Masala Chaas Powder / Buttermilk Masala Powder / Chaas Masala Powder

Chaas Masala Powder
Ingredients

Jeera / Cumin Seeds - 2 tbsp

Coriander seeds - 1/2 tbsp

Ajwain - 1/4 tsp

Black pepper - 1/4 tsp

Cloves - 2

Dry ginger powder - 1/2 tsp ( heaped)

Black salt - 1/4 tsp

Salt to taste

Dry mint powder - 3/4 tsp 

Hing - 1/4 tsp

Chaat masala - 1/4 tsp (heaped)

Method

Take a pan and dry roast jeera,coriander seeds,ajwain,pepper,cloves till colour changes and brings out nice aroma.Do not over fry and burn them.

Switch off the heat and add the remaining ingredients immediately and mix till well combined.

Cool the mixture and dry grind to a fine powder and store it in a clean bottle.

Add the needed powder to your buttermilk mix and enjoy!

Ingredients

Fried fish - 15 pieces

( Today i have used Air Fryer to fry the fish or you can fry them in tawa too.I used a basic marination using red chilly powder,turmeric powder,coriander powder,lemon juice,ginger/garlic paste add as per your taste and fry)

Sliced onion - 1

Slit green chillies - 6

Crushed garlic - 6

Curry leaves few

Coriander leaves for garnish

Pepper powder - 1 tsp

Red chilly powder - 1/4 tsp

Coriander powder - 1/8 tsp

Fennel seeds - 1 tsp

Poppy seeds - 1/2 tsp

Oil - 1 tbsp

Lemon juice - 1 tsp

Method

Heat oil in a pan add the fennel seeds and poppy seeds saute till they pop.

Add the onion,green chillies,garlic,curry leaves and saute till colour changes.Add the dry powders and mix well.Lastly add the fried fish and gently toss till well combined and switch off the stove.

Garnish with chopped coriander leaves squeeze some lemon on top,enjoy as a side dish with rice or as a starter.

Ingredients

Fish fillets - 2 ( cut into small pieces)

( I used Tilapia fish)

Salt to taste

Pepper powder - 1/2 tsp

Jeera powder - 1/4 tsp

Methi powder - a generous pinch

Red chilly powder - 1 tsp

Coriander powder - 1/2 tsp

Lemon juice - 1 tsp

Ginger and garlic paste - 1/4 tsp

Oil - 3 tsp

Method

Take a plate add all the above mentioned ingredients and gently mix,make sure all the fish pieces are evenly coated. Cover and rest for 10 minutes.

Switch on the air fryer press seafood mode and pre.heat, arrange all the fish pieces on the rack / plate,do not overlap and cook for 10 minutes.

In between turn the fish to cook other side till light brown. Enjoy!

Note:

Each air fryer is different so temperature and time may vary.

Filling

Boiled egg - 4 ( cut into half)

Salt and pepper to taste

Finely sliced onions - 1

Garam masala - 1/2 tsp

Red chilly powder - 1 tsp

Ginger/Garlic paste - 1/4 tsp

Oil - 2 tsp

Other ingredients

Puff pastry sheets cut into 8 squares

Oil to brush on top

Method

Heat oil in a pan fry onion till light brown,add ginger / garlic paste,dry masala powders and saute till raw smell has disappeared completely.

Switch off the stove add the cut eggs and mix well till coated.

Take each puff pastry sheet place a egg facing down with some onion mixture,wet all 4 corners with water and close.Brush the top with some oil and arrange them on the air fryer inner rack/plate.

Pre heat Gourmia air fryer at 400 deg. and cook till 10 minutes or till done. Check in between and shake the air fryer basket.

Yields: 10

Ingredients for sugar syrup

Sugar - 1 cup

Water - 1 cup

Lemon juice - few drops

Cardamom powder - a generous pinch

( Boil water and sugar till you get a slight sticky consistency, this will take only 1 or 2 minutes. Switch off the stove add the lemon juice and cardamom powder, keep it aside)

Ingredients for the mixture

Coarse Sooji/Rava/Semolina - 1/2 cup

(do not add too fine sooji)

Milk - 1 cup

Ghee - 3 tsp

Milk powder - 2 tbsp

Cardamom powder - a generous pinch

Baking soda - 1/8 tsp

( do not add more then they may break while frying)

Other ingredients

Oil to deep fry

Method

Heat ghee in a pan add the sooji and roast till they slightly colour changes and gets nice aroma.

Cool the mixture and  add the milk powder,cardamom powder and baking powder, knead it well till combined. If dry then add few drops of milk.

Divide the portion into equal size balls and flatten them,make sure they are crack free otherwise they may break while frying.

Heat oil in a pan and deep fry in medium high flame till light brown on all sides.

