cook till its 3/4th done,strain out the water and keep the rice aside.
Ingredients for gravy
Star anise - 1
Bay leaf - 1
Black stone flower ( optional) -1
Sliced onion - 1
Chopped tomato - 1 big
Slit green chillies - 6
Chopped mint leaves - a handful
Ginger & Garlic paste - 1 tsp together
Salt to taste
My biriyani masala powder - 1 tsp
Curd - 1/4 cup
Oil - 1/8 cup
Ghee - 1 tbsp
Ingredients for garnish
Fried onion - a handful
Mint leaves
Lemon juice - 1 tsp
Egg Biriyani
Method
Add some ghee & oil to the same egg fried pan add the spices.
Now add the green chillies & onion  fry till light brown.Add the ginger & garlic paste,mint & tomato.
Fry till tomatoes are soft add salt,curd & biriyani masala mix well.
Now add the eggs & gently mix.
Take a heavy bottom wide pan add the gravy at the bottom,spread the rice on top evenly.
Sprinkle the fried onions,mint leaves & lemon juice.
Cover it with a tight lid and in low flame cook till the remaining rice grains are cooked it takes about 10 minutes.Once done gently mix the rice & serve them hot with raita.

Whole black pepper-1 & 1/2 tsp

Method
Heat oil in a pan temper it with above ingredients.
Add onion & fry till light brown,add tomato & the ground paste.
Fry till raw smell has disappeared & oil has separated the masala.
Add the eggs gently mix it well combined with the masala.
Switch off the stove garnish with curry leaves.
Best served as side dish for rice or roti.

Ingredients for the filling
Egg - 4
( Boil the eggs,remove the shells & slice into two )
Salt & Pepper to taste
Red chilly powder - 1/2 tsp
Coriander powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/2 tsp
Chopped onion - a handful
Chopped tomato - 1 small
Chopped green chillies - 1
Ginger and garlic paste - 1/2 tsp together
Curry leaves few
Fennel seeds - 1/2 tsp
Oil - 2 tsp

Method
Heat oil in a pan temper it with fennel seeds
Now add the chopped green chillies,curry leaf and onion,fry till light brown.
Add the tomato & ginger garlic paste,saute for couple more minutes.
Now add all the spice powders and fry till raw smell disappears.
Switch off the stove & add the eggs,mix gently to make sure the eggs are well coated with the masala.Keep it aside.
Other ingredients
Pillsbury Crescent dough sheets - 1 pack (8oz can )
(Thaw the dough sheet)

Method
Remove the sheet from the can.Cut the sheet into 8 equal squares.
Place the egg with masala on top of each square.
Cove the egg with the sheet ( see the picture).
Arrange on a baking sheet & bake till light brown at 375 deg F for 10 minutes.
Enjoy with ketchup.
Note;
You can use regular puff sheets,but in this recipe i tried with crescent dough sheet for a change.

Egg Biryani Recipe

Tempering
Jeera/cumin & Shajeera-each-1/2tsp
Cardamom-4
Cloves-4
Bay leaf-2
Kal pasi/black stone flower-little
Cinnamon-a small piece
Oil-8tsp
Ingredients for rice
Basmati rice-2 cups
Salt to taste
My Biriyani masala-1/2tsp
Oil-1tsp
Water-3 & 1/2 cups
(Cook the rice with above ingredients & keep it aside)
Other ingredients
Sliced onions-1/2
Tomato paste-1tbsp
Curd-1tbsp
Ginger & garlic paste-1tsp
Sliced green chillies-2
Chilly powder-1/2tsp
Turmeric powder-1/4tsp
Salt to taste
Chopped mint & Coriander leaves together-1/4 cup
Eggs-6
Garam masala-1tsp
Lime juice-2tsp
Method
Heat oil in a pan temper it.Add the sliced onions,green chillies & mint,coriander leaves,fry till light brown.Add the ginger,garlic paste & all dry ingredients,saute for 2 minutes.
Now add the curd & tomato paste,saute a bit & pour one cup of water to make a light gravy.Simmer the gravy,now break in the eggs into the gravy (make sure its all separate & not crowded).Cover it with a lid & cook the eggs (it will look like poached eggs).At this stage slightly cut the eggs into big chunks & switch off the stove.
In another heavy bottom pan spread some gravy, on top spread some cooked rice,again with gravy & end it with rice.Sprinkle some mint & coriander leaves & 2tsp of lime juice.Cover it with a tight lid & leave it for 5 minutes in a very low flame.
Before serving mix it slightly & serve it with raita.

Cabbage Egg Puttu

Ingredients for tempering
Oil-3tsp
Mustard & Jeera/Cumin-each 1/2tsp
Other ingredients
Eggs-4
(Beat it with little salt & turmeric powder)
Chopped cabbage-2 cups
Chopped green chillies-1
Grated ginger-1/4tsp
Chopped onion-1/4 cup
Chopped coriander leaves-2tsp
Curry leaves-little
Garam masala-1/4tsp
Pepper powder-1tsp
Coriander powder-1/2tsp
Method
Heat oil in a pan temper it.Fry onion,green chillies,curry leaves & ginger till light brown.Add the cabbage & all dry ingredients,fry a bit.Sprinkle very little water ,cover & cook till the vegetable is soft.Pour the beaten eggs & give a good stir,so that all ingredients are mixed well.keep stirring until the egg is fully cooked with the cabbage.Garnish it with coriander leaves.Best served with roti or plain rice.

