Cottage Cheese Bagel

Ingredients

Cottage cheese - 1 cup ( blend till smooth, do not add water)

All purpose flour - 1 & 1/4  cup or add few spoons more if needed

( Original recipe says 1 cup flour)

Baking powder - 1 tsp

Salt - 1/2 tsp

Bagel seasoning to sprinkle on top

Egg - 1 beaten for egg wash

Method

Take a bowl add the cottage cheese, flour, salt & baking powder, mix it with a spatula.

Transfer to a generously floured work surface , place the dough.

Using your fingers mix the dough, this process will be a bit messy and sticky.

 Add more flour if needed and gently knead to form a soft non sticky dough.

Divide the portion in 4 parts , gently shape it into doughnuts making a hole in the center.

Brush each bagel with egg and sprinkle bagel seasoning on top.

Bake at 375 deg. F for 25 minutes or till light brown on top.

Each oven is different so temperature & baking time may vary.

Remove from oven and enjoy with any spread you like.

Note:

a) Add 1 cup flour and slowly add remaining 1/4 cup  flour till you get a non sticky dough. Flour quantity may vary according to the variety of the cottage cheese.

b) These can be air fried too.

c) Fermentation not needed, you can bake immediately. If you have time you can cover and rest it for 10 minutes before baking.

d) In some recipes they just strain the extra water out from the cottage cheese and add flour and knead the dough.

Garlic powder a generous pinch to sprinkle on top

Egg - 1 beaten for egg wash

Method is the same as above bagel recipe. But this was not a sticky dough, the consistency was perfect and was able to shape it with clean hands.

Ingredients for the batter

Idli rice - 3 cups

Urad dal - 1 cup

Poha/Aval - 1/4 cup

Channa dal - 1/4 cup

Methi / Fenugreek seeds - 1& 1/2 tsp

Salt to taste

Method

Take all the above mentioned ingredients together in a bowl.

Wash well & soak it in water for 3 hours.

Grind this to a semi smooth batter in grinder or blender.

Add water in intervals while grinding , consistency of the batter should be semi thick.

Remove it in a bowl add salt and mix the batter well.

Cover it with a lid, leave the batter outside for fermentation for at least 8 hours or overnight

Next day beat the batter , remove needed batter into a bowl.

Add little water & dilute the batter if very thick.

Heat a tawa spread a ladle of batter to a semi thick circle , drizzle ghee or butter generously around the dosa .Sprinkle chutney pudi on top and cook in low flame

Once brown at the bottom remove from the griddle , do not flip the dosa.

Enjoy with chutney or sambar!.

Sweet Potato Black Bean patties

Ingredients

Finely chopped vegetables of your choice - 2 cups

( I used beans, cauliflower, carrot, capsicum)

Boiled and mashed sweet potato - 1/2 cup

Canned black beans - 1 can ( 15 oz)

( Drain out the water completely and rinse them with fresh water. Strain the water completely and mash them coarsely using a potato masher)

Chopped onion - 1/2 cup

Chopped garlic - 6

Egg - 1

Bread crumbs - 1/4 cup

( add more if your mixture is sticky)

Taco seasonings - 2 tbsp

Paprika - 1 tbsp

Salt to taste

Oregano - 1 tsp

Pepper powder - 3/4 tsp

( Add seasonings according to your taste )

Turmeric powder - 1/4 tsp ( optional)

Olive oil - 1 tsp

Coconut oil - 2 tsp

Method

Heat both oils in a pan add onion and garlic sauté till they change color. 

Now add the finely chopped vegetables and sauté for few minutes till they are cooked.

Add all the spices according to your taste mix well and switch off the stove, let the mixture cool completely.

Add beaten eggs, mashed sweet potato and the mashed beans to the vegetable mixture. you can also use a food processor to combine the ingredients.

Transfer the mixture to a bowl and mix the bread crumbs. Make sure your mixture is not sticky if needed add more bread crumbs.

Keep it in the refrigerate for 10 minutes so shaping the patters will be easy.

Grease your palms with oil and take small portion of the mixture and flatten it to the thickness you want.

Arrange them in an air fryer spray them with oil and air fry at 375 deg. for 15 minutes, after 8 minutes turn the patties to cook the other side.

Once done cool and enjoy the way you want to eat them.

Note:

Use your imagination to make them more creative like adding cooked rice, oats, quinoa or mixed beans.

This can be baked in the oven too or cook them on a griddle.

Freeze the leftovers.