Transfer them into the hot sugar syrup and flip other side and make sure both sides are well coated.

Leave it for 30 minutes and enjoy!

Bread Uttapam
Topping ingredients

Chopped coloured capsicum - a handful

Chopped onion - a handful

Chopped green chilies - 4

Chopped coriander leaves - 1 tbsp

Jeera - 3/4 tsp

( mix all the ingredients together in a bowl)

Batter ingredients

Sooji / Rava / Semolina - 1 cup

Curd - 1 cup

Water - 1 cup 

( add more if needed)

Salt to tasted

White bread - 3 ( crumbled with the crust)

Rice flour - 2 tbsp

Baking soda - 1/4 tsp

Method

Take a bowl add rava,rice flour,salt,crumbled bread,water & curd,mix well and rest it for 5 minutes.

Add this mixture into a mixi jar and grind to get a semi smooth mixture.

Transfer it into a bowl if your batter is thick then add some water to get a semi thick batter consistency.

Just before making the uttapam add the baking soda and give a quick mix,

Heat a tawa grease with little oil add a ladle of batter & spread , sprinkle the topping ingredients evenly on top.Pour oil around the uttapam cover it with a lid & cook the base is light crisp.

Now flip the uppam and cook the other side too.

Serve these Uttapam with chutney or sambar.

Note:

a) You can add any vegetable of your choice to the above uttapam.
b) Each quality of rava is different so add water accordingly.
c) Do not use fine rava for making this uttapam.

Yields:
Ingredients
Super fine almond powder - 1 cup
( I bought it from costco)
Orange food colour a pinch (optional)
Powdered sugar - 1/4 cup heaped
Saffron little soaked in 1 tbsp of warm milk
Warm milk as needed for binding
Gulkand as needed
Ghee - 1 tsp

Badam Gulkand Roll
Method
Take a bowl add the powdered sugar,almound powder,saffrom milk and mix it well.
Slowly add warm milk little by little and form a soft dough.
Add 1 tsp of ghee and form a soft shiny dough.
Grease a plastic sheet with ghee place the dough and roll it out into a thin sheet.
Place some gulkand on top of the sheet in a straight line ( see picture).
Roll the sheet to cover the gulkand and form a semi thick long log.
Cut the rolls to any size you want.
Decorate with edible silver foil and enjoy!

Ingredients

Apple - 1 medium size

( peel the skin remove seeds and finely grate or crush the apple)

Sugar - 3 tsp

( add more if needed)

Milk - 4 cups

Basmati rice - 2 tbsp

( wash and soak it in 1/2 cup water and grind to a grainy texture)

Cardamom powder - 1/2 tsp

Saffron strings - a generous pinch

Chopped almonds and pistachio - 10 each

Ghee - 1 tsp

Method

Take 1 tsp ghee in a pan add the finely grated apples and sauté till raw smell has disappeared completely, keep it aside.

Take a pan add the ground rice and milk in low flame cook till the rice grains are cooked, make sure you scrape the sides of the pan in intervals.

Add sugar and cook till the consistency you want and switch off the stove.

Add the chopped nuts, cardamom powder and saffron strings, mix well.

While its still warm add the sautéed apple mixture mix well and serve warm or cold.

Once apple is added do not heat the mixture, they may curdle.

Ingredients

Bread slices - 2

( trim the edges to remove the crust)

Salt and pepper to taste

Whipped cream cheese - 2 tbsp

Chopped spring onions - 1 tbsp

Crushed walnuts - 1 tbsp

Spring onion leaves - few

( cut into strips)

Garlic powder - a generous pinch ( optional)

Chilly powder or chilly flakes - 1/8 tsp

Method

Take a bowl add 1 tbsp cream cheese,salt,pepper powder, chilly powder,garlic powder,spring onions and mix well.Spread the mixture on both slices and press both the slices together.

Spread the remaining plain cream cheese on top and on all 4 sides of the bread.

Roll all sides with the crushed walnuts make sure they are evenly stuck on the cream cheese.

Place the spring onion leaves on top and bottom of the bread and cut like a triangle.

Serve immediately!

Yields: 15 small ladoos

Ingredients

Walnuts - 1 cup

Red aval / Poha - 1 cup

( use any kind aval)

Desiccated coconut - 1/4 cup

Nattu sarkarai - 3/4 cup to 1 cup

( use brown sugar or jaggery according to your taste)

Cardamom powder - 1/2 tsp

Method

Dry roast aval in medium low flame till crisp and transfer to a plate.

Dry roast walnuts till just hot and remove.

Dry roast the coconut till they slightly changes colour and switch off the stove.

Take a mixi jar add all above ingredients and grind to a semi coarse mixture.

Powder them in intervals by scraping out the sides.

Transfer to a plate and roll out into tight ladoos.
