Tomato Jam
Ingredients

Finely chopped ripe large tomatoes - 3

Salt a pinch

Sugar - 4 tbsp

( Add more or less according to your taste)

Chopped dates - 6

Cardamom crushed - 4

Raisins and Cashew nuts fried in 1 tsp of ghee - 2 tbsp (together)

Ghee - 3 tbsp

Method

Heat 2 tbsp of ghee and fry the tomatoes till raw smell has disappeared. Cover with a lid and cook till soft.

Add the dates and in low flame cook till dates are mashed and mixture is thick.

Add the remaining ghee , sugar , fried raisins, cashew nuts and a pinch of salt , cook the mixture turns into a jam consistency.

Switch off the stove and add the cardamom powder, mix well. Cool completely transfer into a clean jar and store it in the refrigerator.

Served as a side for biriyani or spread on roti or bread and enjoy!

Apricot Preserves / Apricot Jam / Apricot Spread / Homemade Apricot Jam

Ingredients
Chopped fresh apricots-2 cups
Sugar -1 & 1/2 cup
Water-1/4 cup
Lime juice-1/2tbsp

Method
Add all above mentioned ingredients in a sauce pan.
Cook this mixture in medium flame till the fruits are completely mashed & starts to thicken.
To check the right consistency keep a small plate in the freezer for 10 minutes,remove it and pour some cooked jam on the plate.If the jam is thick & does not run,then that's the correct consistency to switch off the stove.
Cool the jam completely & store it in fridge for a week in a sterilized clean glass jar.
Enjoy them on bread or for any baking recipes

Homemade Blueberry Lemon Preserve /Homemade Blueberry Lemon Jam

Fresh blueberries-2 cups
Lime juice-1tbsp
Water-1/4 cup
Sugar-1/2 cup
Nutmeg-a pinch
Method
Cook all above ingredients(except lime juice) together for 10 minutes stirring in between till its almost mashed & thick.Switch off the stove & mix in the lime juice.Cool completely & store it in a clean bottle in fridge.Great spread for your bread.
