Garlic Mushroom Recipe / Sauteed Mushrooms with Garlic / Easy Garlic Mushroom - Indo Chinese Recipes

Garlic Mushroom
Ingredients

Chopped garlic - 8

Chopped onion - 1

Sliced brown mushrooms - 3 cups

Sesame oil - 2 tbsp

Red chilly powder - 1 tsp

Salt and pepper powder to taste

Soy sauce - 1 tbsp

Vinegar - 1 tsp

Tomato ketchup - 2 tsp

Chopped spring onions - a handful

Method

Heat oil in a pan fry onion and garlic till colour changes, add the mushrooms and saute in high flame till they are cooked.

Reduce flame add  all other ingredients mentioned above and mix well till raw smell has disappeared and mixture is dry.

Switch off the flame garnish with spring onions. Best served as a side dish for vegetable fried rice.

Paneer Bao Recipe / Bao Buns Recipe / Paneer Gua Bao / Taiwanese Folded Buns - How To Make Bao Buns Recipe

Paneer Bao
Yields: 12 buns

Ingredients for the dough

Maida / all purpose flour - 2 cup

( add 1 or 2 tbsp of flour if your dough is sticky)

Milk powder - 1 & 1/2 tbsp

Dry Yeast - 1 & 1/2 tbsp

Luke warm water - 1 cup

Salt - 1/2 tsp

Sugar - 2 tbsp

Method

Take warm water in a bowl add the yeast ,sugar and salt mix to dissolve, cover and wait for the yeast to activate may be 5 to 10 minutes. 

Once its foamy add the flour and milk powder gently mix to form a soft dough. If dough is sticky add more flour to get the right consistency.

Dough should not be very stiff like we knead for roti. Grease a bowl and place the dough , cover with a tight lid and wait for 1 to 2 hours for the dough to double in size.

Punch the dough slightly to knock out the air and knead once , divide the dough into small equal size balls. Roll the balls into thick poori or roll out the whole dough like a thick sheet and cut into circles using a cookie cutter.

Apply oil on both sides of the bun and fold it into half, place these on a parchment paper or banana leaf. Applying oil prevents the fold of the to bun to stick together.

Cover and rest for another 30 minutes to rise. Steam these buns till they puff up. Once cooked they look glossy and dry on top. 

I covered the steamer lid while steaming with a cloth so the water does not drip down on the buns and the towel will absorb the water (this step is optional).

Filling ingredients

Paneer cut into small cubes - 2 cups

Red chilly powder - 1 tsp

Coriander powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Salt to taste

Jeera powder - 3/4 tsp

Chaat masala - 1/2 tsp

Garam masala - 1/2 tsp

Curd - 1/4 cup

Ginger and garlic paste - 1/2 tsp)

( Take a bowl add all the above mentioned ingredients except onion and oil, mix well and marinate for 10 minutes) .

Chopped onions - 1/4 cup

Oil - 3 tsp

Garnish

Carrots, Cucumber - cut into thin strips

Chopped coriander leaves

Method

Heat oil in a pan fry the onions till colour changes but still has the crunch , add the marinated paneer along with the curd mixture. In high flame mix well till raw smell has disappeared and paneer is dry.

Switch off the stove garnish with coriander leaves.

Assembling

Take a bao bun fill it up with some panner mixture, garnish with cucumber. carrots and coriander leaves. These as served as an appetizer in Taiwan.

Note: 

Be creative in making your own filling. Today i have shown a basic paneer filling.

Mediterranean Fish Bake
Ingredients

Boneless fish fillet - 1 large

( I used Tilapia)

Salt and pepper powder to taste

Red chilly powder - 1 tsp

Fennel powder - 1/4 tsp

Cumin powder - 1/8 TSP

Chopped olives - 1/4 cup

Potato - 1 medium size

( peel the skin cut in 1/2 and then slice )

Sliced onion - 1/4 cup

Cherry tomato - 1/4 cup

Chopped garlic - 4

Crumbled feta cheese - 1/2 cup

Chopped parsley - a handful

( I used coriander leaves today)

Olive oil - 3 tbsp

Lemon juice - 1 tsp

Method

Take a baking dish pour olive oil and all the ingredients except the fish and feta cheese, toss well till combined.

