Homemade Wheat Bread


Ingredients
Warm water-1 cup
Milk-1tbsp
Oil-2tbsp
Honey-2tbsp
Brown sugar-2tbsp
Salt-1tsp
Maida-1 & 1/2 cup
Whole wheat flour-1 & 1/2 cup
Yeast-2tsp


Method

Mix first 6 ingredients together in a bowl.Add maida,wheat flour & yeast knead it well for at least 10 minutes till soft & elastic.Keep it on a greased bowl ,cover & rest it for 40 minutes till it doubles.Punch the dough for few minutes & then shape it like a loaf.Keep it in a greased loaf pan.Cover & let rise in a warm place until almost doubled in size, about 30 minutes.Bake it for 30 to 35 minutes at 350 deg.C.Remove from pan cool it & cut into slices.

Chettinad Mutton

Ingredients for Grinding
Red chillies-4
Pepper-1tsp
Coriander powder-1tsp
Khus khus-1tsp
Jeera-1/2tsp
Fennel seeds-1tsp
Cloves-4
Cardamom-2
Cinnamon-1/4''
Coconut-1tbsp
Curry leaves-1/4 cup
Onion-1/2
Tomato-1/2
Ginger & Garlic paste-2tsp
Turmeric powder-1/2tsp
Salt to taste
(Heat 2tsp of oil & fry above ingredients till brown ,cool & make a paste)
Other ingredients
Mutton-1 pound
Oil-2tsp
Curry leaves-little
Mustard-1tsp
Red chillies-2
Method
Heat a cooker & put the mutton,ground paste & water.Cook it till done.Temper it with mustard,curry & red chillies(optional).
Note
This dish can be made dry or like gravy.....

Potato 65


Ingredients
Potato -3
(cut into strips)
Salt to taste
Chilly powder-1tsp
Ginger & Garlic paste-1tsp
Rice flour-1tsp
Corn flour-1tsp
Maida-3tsp
Yellow food colour (optional)-a pinch
Soy sauce-1tsp
Oil to deep fry
Method
Mix all above ingredients together & leave it for 10 minutes.Sprinkle very little water(the mixture would have already left some water ).Drop one by one in oil & deep fry.Cook it till its crispy & golden brown.Serve it hot with ketchup.
Tips
Do not add too much of water otherwise it will become like bajji & will not be crisp.The potato should be just coated with the mixture.

Ingredients
Basmati rice-1 cup
Water - 1 & 3/4 cups
Salt to taste
Peas-little (optional)
(I added only for some colour to the dish)
Sliced green chillies-1
Chopped fresh parsley-2tbsp
Chopped fresh mint -2tbsp
Ginger & Garlic paste-1tsp
Tempering
Olive oil-2tsp
Ghee-1tsp
Jeera-1/4tsp,Shajeera-1/4tsp,Cinnamon-1/4'',Star anise-1,Cloves-2,Cardamom-2,Pepper-5 Bay leaf-1
Dry Savory-1/4tsp
Dry Oregano-1/4tsp
Dry Rosemary-1/4tsp



Method
Heat oil & ghee in a pan temper it with above ingredients.
Add the ginger & garlic paste,green chillies & peas,.fry a bit,now add parsley,mint & rice saute for a minute.
Add salt ,water& cook the rice till done.
Your herb rice is ready with a wonderful flavour & colour.
Tips
Do not fry the spices too much as it may loose their colour ,flavour & its medicinal value.

Watermelon Skin Poriyal

Ingredients
Watermelon skin chopped(only white part)-2 cups
Tomato chopped-1/2
Onion chopped-2tbsp
Garlic chopped-2
Curry leaves-little
Rasam powder-1tsp
Chilly powder-1/4tsp
Salt to taste
Grated coconut-1tbsp
Turmeric powder-1/4tsp
Tempering
Oil-1tsp
Mustard-1/2tsp
Urad dhal -1/2tsp
Jeera-1/2tsp
Channadhal-1/2tsp
Method
Heat oil in a pan temper it.Add onion,garlic,tomato & curry leaves,fry till light brown.Add the watermelon skin & dry powders add water ,cover & cook it till dry & done.Garnish it with grated coconut.

Pudalangai Poriyal(Snake gourd)

Ingredients
Frozen Pudalangai-1 packet
(chopped)
Salt to taste
Yellow moong dhal-2tbsp
(soak it in water for 15 minutes)
Coconut grated-2tsp
Turmeric powder-1/4tsp
Curry leaves-little
Tempering
Oil-1tsp
Mustard-1/2tsp
Urad dhal-1/4tsp
Red chillies-2
Hing-1/4tsp
Method
Heat oil in a pan temper it.Add the vegetable,curry leaves,turmeric powder & salt.Saute for few minutes.Now add the dhal with the water,cover & cook it till done & dry.Garnish it with grated coconut.

Shrimp Coconut Fry

Ingredients
Shrimp-2 cups
Oil-2tsp
Mustard-1/2tsp
Jeera-1tsp
Curry & Coriander leaves
Grind to a smooth paste
Coconut-2tbsp
Onion-1/4
Garlic-6
Fennel seeds-1tsp
Pepper-1tsp
Salt to taste
Chilly powder-1/2tsp
Coriander powder-1tsp
Turmeric powder-1/4tsp
Garam masala-1/2tsp
Method
Heat oil in a pan temper it with mustard & jeera.Now add the shrimp & ground paste fry a bit.Sprinkle very little water cover & cook it till oil separates the masala.Garnish it with curry & coriander leaves


Cucumber Avakai

I brought some cucumbers from the store....after cutting & tasting found it was a bit bitter.Not worth doing a raita.So came out of this idea....a pickle with it .It was good & no bitter taste at all.The lime juice removed the bitterness.

Ingredients
Peeled & cubed cucumber-1 big
(It was 3 hand full)
Salt-3tsp
Chilly powder-2tsp
Lime juice-6tsp
Turmeric powder-1/2tsp
Sliced garlic-4
Oil -to cover the whole mixture(1/4 cup)
Dry grind to a smooth powder
Mustard-2 & 1/2tsp
Methi-1/2tsp
Method
In a bowl mix all above ingredients together.Pour enough oil to cover the whole mixture(oil should float on top).Store it in fridge.It will taste better to eat the next day.
Tips
Use bright red chilly powder,mine didn't give good colour.I have no idea about the shelf life.....so try to make small quantity & finish it as fast as you can.

Yam Poriyal

Ingredients
Frozen Yam-1packet
(Cut it into fine cubes)
Onion chopped-1tbsp
Garlic chopped-6
Curry leaves-little
Grated coconut-1tbsp
Tamarind paste-2tsp
(to remove the itchiness from yam)
Salt to taste
Turmeric powder-1/2tsp
Chilly powder-1tsp
Coriander powder-1/2tsp
Tempering
Oil-2tsp
Mustard-1tsp
Jeera-1/2tsp
Method
Heat oil in a pan temper it.Add onion,garlic,curry leaves & yam ,fry a bit.Add the dry ingredients,tamarind paste & sprinkle water .Cover & cook it till done .Add coconut & garnish it with curry leaves.