Other ingredients

Thick curd - 2 cups

Water as needed to dilute

Ice cubes as needed

Ingredients to marinate the eggplants

Eggplants cut into semi thick slices - 6

( Fat eggplants works best or use any kind)

Salt to taste

Red chilli powder - 1 tsp

Turmeric powder - 1/4 tsp

Oil - 1 tsp

Tempering Ingredients

Oil - 2 tsp

Chopped onion - a handful

Mustard - 1 tsp

Cumin - 1/2 tsp

Red chilli - 2

Kashmiri red chilli powder - 1/2 tsp

Curry leaves few

Other ingredients

Thick beaten curd -  2 cups

Chopped coriander leaves for garnish

Sugar a pinch ( optional)

Oil to shallow fry the eggplants

Method

Heat oil in a pan and shallow fry the eggplant slices till light brown on both sides, remove to a plate and let it cool completely.

In the same pan remove excess oil and temper with above ingredients. Fry the onion till colour changes, add the red chilli powder and switch off the stove

Pour the curd on top of the eggplants and top it up with the tempering, sprinkle sugar and garnish with coriander leaves.

Serve with roti or rice .

Ingredients for the batter

Raw rice - 1/4 cup

Idli rice - 1/4 cup

Thur dal - 1/4 cup

Channa dal - 1/4 cup

Black urad dal with skin - 1/4 cup

Dry red chilli - 8 or according to your spice level

Fennel seeds - 1 tsp

Other ingredients

Chopped onions - a handful

Chopped curry & coriander leaves - a handful

Coconut bits - 1/4 cup

Grated bottle gourd - 1 cup

Salt to taste

Oil as needed to cook the adai

Method

Wash & soak the rice and dals for 3 hours, add fennel and red chilli in a blender and grind coarsely.

Then add the rice dal mixture add very little water and grind to a coarse thick batter.

Transfer to a bowl and add other remaining ingredients, mix well till combined. Fermentation is not needed for this recipe.

Heat a iron tawa add 2 tbsp of oil add a ladle of the batter and spread. Pour oil around the adai and cook till golden brown and crisp on both sides.

Remove to a plate and enjoy with chutney or jaggery.

Ingredients

Sugar - 1/2 cup

Egg Yolk - 1 

Eggs - 2 

Heavy cream - 1 tbsp. 

Lemon juice - 1/2 cup 

Butter - 2 tbsp. 

Method

Whisk together eggs , egg yolk and sugar until evenly incorporated.

Add lemon juice , heavy cream and butter in a sauce pan and simmer over medium heat for few minutes.

Gradually pour the lemon mixture into the egg mixture and whisking continuously to avoid curdling. 

Transfer back to the pan and keep stirring in medium high heat until thickened. 

Strain the mixture to remove any lumps.

Cool completely and use it as a topping on pastries, cupcakes, tarts, yoghurt, Parfaits, Crepes, Toast, etc.

Tomato cut into half

Chilli flakes

Spring onion

Coriander leaves

Method

Heat a non stick pan and grease it with butter or oil. Arrange the cut tomatoes in a circle shape.

Pour the egg yolk carefully into the center of the cherry tomato. Pour the white around and surrounds the pan. Arrange the spring onion , cilantro on the egg whites.

Sprinkle salt and chilli flakes on top, cover and cook in low flame till eggs are cooked.

Stritch your imagination to make it even more interesting.

Serve hot!

Sliced onions - a handful

Chopped green chillies - 1

Jeera powder - 1/2 tsp

Amchur powder - 1/2 tsp

Tempering

Mustard oil - 2 tsp

Turmeric powder - 1/2 tsp

Kashmiri red chilly powder - 3/4 tsp

Kasturi methi - 1/2 tsp

Method

Take a wide bowl add all the ingredients and gently mix till combined.

Heat oil in a pan and temper it with above ingredients.

Pour the tempering into the potato curd mixture , mix and enjoy with rice!

Note:

You can adjust all the ingredients according to your taste.

Baked Gulab Jamun Cake 

 Ingredients

All purpose flour / Maida - 2 tbsp. ( heaped )

Milk powder - 1/4 cup

Cardamom - 3 ( powdered)

Baking powder - 1/4 tsp

Baking soda - 1/8 tsp

Curd - 2 tbsp.

Ghee - 1 tbsp.

Sugar - 1 tbsp.

