Sweet Mixed Fruit Pachadi Recipe / Kalyana Sweet Pachadi Recipe / Sweet Fruit Relish

Sweet Fruit Pachadi
Ingredients
Chopped fruits of your choice - 1 & 1/2 cups
( I used apple,green seedless grapes,orange,pineapple)
Honey - 1 tsp
Chopped cashew nuts - 2 tsp
Raisins - 2 tsp
Tomato crushed- 1
Sugar - 1/2 cup
Water - 1/2 cup
Rose essence or Pineapple essence - few drops
( I used pineapple essence)
Red food colour - a pinch ( optional)
Method
Crush one tomato and keep it aside.
Boil water and sugar once the sugar has melted add the crushed tomato and cook.
Cook till the mixture has come to a semi thick jam consistency mix in the food colour and switch off the stove.Let this cool completely.
Add the nuts,fruits,essence & honey mix well and rest it for 2 hours.
Your sweet fruit pachadi is ready to serve,

Thinai Salad/Foxtail Millet salad
Ingredients
Cooked Thinai / Fox tail millet - 1/4 cup
Chopped onion -  a handful
Chopped green apple - a handful
Chopped capsicum - 1 tbsp
Chopped green chillies - 1
Chopped carrot - a handful
Chopped coriander leaves - 2 tsp
Chopped almonds or nuts of your choice -6
Chopped dates - 2
Pomegranate - 1/8 cup
Olive oil - 2 tsp
Lemon juice - 1 tbsp
Salt & pepper to taste
Roasted and powdered jeera / cumin - a generous pinch
Method
Take a wide bowl put all the above ingredients.
Gently mix to make sure everything is well combined.
Serve immediately.
Note:
Use your creativity to make your salad more interesting.

Fried Brinjal Salad / Wambatu Salad
Ingredients
Small purple brinjals - 6 cut into thin slices
( Brinjals from my mini garden)
Tomato - 1 small sliced
Chopped Lettuce leaves - a handful
Sliced onion - a handful
Chopped coriander leaves - 1 tsp
Lemon juice - 1 & 1/2 tbsp
Salt and pepper to taste
Turmeric powder - 1/4 tsp
Oil to deep fry
Method
Take a bowl add some salt and turmeric powder,add the sliced brinjals mix and leave it for 15 minutes.Squeeze out excess water and keep it aside.
Heat oil in a pan and deep fry the brinjals in batches till crisp on all sides.remove it on a kitchen towel to remove excess oil.Let it cool.
Take a wide bowl add all above mentioned ingredients and the fried brinjals,toss it well.
Serve them immediately.

Sprouted Fenugreek Salad
Ingredients
Chopped Onion - 1 tbsp
Chopped carrot - 1/2
Chopped cucumber- 1/2
Chopped tomato - 1 small
Chopped coriander leaves - 1 tbsp
Chopped avocado - 1 small
Chopped capsicum - 1 tbsp
Chopped walnuts - 1/8 cup
Chopped dates - 2
Sprouted methi/fenugreek - 1/2 cup
Dressing
Salt & pepper to taste
Lime juice - 2 tsp
Olive oil - 1 tsp
(Whisk above ingredients together in a bowl,pour this just before serving the salad)
Method
Take a bowl mix all the above mentioned ingredients together.
Keep it in the refrigerator till serving time.
Just before serving pour the dressing on top,gently mix & serve them cold.
Note:
Use any vegetable,fruits & nuts of your choice.

Moong Sprouts Salad
Ingredients
Moong sprouts-1 cup
Chopped Vegetables together -1/2 cup
( I used onion,cucumber,red capsicum,tomato)
Chopped coriander leaves-1tsp
Lime juice-1tbsp
Salt & pepper to taste
Chaat masala-1/4tsp
Chopped green chillies-1/2
Chopped pecan-1tsp
Dried cranberry-1tsp
Method
Mix lime juice,seasonings,chaat masala in a bowl,keep it aside.
In another bowl mix the moong dal,green chillies,coriander leaves,nuts,dry fruits & vegetables.
Just before serving pour the lime juice mixture,toss well & serve.

