Wheat Rava Sakkarai Pongal
Ingredients
Wheat Rava / Samba Godhumai - 1 cup
Split yellow moongh dal - 1/4 cup
Salt a pinch
Jaggery - 1 cup
Water - 4 cups
Ghee - 2 to 3 tbsp
Chopped cashew nuts - 15
Raisins - 1 tbsp
Edible camphor/ Pacha kalpooram - a generous pinch
Cardamom crushed -6
Method
Dry roast yellow moongh dal till light brown colour.
Add wheat rava & roast for 1 or 2 minutes,do not burn them.
Now pour water add salt & pressure cook till soft.
Mean while dilute the jaggery in water,filter to remove any impurities.
Pour this filtered jaggery liquid into the cooked pongal.
Add the cardamom powder & edible camphor, cook for couple more minutes in medium low flame.Switch off the stove.
Heat ghee in a pan & fry the nuts & raisins till light golden brown.
Pour this into the sweet wheat pongal.
Mix & serve them hot

Note :
a) Water quantity depends upon the quality of the wheat,add accordingly.
b) Quantity of jaggery can be adjusted according to your taste,i prefer the above measurement.
c) Once cooled your pongal sometimes get dry and tight,then add 1/4 cup of hot water or milk,you will get back to the right consistency.
e) Colour of the pongal depends upon the variety of the jaggery
f) Serve them hot with little ghee drizzled on top.

Wheat Rava Adai
Ingredients
Wheat rava-1 cup
(I used little bigger rava)
Rice-1/4 cup
Thur dhal-1/2 cup
Channa dhal-1/2 cup
Whole green moongh dhal-1/4 cup
Red chillies-3
Ginger-a small piece
Salt to taste
(Soak all above ingredients together for 1 hour.Then grind it to a semi smooth batter.)
Ingredients mixed into the batter
Chopped onion-1/4
Chopped curry leaves-little
Salt to taste
Hing-a pinch
(Mix these ingredients into the ground batter,add water to make it to a semi pouring batter.)
Oil-to cook the Adai.
Method
Heat a iron tawa,pour a ladle of batter.
Spread it to a semi thick circle.Pour a 1tsp of oil around the adai & little on the center.
In medium flame cook the adai till its crisp & brown on all sides.
Serve it hot with any chutney you like.

Note:
a) Grated coconut can be added for extra taste
b) Do not grind the batter to a smooth batter,it should be semi smooth.
c) Do not dilute the batter to running consistency.

Cracked Wheat & Horse Gram(Kollu) Kichidi

Ingredients
Cracked wheat-1 cup
Boiled kollu/horse gram-1/2 cup
Boiling water-3 cups
Salt to taste
Garam masala-1/4tsp
Onion chopped-1/4
Tomato chopped-1/4
Curry leaves-little
Tempering
Oil-3tsp
Mustard-1/2tsp
Urad dhal-1/4tsp
Channa dhal-1/4tsp
Jeera/cumin-1/4tsp
Red chillies-2
Green chillies-1
Method
Heat oil in a pan & temper it.Fry onion,curry leaves & tomato till its transparent.Add the cracked wheat,horse gram all the dry ingredients & saute for a minute.Pour boiling water,cover & cook in low flame  till its done.Serve it hot with raita or pickle.

Cracked Wheat Podi

Ingredients
Cracked wheat-1/8 cup
Urad dhal-1tsp
Channa dhal-1tsp
Coriander seeds-2tsp
Jeera-1/2tsp
Red chillies-3
Salt to taste
Hing-1tsp
Black sesame seeds-2tsp
Garlic-2
Method
Dry roast all above ingredients one by one till light brown.Cool, add salt & make a smooth powder.Take required quantity mix it with hot rice with little ghee & eat.

Cracked Wheat & Ridge Gourd Skin Chutney

Ingredients
Ridge gourd skin-1 cup
Green chillies-2
Ginger-a small piece
Coconut-3tsp
Salt to taste
Hing-1/2tsp
Cracked wheat-1/8 cup
Urad dhal-1tsp
Channa dhal-2tsp
Jeera-1/2 tsp
Coriander seeds-1/2 tsp
Oil-1tsp
Method
Heat 1/2 tsp of oil fry cracked wheat,dhals,jeera,coriander seeds & hing till light brown colour.Keep it aside.Heat 1/2 tsp of oil & fry ridge gourd skin,green chillies,ginger & coconut till light brown.Cool everything & grind together with salt to a smooth paste.Serve it with hot rice or with any tiffin.

Cracked Wheat Pongal /Godhumai Pongal /Godhumai Kara Pongal

Cracked Wheat-1/2 cup
Yellow moongh dhal-1/3 cup
Water-3 & 1/2 cup
Salt to taste
Grated ginger-1tsp
Tempering
Ghee-2tsp
Slightly crushed pepper-1/4tsp
Slightly crushed Jeera-1/2 tsp
Curry leaves-little
Cashew nut broken into small pieces-12
Method
Heat a pressure cooker & fry the moongh dhal till nice smell comes out.Add the ginger,cracked wheat,salt & water.Cook it till done.Temper it,mix well & serve it with chutney.
