Method Mix all above ingredients together in a bowl.Sprinkle very little water & knead it to a soft dough.
Add 1 tsp of oil and apply on top of the dough,cover and rest it for 10 minutes. Take out small balls from the dough,roll it out into a semi thick disc. Cook it on both sides till its light brown on a griddle/tawa, smearing some oil while cooking.
( Today i have used Air Fryer to fry the fish or you can fry them in tawa too.I used a basic marination using red chilly powder,turmeric powder,coriander powder,lemon juice,ginger/garlic paste add as per your taste and fry)
Sliced onion - 1
Slit green chillies - 6
Crushed garlic - 6
Curry leaves few
Coriander leaves for garnish
Pepper powder - 1 tsp
Red chilly powder - 1/4 tsp
Coriander powder - 1/8 tsp
Fennel seeds - 1 tsp
Poppy seeds - 1/2 tsp
Oil - 1 tbsp
Lemon juice - 1 tsp
Method
Heat oil in a pan add the fennel seeds and poppy seeds saute till they pop.
Add the onion,green chillies,garlic,curry leaves and saute till colour changes.Add the dry powders and mix well.Lastly add the fried fish and gently toss till well combined and switch off the stove.
Garnish with chopped coriander leaves squeeze some lemon on top,enjoy as a side dish with rice or as a starter.
Heat oil in a pan fry onion till light brown,add ginger / garlic paste,dry masala powders and saute till raw smell has disappeared completely.
Switch off the stove add the cut eggs and mix well till coated.
Take each puff pastry sheet place a egg facing down with some onion mixture,wet all 4 corners with water and close.Brush the top with some oil and arrange them on the air fryer inner rack/plate.
Pre heat Gourmia air fryer at 400 deg. and cook till 10 minutes or till done. Check in between and shake the air fryer basket.

Note:
Each air fryer is different so temperature and time may vary.
( Boil water and sugar till you get a slight sticky consistency, this will take only 1 or 2 minutes. Switch off the stove add the lemon juice and cardamom powder, keep it aside)
Ingredients for the mixture
Coarse Sooji/Rava/Semolina - 1/2 cup
(do not add too fine sooji)
Milk - 1 cup
Ghee - 3 tsp
Milk powder - 2 tbsp
Cardamom powder - a generous pinch
Baking soda - 1/8 tsp
( do not add more then they may break while frying)

Oil to deep fry
Method
Heat ghee in a pan add the sooji and roast till they slightly colour changes and gets nice aroma.
Cool the mixture and add the milk powder,cardamom powder and baking powder, knead it well till combined. If dry then add few drops of milk.
Divide the portion into equal size balls and flatten them,make sure they are crack free otherwise they may break while frying.
Heat oil in a pan and deep fry in medium high flame till light brown on all sides.
Transfer them into the hot sugar syrup and flip other side and make sure both sides are well coated.
Take a bowl add rava,rice flour,salt,crumbled bread,water & curd,mix well and rest it for 5 minutes.
Add this mixture into a mixi jar and grind to get a semi smooth mixture.
Transfer it into a bowl if your batter is thick then add some water to get a semi thick batter consistency.
Just before making the uttapam add the baking soda and give a quick mix,
Heat a tawa grease with little oil add a ladle of batter & spread , sprinkle the topping ingredients evenly on top.Pour oil around the uttapam cover it with a lid & cook the base is light crisp.
Now flip the uppam and cook the other side too.
Serve these Uttapam with chutney or sambar.
Note:
a) You can add any vegetable of your choice to the above uttapam. b) Each quality of rava is different so add water accordingly. c) Do not use fine rava for making this uttapam.
Yields: Ingredients
Super fine almond powder - 1 cup
( I bought it from costco)
Orange food colour a pinch (optional)
Powdered sugar - 1/4 cup heaped
Saffron little soaked in 1 tbsp of warm milk
Warm milk as needed for binding Gulkand as needed
Ghee - 1 tsp
Badam Gulkand Roll
Method
Take a bowl add the powdered sugar,almound powder,saffrom milk and mix it well.
Slowly add warm milk little by little and form a soft dough.
Add 1 tsp of ghee and form a soft shiny dough.
Grease a plastic sheet with ghee place the dough and roll it out into a thin sheet.
Place some gulkand on top of the sheet in a straight line ( see picture).
Roll the sheet to cover the gulkand and form a semi thick long log.
Cut the rolls to any size you want.
Decorate with edible silver foil and enjoy!