Ingredients

Yellow moongh dal -1/4 cup
(soak in water for 1 hour & drain out the water completely)
Salt to taste
Grated coconut-2tsp
Chopped green chillies-1 or 2
Chopped coriander leaves-few
Lime juice-1tsp

Method

Mix all above ingredients together.
Adjust chilly & salt according to your taste.
Serve!


Note:

Chopped cucumber or raw mango can also be added.

Kosambari / Kosumalli /Carrot,Cucumber & Moongh Dhal Salad

Ingredients
Grated Carrot-2
Yellow Moongh dhal-1/2 cup
(soak it in water for 30 minutes & drain)
Sal to taste
Chopped Coriander leaves-2tsp
Grated fresh coconut (Optional)-1tsp
Lime juice-2tsp
Chopped Cucumber(optional)
(I didn't use it)
Tempering
Oil-1tsp
Mustard & Urad dhal-each 1/2tsp
Hing-a pinch
Chopped green chillies-1
Curry leaves
Method
Mix all above ingredients together in a bowl.Heat oil in a pan & temper it.Mix this tempering into the above mixture.Mix it well & serve.

Moroccan-Style Carrot & Apple Salad


Ingredients slightly dry roasted & coarsely ground
Coriander seeds-1/4tsp
Jeera-1/8tsp
Walnuts-6
Other ingredients
Grated medium carrot-1
Chopped small apple-1
Chopped coriander leaves-little
Honey/agave-1tsp
Raisins-15
Salt & red chilly powder-to taste
Olive oil-1 tsp
Lime juice-1tsp
Grated garlic-1
(optional,I didn't use)
Method
Toss everything together & serve garnished with some chopped walnuts & coriander leaves .

Spicy Jicama Fruit Salad

Dressing
Lime juice-1tsp
Chilly flakes or chilly powder-1/4tsp
( I used chilly flakes)
Olive oil-1/4tsp
Honey-1/8tsp
Salt to taste
(mix all above ingredients together)
Other ingredients
Jicama cubed-a handful
Cubed ripe mango-1/2
Green grapes chopped-8
Chopped strawberry-4
Orange-1
Blueberry-a handful
Small pear chopped-1
or any fruit of your choice
Method
Put all the fruits in a bowl.Before serving pour the dressing on top,toss & serve it immediately.

Salad with Orange Dressing

Dressing
Juice of one small orange
Salt & pepper to taste
Roasted black sesame seeds-1tsp
(slightly crushed)
Balsamic vinegar-1/2tsp
Olive oil-1/2tsp
(Mix all above ingredients together)
Salad
Lettuce,shredded carrots & red cabbage-2 cups
Black olives-6
Raisins-10
Sliced pecan-12
Sliced onion-2tsp
Coriander leaves-little
Method
In a bowl put all ingredients under salad together.Before serving pour the dressing on top & toss it well.Serve immediately.

Pineapple Salsa

Ingredients
Crushed fresh or canned pineapple-3tbsp
(I used canned)
Finely chopped capsicum-1/4
Finely chopped onion-1/4
Finely chopped Jalapeno-1
(seeds removed)
Finely chopped tomato-1
Finely chopped coriander leaves-little
Salt to taste
Red chilly powder-1/4tsp
Sugar-3/4 tsp
Lime juice-2tsp
Roasted jeera powder-a pinch
Distilled vinegar-3tbsp
Method
Mix all above ingredients together & serve it with chips.

Fresh Vegetable Salad

Ingredients
Sliced Tomato,Onion,Pickled Jalapeno,Lettuce leaves,Carrot(any veg. of your choice)
(required quantity)
Salt & Pepper to taste
Olive oil-1tsp
Kraft's Thousand Island Dressing -required quantity
Method
Toss all above ingredients together & serve it cold.
Tips
Garnish it with any nuts for extra taste.