Broil them in LOW till the vegetables are roasted and light brown.

Remove from the oven and place the fish on top of the roasted vegetables , sprinkle some salt and pepper and evenly add the crumbled feta cheese on top and drizzle olive oil.

Again BROIL in LOW till the fish is cooked and feta cheese is in light brown on top.

Sprinkle freshly chopped  coriander leaves and squeeze some lemon juice on top and serve hot.

Fried Fish With Brown Butter Sauce
Ingredients for brown butter

Butter - 1 & 1/2 to 2 tbsp

Garlic salt or Regular salt to taste

Pepper powder to taste

Chopped garlic - 3

Crushed fresh Sage

( use any herb today i have used basil)

Lemon juice - few drops

Fried fish ingredients

Fish fillet - 1 large

( use any fish today i have used Tilapia)

Maida / all purpose flour - 1 tsp

Salt and pepper powder to taste

Olive oil - 2 tsp

Garnish ingredients

Red chilly 

Pepper powder

Lemon juice

Few basil leaves

Method

Pat the fish with a kitchen tissue to remove extra moisture.

Sprinkle salt, pepper powder, olive oil rub both sides of the fish, sprinkle maida on both sides till well dusted. Place the fish inside the air fryer basket. You can even fry with some oil in a pan on stove.

Heat Gourmia air fryer press seafood mode and fry for 10 minutes turning the fish after 5 minutes. To get a crust i broiled the fish for 10 minutes. Each air fryer is different so temperature and frying time may vary.Keep the fish aside.

Heat butter in a pan when melted add the garlic and cook till butter changes to light golden brown colour and garlic has been roasted.

Switch off the stove and add the salt , pepper powder, few drops of lemon juice and basil mix well.Your brown butter sauce is ready

Assembling

Take a plate pour some brown sauce at the base place the fried fish on top and pour the remaining sauce on top.

Sprinkle the red chilly flakes, pepper powder, drizzle some lemon juice and serve.

Ingredients

Carrots - 2 medium sized
( peel the skin and cut into finger size 1/4 inch. thick pieces or use baby carrots)
Salt to taste
Brown sugar - 1 tbsp. (heaped)
( add more or less according to the sweetness you want)
Chopped parsley - 2 tbsp
Butter - 1 tbsp

Method

Bring water to a boil in a sauce pan drop the carrots and cook for 2 to 3 minutes only. Do not over cook or till soft.
Heat a pan add the butter , carrots, salt and brown sugar gently mix till the carrots are tender well coated and caramelized.
Switch off the stove sprinkle the parsley and enjoy!

Steamed Fish with Lime Garlic Coriander
Ingredients for the sauce

Crushed coriander leaves with the stems - a handful

Crushed green chillies - 2

Ripe red chilly - 1

Crushed garlic - 4

Fish sauce - 2 tbsp

Vegetable stock - 2 cups

Salt to taste

Lemon juice - 1/2 of of medium size lemon

Sugar - 1 & 1/2 tsp

( Take a bowl mix the above ingredients and keep it aside)

Ingredients for steaming

Fish fillet - 1 medium size

Lemon grass stalks - 2

Salt to taste

Method

Place the fish and lemon grass in a bowl sprinkle some salt and steam for 5 minutes.

Remove the lid and pour the sauce on top of the fish cover again  and steam for a minute and switch off the stove.

Remove the lemongrass stalks and serve hot with rice.

Ingredients

Rice paper wrappers - 6

( use a scissor to cut into 4 pieces, you can get it from any Asian store )

Oil to deep fry

Spice powder to sprinkle on top

Salt to taste

Red chilly powder - 1 tsp

Grated cheese - 1 tbsp

( I used dry parmesan cheese)

Garlic powder - 1/4 tsp

( mix all these ingredients in a bowl and keep it aside,This is a basic spice powder ,use your imagination to eat it in a more interesting way )

Method

Heat oil in a pan and deep fry each rice paper wrappers till they puff up.

Plate all the fried rice papers in a plate and sprinkle the spice powder generously on top.

Enjoy as a quick snack.