Rose water - few drop

Saffron strands - few

Milk - little less than 1/4 cup ( add as needed )

Ingredients for the syrup

Sugar - 1/2 cup

Water - 1/4 cup

Rose water - a drop

Saffron strands - few

Crushed cardamom pods - 2

( Dissolve sugar in water and bring it to a boil, once the syrup is sticky switch off the stove. Add the essence , saffron and cardamom powder and mix well )

Method

Take a bowl add milk powder, ghee, curd , milk & sugar , mix it well still sugar is dissolved.

Add the maida , baking powder, baking soda , saffron , rose essence and cardamom powder mix well till combined.

Grease a baking dish with ghee and pour the batter, tap the container for the batter to spread evenly.

Bake at 350 deg. F for 8 to 10 minutes till light brown & fluffy.

Prick with a tooth pick or stick in the center if comes out clean then the cake is cooked.

Remove from the oven cool a bit and loosen up the sides of the cake and using fork prick the cake on top for the sugar syrup to penetrate into the cake.

Pour the hot syrup all around the cake, cover and rest for 10 minutes and invert onto a plate.

Garnish with nuts and serve warm.

Notes:

a) Do not over bake the cake they can turn dark brown, chewy and flat. An extra 3 minutes turned the  color of my cake . Each oven is different so temperature & baking time can vary , so keep and eye.

b) Do not boil the syrup till thick then the cake will not absorb the syrup. Syrup should be sticky thin syrup.

c) Soaking the cake a bit long will taste even more better instead of enjoy it right away.

d) Milk quantity may differ so add accordingly to get the right pour consistency.

Channa dal - 1/8 cup

( soak it for 30 minutes , drain out the water and use)

Finely chopped curry leaves - 2 tsp

Water as needed

Oil to deep fry

Method

Take a wide bowl add all the ingredients and mix till combined.
Gently add water little by little to form a soft non sticky soft dough.
Pinch small portion of the dough , grease your fingers , gently press to form a long oval shape.
Deep fry these in hot oil till crisp and light brown on all sides.
Cool and store it in a tight container.
Enjoy as a tea time snack.

Honey or Sugar ( optional)

Chopped pineapple - 2 cups

White vinegar or Lemon juice - 1 tbsp

Thenga Puli

Ingredients ground to a smooth paste

Small onions - 6

Grated coconut - 1 cup

Tamarind - a small gooseberry size

Red chilly powder - 1 tsp

Coriander powder - 1/2 tsp

Turmeric powder - 1/4 tsp

Salt to taste

Roasted methi seeds - 1/4 tsp

( Pour water and grind the above ingredients to a smooth paste, dilute with little water)

Tempering

Coconut oil - 2tsp

Chopped small onion - 4

Curry leaves few

Red chilies - 2

Mustard - 1tsp

Method

Heat oil in a pan temper with above ingredients. 

Once onions are fried till light brown pour the ground paste. 

Mix well and cook in low flame till bubbles starts to appear, switch off the stove.

There are chances of curdling so do not give a boil.

Serve this with Dosa or enjoy with rice.

Carrots - 1 medium size 

( shave it to long thin ribbons)

Grated Garlic - 1

Salt to taste

Rice vinegar - 2 tsp

Soy sauce - 1 tsp

Sesame oil - 1 tsp

Sesame seeds - 2 tsp

Chopped coriander leaves - 1 tbsp.

Eggless Upside Down Pineapple Cake

Ingredients for the base

Canned pineapple slices-7
Cherries-10
Butter-1tsp
Brown sugar-2tbsp

For the batter

Maida/All purpose flour-1 cup
Baking powder-1tsp
Baking soda-1/2tsp
Pineapple essence-1tsp
Oil-2tbsp
Butter-2tbsp
Condensed milk-14 oz -1 can

Method

Pre.heat oven to 300 deg. take a cake pan add the butter, place the pan over the flame.

When the butter melts add the brown sugar, and caramelize it. Arrange the pineapple slices and cherries on the caramel, keep aside.

Sieve maida, baking powder & baking soda & keep it aside.

Take another bowl beat all the above ingredients till smooth , Pour this on top of the pineapple slices.

Bake it for 20 minutes or till done. Cool completely , unmold & serve.

Tempering Ingredients

Oil - 1/4 cup
Mustard - 1 tsp
Urad dal & Channa Dal - 1 tsp
Jeera - 1/2 tsp
Red chilies - 2
Curry leaves few
Crushed garlic - 3
Hing - 1/2 tsp

Ingredients ground to a thick paste

Methi cubes - 2
( I used frozen methi cubes, if you get fresh methi leaves use it)
Salt to taste
Red chilly powder - 1 tsp
Turmeric powder - 1/2 tsp
Garlic - 2
Chopped onion - a handful
Grated coconut - 1 tbsp. heaped
Tamarind - a small lemon size
( Soak it in some warm water)
Grind all above ingredients to a smooth thick paste. Do not add water if needed sprinkle some water.