Masala Egg Gravy / Kodi Guddu Pulusu

Ingredients dry roasted & ground to a smooth paste
Whole pepper-1tsp
Red chillies-2
Coriander seeds-1tsp
Fennel seeds-1tsp
Cumin seeds-1/2tsp
Cinnamon-a small piece
Cloves-2
Methi/fenugreek seeds-5
Coconut-1tbsp
Tomato-1
Turmeric powder-1/4tsp
Other ingredients
Tamarind diluted in water-2 cups
Salt to taste
Eggs-3
Curry & Coriander leaves-1tsp
Chopped onion-1tbsp
Chopped garlic-4
Tempering
Oil-6tsp
Mustard-1/2tsp
Methi /Fenugreek seeds-5
Method
Heat oil in a pan & temper it.Fry the onion,garlic & curry leaves till light brown in colour.Add the ground paste & saute till oil separates the pan.Pour the tamarind juice & in low flame cook the gravy till raw smell disappears & gravy is slightly thick.Now break the eggs into the gravy (do not mix),cover & leave it for 3 minutes.Switch off the stove,garnish with curry & coriander leaves.Serve it with hot rice.

Ingredients
Egg-2
Salt & Pepper to taste
Chopped onion,tomato,zucchini-together 2tsp
Chopped avocado-1
Grated cheese-for garnish
Oil-1tsp
Method
Slightly beat  the eggs with little salt & pepper.Mix in the vegetables.Heat oil in a non stick pan ,pour the egg mixture & spread it ,cover it with a lid & cook it for a minute in medium low heat.Cook it till the bottom is slightly brown.Sprinkle the chopped avocado,fold it into half.Turn the omelet & cook the other side till done.Remove on a serving plate & sprinkle the grated cheese on top & serve.

Roasted gram /Pottukadalai-1tsp(no need to fry)

Sesame oil-1tbsp
Mustard-1tsp
Methi seeds/fenugreek-8
Curry leaves-1tsp
Other ingredients
Diluted tamarind water-2 cups
Boiled eggs(make slits on it)-6
Method
Heat oil in a pan & temper it,pour the ground masala & the tamarind juice.In low flame cook till the gravy is slightly thick,add the eggs & give a boil.Switch off the stove ,garnish it with curry & coriander leaves & serve it with hot rice.

Egg Biriyani-Version 2

Ingredients ground to a smooth paste
Tomato-1
Ginger & Garlic paste-1/2tsp
Salt to taste
Turmeric powder-1/2tsp

Fennel seeds(somph)-1tsp
Walnuts-4(optional)
Coriander & Mint leaves-a handful
Tempering
Bay leaf-1
Shajeera-1/2tsp
Sliced onions-1/2
Slit green chillies-1
Oil-3tsp
Ghee-2tsp
Ingredients for omelet
Eggs-3
Garam masala-1/2tsp
Salt to taste
(beat everything together)
Other ingredients
Cooked basmati rice-2 cups
Lime juice-1tsp
Mint leaves -for garnish
Method
Heat 1tsp of oil in a pan,pour the egg mixture into the centre of the pan and cook for approx 1-2 minutes until egg is set.Flip & cook it on the other side too.Cool & cut into small pieces & keep it aside. Heat oil in a pan temper it,fry onions & green chillies are light brown.Add the ground masala & fry it till oil separates the pan.Pour very little water & make a thick gravy.Add the cut eggs & mix it well.Add the cooked rice,lime juice & mint,mix it well & serve it hot with any raita.

Ingredients
Eggs-4

Frozen peas-a handful
Cubed firm tofu-1 cup

Method
Beat eggs,salt & turmeric powder together,keep it aside.Heat oil in a pan temper it.Add the onion,green chillies,ginger & tomato fry till onions are light brown.Add the peas,tofu,coriander powder & beaten eggs.Mix it well & cook till its scrambled.Garnish it with coriander leaves.Best served with roti...

Bread & Egg Kothu Masala

Ground to a smooth paste
Coconut-3tsp
Poppy seeds-1tsp
Almonds-5
Tempering
Oil-3tsp
Mustard-1tsp,Fennel seeds-1 & 1/2tsp,Curry leaves-little
Other ingredients
Whole wheat bread-6 slices
(slightly toasted in tawa & cut into small cubes)
Scrambled eggs-3nos
Salt to taste
Garam masala-1/2tsp
Chilly powder-1/4tsp
Turmeric powder-1/8tsp
Chopped onion-1/4
Chopped tomato-1
Chopped capsicum-1/4
Ginger & Garlic paste-1tsp
Chopped mint & coriander leaves-3tsp
Slit green chillies-4
Method
Heat oil in a pan temper it.Fry onions till light brown,add the tomato,green chillies,capsicum,ginger & garlic paste fry till raw smell goes off.Add all the dry masalas & the ground paste,fry for 2 minutes.Pour enough water for the gravy.Cook it in medium flame till its cooked & gravy is semi thick.Now add the scrambled eggs & bread,toss it well till the bread absorbs the gravy.Switch off the gas & garnish with mint & coriander leaves.Serve hot with ketchup.