Ingredients for marinating the tofu

Firm tofu cut into medium size cubes - 2 cups

( Place a heavy weight on top of the firm tofu slab for 20 minutes for extra water to drain out.Pat dry using a kitchen tissue and then cut into cubes)

Corn flour - 2 tbsp

All purpose flour / Maida - 1 & 1/2 tbsp

Salt & Pepper powder to taste 

Ginger and garlic paste - 1 tsp

Red chilly powder - 1tsp

( Take a zip lock and add all the ingredients, put the tofu too and shake the bag till all the tofu pieces are well coated with the flour mixture.Deep fry or shallow fry in batches till golden brown on all sides and keep it aside, Save some fried oil to sauté the vegetables.)

Other ingredients

Sliced onion - 1/2 cup

Sliced Red bell pepper - 1/2 cup

Chopped ginger and garlic - 1 tsp

Dry red chillies - 6

Cashew nuts - 15

Salt to taste

Red chilly powder - 1/2 tsp

Tomato ketchup - 3 tbsp

Soy sauce - 1 tbsp

Sugar - 1/2 tsp

Spring onions - a handful

Oil - 2 tbsp

( use the tofu fried oil)

Stock /Broth - as needed

( add only if you don't want a dry dragon tofu)

Method

Heat oil in a pan add cashew nuts,red chilles,ginger and garlic,saute till color changes.

Add the onions and capsicum sauté in high flame for a minute. Reduce flame add the sauces,salt,sugar,red chilly powder and toss well.

Lastly add the fried tofu pieces quickly give a mix and switch off the stove.

Garnish with spring onions and serve hot with Fried rice.

Note

a) Use dark soy sauce for this dish

b) Adjust the sauces and spices according to your taste.

c) If you don't want a dry mixture then add some stock/broth after adding the sauces.

Ground chicken - 1 cup

Marinara sauce - 1/4 cup

Italian seasoning - 1/4 tsp

Chopped fresh parsley - 2 tbsp

Chilly flakes - 1 tbsp

Chopped onion - a handful

Garlic salt - as needed

Zucchini flesh chopped

Olive oil - 3 tsp

Other ingredients

Zucchini - 1 large

( trim the edges and cut into half and scoop out the flesh,use the flesh for filling)

Mozzarella cheese - as needed

Baby potatoes - 4 and garlic -2

( I cut them and roasted along with zucchini boats) - Optional

Baked Stuffed Zucchini Boats
Method

Heat oil in a pan and fry onion, parsley and zucchini flesh till color changes. Add the ground chicken, seasoning and fry in high flame for couple minutes.

Lower the flame and add the marinara sauce, cook till the mixture thickens.switch off the stove and mix in the parsley leaves,

Grease a baking dish and arrange the zucchini boats and potatoes and garlic on the sides

Take the cooked chicken mixture and fill it inside the zucchini boats.

Sprinkle cheese and parsley on top and bake at 400 deg.F for 25 minutes or till cooked.

Serve hot!

Use your imagination to create interesting fillings

Ingredients

All purpose flour / Maida- 1 cup

Wheat flour - 1 cup

Salt - 1 tsp

Olive oil - 2 tbsp

Warm water - 1 cup + 1 tbsp

Sugar - 1 tbsp

Dry yeast - 1/2 tsp heaped

( all ways use good quality yeast to get the best result)

Method

Add yeast and sugar to 1 cup of warm water mix cover and rest to activate in a warm place ( till foamy).

Take a wide bowl add both the flours,oil,salt and the activated yeast mixture,gently mix with a wooden spoon.Add 1 tbsp of water if needed and using your hand knead the dough for 5 minutes till soft.

Grease a bowl with oil and place the dough,cover the dough and rest to rise for 3 hours at a warm place.

Divide the dough into equal size balls.Roll out each ball into a semi thick disc.

Cover with a wet cloth and rest for another 30 minute.

Heat a tawa when hot place the roll disc and cook on both sides till light brown and puffs up.While cooking gently press with a cloth for the pita bread to puff.

Remove from tawa and serve warm with any dip you like.

Long Japanese purple eggplant - 3

( slit the eggplants, do not cut till the end)

Chopped onion - 1/2 cup

Chopped garlic - 5

Chopped spring onions - a handful

Korean chilly powder - 1 tbsp

Korean Hot pepper paste - 1 tbsp

Pepper powder - 1/2 tsp

Soy sauce - 2 tbsp

Sugar - 3/4 tsp

Sesame seeds - 1 tsp

Sesame oil - 1 tbsp

Method

Heat 1 tsp of oil and add the garlic,onion and spring onions,saute till onion changes it's colour.

