Award

Omapodi / Om podi / Ompodi(Sev)

Ingredients
Besan/kadalai mavu-2 cups
Rice flour-1 cup
Ajwain-6tsp
Salt to taste
Red chilly powder-1tsp
Hing-1/2tsp
Butter melted-1tbsp
Oil-to deep fry
Method
Dry roast ajwain & powder it.Soak the powde in warm water for 1 hrs.Strain (use only the water) & mix all above ingredients together to form a soft dough (this dough will be a bit sticky).Heat oil in a kadai/pan fill the sev press with batter & squeeze it in circles.Fry it till light brown on both sides.Place it on a kitchen paper to remove excess oil.Cool & store it in air tight container.

Stuffed Capsicum With Pasta & Vegetables

Ingredients
Capsicum-1 big
(cut into half & seeds removed)
Salt & pepper to taste
Cooked shell pasta-a hand full
Frozen mixed vegetables-a hand full
Grated cheese-little
Pasta sauce-3tsp
Italian seasoning -1/4tsp
Olive oil-little
Chopped onion-3tsp
Method
Add the capsicum to boiling water with salt ,after 1 minute remove it pat it dry or you can also place it in microwave for 1 minute with salt sprinkled inside the capsicum. Heat oil in a pan fry the onions till light brown.Add the pasta,seasonings & vegetables ,cook it till vegetables are slightly cooked.Add pasta sauce & switch off the gas.Fill this mixture inside the capsicum.Apply oil around the capsicum & bake it at 350 Deg. C for 5 minutes.Sprinkle cheese & bake for another 5 minutes.Serve it with ketchup.

Chocolate Maida Burfi / Maida Burfi Recipe

Maida Burfi
Ingredients
Maida-1 cup
Sugar-2 cups
Ghee-1 cup
Cocoa powder-1tsp
Method
Put sugar in a bowl & add water just to immerse the sugar.Boil it till you get a two string consistency keep it aside.Put maida & ghee in a pan & fry it till raw smell goes off & gives a frothy appearance(it will take only 3 minutes),mix the cocoa powder to it.Now switch off the gas & start adding the hot sugar syrup(not boiling hot) little by little & keep mixing it till everything is absorbed & forms a soft dough(like a soft chapati dough).Immediately pour it on a greased plate.Level it well with a greased spatula or back of a cup.Cut it to desired shape while still warm.Yummy burfi is ready!!!!!!

Chicken Kholapuri

Ingredients dry roasted & made a smooth paste
Dessicated coconut -1 tbsp
Coriander seeds-3tsp
Pepper-1tsp
Jeera-1/2tsp
Shajeera-1/2tsp
Cloves-4
Cardamom-2
Cinnamon stick-1/2''
Star anise-1/2
Kadal pasi(Dagad phool/Lichens )-a small piece
Methi-1/4tsp
Mustard-1/4tsp
Sesame seeds-1tsp
Khuskhus-1tsp
Red chilly powder-1tsp
Salt to taste
Turmeric powder-1/4tsp
Ginger & Garlic paste-1 & 1/2tsp
Other ingredients
Chicken cubed -3/4 pound
Chopped onion-1
Chopped tomato-2 small
Curry leaves-little
Oil-10tsp
Method
In a pan dry roast all ingredients till nice aroma comes.Then fry the coconut till brown(don't burn).Cool & grind everything to a smooth paste. Marinate the chicken with the ground masala for 1hr.Heat oil in a pan fry onions till brown in colour.This gives a good flavour for this dish.Now add curry leaves & tomato fry till its mashed well.Add the chicken & fry for 2 minutes.Pour water & cook it till the chicken is cooked & gravy is thick.Garnish it with curry leaves.
Tips:Add Kashmir chilly or powder for nice red colour.Onions & coconut should be fried till nice brown colour.This adds the flavour for the dish.Oil must be added a little more ,but i reduced the amount.

Mutton Pulao (Malabar Cuisine) / Malabar Mutton Pulao recipe / Mutton Pulao Malabar Style recipe / Mutton Pulao recipe Ingredients for rice
Basmati rice-4 cups
Coconut milk-1 cup(165ml tin)
Water-6cups
Salt to taste
Whole garam masala
(Cloves-5,cardamom-5,cinnamon-1/2'' stick,Bay leaf-1)
Lime juice-1tsp
Ghee-2tsp
Ingredients to grind to a smooth paste
Green chillies-4
Ginger & Garlic paste-1tsp
Fennel seeds (somph)-1tsp
Pepper-1o
Star anise-1
Cloves-6
Cardamom-5
Cinnamon-1/2'' stick
Coriander seeds-1/2tsp
Onion-1tbsp
Nutmeg-1/4 piece
Ingredients to marinate mutton
Mutton-1 & 1/4 pound
Salt to taste
Turmeric powder-1/4tsp
Chilly powder-1tsp
Coriander powder-1tsp
Ginger & Garlic paste-1tsp
(mix everything & marinate overnight or for at least 3hrs)
Ingredients for gravy
Ghee-2tsp
Oil-4tbsp(12tsp)
Mint & coriander leaves-each one small bunch chopped
Chopped tomato-1 big
Sliced onion-1 big
Lime juice-1tsp
Ground masala(recipe above)
Fried onion for garnish- littleMutton Pulao (Malabar Cuisine) / Malabar Mutton Pulao recipe / Mutton Pulao Malabar Style recipe / Mutton Pulao recipe

Method
Heat ghee in a pan temper with the whole garam masala.Add the washed & drained rice & fry for 2 minutes.Now add coconut milk,water,salt & lime juice.Cook it till done & keep it aside.
Heat oil & ghee in a pressure cooker fry the onions till light brown in colour.Now add the tomato,lime juice,mint,coriander leaves & ground masala & fry it till oil separates .
Add the marinated mutton & cook it till done.If water is there in the gravy dry it put by simmering the gravy.
In a heavy bottomed pan make layers alternatively with gravy & rice.Top it up with fried onions & mint leaves.
Keep it in very low flame for 10 minutes.Before serving mix it well.Yummy Mutton pulao is ready to serve with raita!!!!

Apple & Pecan Bars


Ingredients
Maida-1 cup
Baking powder-1tsp
Salt-1/4tsp
Cinnamon powder-1/4tsp
Butter or Margarine melted-1/4cup
(I used butter)
Light brown sugar-1/2cup
White sugar-1/2cup
Egg-1
Vanilla essence-1tsp
Chopped apple-1/2 cup
Chopped pecan-1/2 cup
Ingredients to sprinkle on top
White sugar-1tbsp
Cinnamon powder-1/4tsp
(mix it together)
Cream cheese glaze
Cream cheese-3tsp
Sugar-1tsp
Vanilla essence-1/4tsp
Butter-1/2tsp
Milk-1tsp
(cream every thing together to a tooth paste consistency)
Method
In a bowl mix maida,baking powder,salt & cinnamon.In another bowl mix butter,egg,brown & white sugar & essence.Slowly add the maida mixture & mix with a wooden spoon till combined.Stir in the apples & nut.Spread it on a greased tray or pan evenly.Sprinkle the Cinnamon & sugar on top.Preheat oven at 350 deg.c & bake it for 25 minutes.Cool & cut into squares & pipe the glaze on top & serve it.