Egg Pickle
Ingredients for steaming the eggs
Eggs-4
Water-3tsp
Salt to taste
Ginger & Garlic paste-1/2 tsp
Turmeric powder-1/4tsp
Coriander powder-1/2 tsp
Garam masala powder-1/2 tsp
Other ingredients
Red chilly powder-3tsp
Dry coconut powder-2tsp
Garam masala powder-1/2tsp
Salt to taste
Turmeric powder-1/4tsp
Lime juice-less than 1/8 cup
Tempering
Oil-3/4 cup
Mustard seeds-1tsp
Jeera / Cumin-1tsp
Red chillies-3
Curry leaves-little
Methi / Fenugreek seeds-less than 1/8tsp
Ginger & Garlic paste-1tsp

Method
Take a blender or mixi jar add all above ingredients for steaming the eggs.
Beat it till everything is combined,pour it in a greased plate & steam it for 5 minutes.
Cool & cut into small pieces.
Heat oil in a kadai deep fry the cut egg pieces till light golden brown on all sides (don't fry till crisp).
Remove & keep it aside,in the same oil add the temper ingredients.
Switch off the stove cool the mixture for a minute & add all the above mentioned dry ingredients,lime juice & the egg pieces.
Mix it well till the egg pieces are well coated.
Cool the pickle & store it in fridge.
Best served the next day.

Egg Biriyani (Ambur Style)

Ingredients to marinate eggs
Boiled eggs-6
(make slits on it)
Curd-2tbsp
Chilly powder-1/2tsp
Coriander powder-1/2tsp
Turmeric powder-1/4tsp
Salt to taste
Pepper powder-1/4tsp
Lime juice-5tsp
Ginger & garlic paste-1/2tsp
(Mix all above ingredients together & rest it for 20 minutes)
Grind to a smooth paste
Cashew nut-5
Ginger & garlic paste-1/2tsp
Mint leaves-a hand full
Jeera-1/4tsp
Fennel seeds-1tsp
Green chillies-2
Tempering
Oil-5tsp
Ghee-2tsp
Cardamom-4
Cloves-5
Cinnamon-a small stick
Bay leaf-1
Star anise-1
Other ingredients
Rice-2 & 1/2 cups
Chopped onion-1/4
Chopped tomato-1
Method
Heat oil & ghee in a pan temper it.Fry onion,tomato & ground masala till light brown in colour.Add the rice & fry for 2 more minutes.Pour the water & arrange the eggs with the marinate on top.Close the lid & cook till done.Garnish it with mint & serve it hot with raita or any gravy.

Baked Herbed Eggs




Ingredients
Eggs-3
Parmesan cheese-1/2tbsp
Rosemary-1/8tsp
Basil-1/8tsp
Italian seasoning-1/8tsp
Parsley-1/8tsp
Grated garlic-1
Salt & Pepper to taste
Butter to grease the dish
Method
Break the eggs carefully into a bowl without breaking the yolks.Keep it aside.Mix all the herbs,garlic,seasonings & cheese together.Grease an oven proof dish & heat it in the oven till hot,take it out & pour the eggs slowly into it.Now sprinkle the herb cheese mixture on top.Broil it at 350 deg C till top is brown. Serve it with bread.

Deviled Eggs

Ingredients
Boiled eggs -2
(cut into half & yolk removed)
Pickled Jalapeno chopped -1
Mayonnaise-1tsp
Cottage cheese-1 tsp
Salt & Pepper to taste
Dijon mustard-2 drops
Chopped capsicum & red chilly powder for garnish Method
Mix all above ingredients together.Fill it in the eggs & keep in fridge for 5 minutes.Before serving garnish it with capsicum & red chilly powder.

Note:You can also replace egg yolk instead of cottage cheese.But i like the cottage cheese filling.This dish has to be served cold.

Pudalangai(Snake gourd) & Egg Puttu

Ingredients
Chopped frozen Pudalangai-1 pck
Egg-3
(Beat it with little turmeric powder & pepper)
Chopped onion-1/2
Grated ginger-1/4tsp
Chopped green chillies-1
Curry leaves-little
Garam masala-1/4tsp(optional)
Tempering
Oil-2tsp
Mustard-1tsp,Jeera-1/2tsp.
Method
Heat oil in a pan temper it.Fry the onion,ginger ,chillies & curry leaves till light brown.Add the pudalangai & salt,cover & cook it till done.Add the beaten egg & garam masala mix it well .Cook it till done(like a scrambled egg).Serve it as a side dish.