Switch off the stove and add all other ingredients mentioned above and mix well.

Stuff this mixture into the slit brinjals,arrange these on a bowl and steam till cooked.

Serve hot as a side dish for rice.

Ingredients

Large potato - 1

Salt and pepper powder to taste

Chopped fresh parsley - 1 tbsp

Butter - 2 tbsp

Olive oil - 2 tbsp

Crushed garlic - 4

Crushed rosemary or thyme - 1/2 tsp




Method

Wash and pat dry the potatoes.

Heat butter,oil,garlic and rosemary in a pan and in low heat cook till garlic changes colour.

Switch off the stove cool and filter the oil.

Keep 2 chopsticks or wooden spoon handles either side of the potato and cut into thin slices,The wooden sticks stops us from cutting the potatoes till the end.( see picture)

Place the potato on a baking tray and brush the garlic oil all over and between each slices and sprinkle salt & pepper powder.

Bake these at 390 deg F. for total 30 minutes. After 10 minutes take the potatoes out from the oven and brush it up with remaining oil and bake till light brown and crisp.

Each oven is different so keep an eye on the baking time and temperature.

Lastly garnish with chopped parsley and enjoy hot!

Ingredients

Frozen Cauliflower Rice - 2 cups

Egg - 1

( scrambled with little salt and pepper powder)

Soy sauce - 3 tsp

Chopped ginger and garlic  together - 1 tsp

Chopped onions - a handful

Chopped spring onions - a handful

Chopped holy basil leaves - 2 tbsp

Salt and pepper powder to taste

Sesame oil - 1 tbsp

Method

Heat oil in a pan add onions,basil leaves,chopped ginger and garlic and saute till onions changes its colour.

Add the cauliflower,soy sauce,salt and pepper powder,mix well and let it cook for 1 or 2 minutes. Cauliflower rice will cook very fast,

Add the scrambled eggs,spring onions and toss well.

Switch off the stove and garnish with some holy basil leaves and serve hot!

Note:

If giving for kids and want to make it more colorful add some carrots and peas or any vegetable of your choice.

Medium size raw shrimp cleaned - 20
Holy basil leaves - 1/2 cup
( add more if you want a strong flavour)
Garlic - 8
Diced onion - 1/4 cup
Red Thai chillies - 8
( I did not have so soaked 8 kashmiri chillies in hot water for 10 minutes)
Red chilly paste - 1/4 tsp ( optional)
( I added for extra hotness)
Brown sugar - 1 tsp heaped
Salt to taste
Oyster sauce - 1 tsp
( Today i did not use as i ran out of the sauce)
Fish sauce - 1 tsp
Soy sauce - 1 tbsp
Stock or water - 1/4 cup
Oil - 2 tbsp

Method
Crush red chillies,garlic and onion to a coarse mixture,keep it aside.
Heat oil in a pan add the crushed chilly garlic mixture and saute till raw smell has disappeared.
Add the shrimp and fry in high flame till colour changes.
Lower the flame and add the salt, brown sugar, soy sauce, fish sauce and sauté for couple minutes.
Add stock or water if the mixture is dry,cook till shrimp is cooked well.
Lastly add the basil leaves sauté and switch off the stove.
Do not cook too much once the basil is added you will loose it's flavor.
Best served hot with rice.

Thick coconut milk - 250 ml
( I used tinned coconut milk)
Fish sauce - 1 tsp
Red chilly paste - 2 tsp
Lime juice - 2 tsp
Salt to taste
Brown sugar - 1 tsp
Grated ginger - 1 tsp heaped
Grated garlic - 6
Grated lemongrass - 1 tsp
Grated lemon zest - 1/2 tsp
Chopped spring onions - 1 tbsp
Sliced jalapeno chilly - 1 small
Tilapia fish fillets - 1 large fillet cut into  6 small pieces
( wash and marinate with some salt ,pepper powder and 1/8 tsp of turmeric powder for 10 minutes)
Coconut oil - 1 & 1/2 tbsp

Method
Heat some coconut oil in a pan and place the marinated fillets and fry till colour changes to light brown on all sides,remove to a plate.
In the same pan add remaining oil and saute ginger,garlic,lemongrass and chillies till raw smell as disappeared.
Add the brown sugar,fish sauce and chilly paste saute for a minute and pour the coconut milk.
Check for salt and simmer for 2 minutes and add the fried fish and lemon zest cook for a minute and switch off the stove.
Lastly pour the lemon juice and garnish with spring onions.
Best served with sticky rice.

Korean Corn Cheese / Corn Cheese Recipe / Konchijeu

Korean Corn Cheese
Ingredients
Whole corn kennels - 1 can ( 15 oz can )
Salt and pepper to taste
Mayonnaise - 3 tbsp
Chopped spring onions - 1/4 cup
Mozzarella cheese - 1/2 cup
Method
Take a bowl add all the above mentioned ingredients and mix well.
Grease a iron skillet and pour the corn mixture and spread evenly.
Bake this at 400 deg.F for 10 minutes and broil for few seconds till the top turn slight brown.
Serve immediately!

Note:
Serve this as an appetizer with chips or as a side dish.

Braised Tofu
Ingredients
Firm tofu slices - 8
( cut into any thickness you want)
Sesame oil - 1 tbsp
Chopped onion - a handful
Chopped garlic - 8
Chopped spring onions for garnish
Ingredients for the sauce
Water - 1/4 cup
Soy sauce - 1 tbsp (heaped)
Honey or Maple Syrup - 1 tbsp
Salt to taste
Roasted sesame seeds - 1 tsp
Korean chilly powder - 1 tsp (heaped)
Chopped spring onions - 2 tbsp
Sesame oil - 1 tsp
( mix everything well and keep it aside)

Method
Heat oil in a pan arrange the tofu slices and in low flame fry till its slight brown on all sides.Keep it aside.In the same pan add a teaspoon of oil and fry onions,spring onions and garlic till they slightly change colour.
Now pour the sauce and arrange all the tofu pieces on top.
Cover it with a lid and simmer till all the tofu has absorbed the sauce.
Switch off the stove drizzle 1/2 tsp sesame oil and garnish with spring onions.
Serve hot with sticky rice.

Potato Cheese Pancakes
Yields : 6
Ingredients
Potato - 2 medium size
( boil the potatoes peel out the skin and mash till smooth)
Salt and Pepper powder to taste
Sugar - 1/8 tsp
Corn flour - 3 tsps ( heaped)
( add more if needed)
Oil to shallow fry
Mozzarella cheese as needed
Method
Take a boil add the mashed potato,salt,pepper powder,sugar and corn flour,mix well till you get a smooth non sticky dough.Divide the dough into equal size balls.
Take a ball and flatten it place 1 or 2 tsps of cheese and close.Roll it well and slightly flatten.Make sure its well sealed so the cheese does not come out while frying.
Heat oil in a pan and arrange these pancakes and in medium low flame fry till nice golden brown on all sides and crisp.Remove it onto a kitchen tissue for excess oil to get absorbed.
Enjoy hot!

Instead of corn flour you can add all purpose flour or rice flour.

Chinese Style Pasta Stir Fry
Ingredients
Pasta any kind - 2 cups
( cook as per the direction on the packet)
Salt and Pepper powder to taste
Soy sauce - 1 tbsp
Chilly sauce - 2 tsp
Vinegar - 1 tsp
Chopped spring onions - a handful
Chopped garlic - 1 tsp
Chilly flakes - 1 tsp
Sliced onion - a handful
Mixed vegetables of your choice - 1 cup
( I used red bell peppers,carrots,peas)
Shredded cabbage - 1 cup
Chopped celery - 1 tbsp
Sesame oil - 1 tbsp
Method
Heat oil in a pan saute garlic,chilly flakes and onion,fry till onions are translucent.
Now add the celery and vegetables fry in high flame till they are crunch and sligtly cooked.
Add the seasonings,soy sauce,chilly sauce and vinegar mix well.
Add the cooked pasta and toss well till well combined.
Switch off the stove add spring onions mix and serve hot!
Note:
You can also added scrambled eggs, cooked shredded chicken or sauted shrimp.