Other ingredients

Jaggery - 2 tsp heaped

Method

Heat oil in a pan temper it with above ingredients.
Lower the flame and add the ground paste cook this mixture till oil separates the pan.
Before switching off the stove add jaggery mix well.
Best served with Idli , dosa or mixed with rice and eaten.

Note:

a) Adjust tamarind and chilly powder according to your taste.
b) Fresh methi is always the best to make this pachadi.

Kavuni Arisi Curd Rice

Ingredients

Red rice / Forbidden Rice /  Kavuni arisi  - 1/2 cup

Water - 2 & 1/2 cups

Milk - 1/2 cup

Curd - 1/2 cup 
( make sure curd is not sour)

Salt to taste

Tempering

Ghee - 2 tsp

Mustard, Urad dal, Channa dal - each 1 tsp

Jeera - 1/2 tsp

Whole pepper - 1/4 tsp

Hing - a pinch

Chopped green chilly - 1

Chopped ginger - 1 tsp ( heaped)

Peanuts - 3 tsp

Curry leaves - few

Grated carrot and cucumber - together 1/4 cup

Method

Wash the rice and grind to a coarse mixture, do not powder it fine.

Add it into a pressure cooker pour water and pressure cook till soft and mushy.

Once cooled open the pressure cooker while still hot mash the rice well , pour the milk , curd add salt mix till combined.

Heat oil in a pan and temper it with above ingredients, pour the tempering into the rice mixture , add the carrots and cucumber , mix till combined.

Enjoy warm!

Note:

Rice should be in a loose consistency not thick so add milk and curd accordingly.

Ingredients

Dark red carrot or use regular carrots - 1 medium size

( cut into thick strips are cubed)

Beetroot - 1 medium size

( cut into thick strips are cubed)

Slit green chillies - 4

Water - 1 liter or more if needed

Salt - 1/4 tsp

Black salt - 1/2 tsp

Hing - 1/4 tsp

Coarsely grounded yellow mustard seeds - 1 tbsp.

Method

Take a wide glass jar add all the ingredients mix them well.

Cover it with a lid or a muslin cloth, do not close the lid tight.

Keep it in sunlight for 3 days, everyday using a wooden spoon stir.

If your kanji is tasting tangy then your fermented drink is ready.

Filter the drink and enjoy cold.

This stays fresh for 2 to 3 days in refrigerator.

Notes:

a) Filtering the mixture is optional. Pickled veggies can be eaten with roti or rice.
b) You can add gooseberry, fresh turmeric slices, radish.
c) Usually this drink is served in winter.
d) Best drink for your gut health.
e) You can drink a glass everyday ( 100 - 150 ml) , Consume it early morning.
f) Store this drink in fridge , stays good for a week.

Huevos Aguachile

Ingredients

Sliced onion - 1 medium size

Sliced serrano peppers - 5 add more if you want it spicy

Lemon juice - 1/2 cup 

White vinegar - 1/8 cup

Chopped cilantro - a handful

Salt & Pepper powder to taste

Hard boiled eggs cut into half - 4

Tajin or Chile oil to drizzle on top ( optional)

Method

Take a bowl add all the above ingredients except Tajin. 

Gently toss to combine make sure the eggs don't break, refrigerate for 10 minutes.

Drizzle Tajin or chile oil on top and serve immediately!

Notes:

a) Serve these on a bed of lettuce or baby spinach.

b) This salad can be served with warm corn or soft tortillas.

c) Goes very well with grilled shrimp or chicken.

d) This salad can be made ahead but just before serving add some toppings ( onions, chille, cilantro) to give a crunch.

e) Adjust all the ingredients according to your taste.

Homemade Kefir

Ingredients

Whole milk - 1 cup cold milk

Active milk kefir grains - 1 tbsp.

Method

Take a clean glass jar add cold milk to this add the kefir grains. Make sure there is at least 1inch room left on top for fermentation.

Using a non metal spoon mix it & close it with a lid, do not close the lid tight.

Ferment at room temperature (18–24°C) for 24–48 hours . Next day using a mesh strainers gently strain the kefir and  scoop out the kefir grains.

Add the strained kefir grains into the cold milk to make next batch.

Dilute and drink the kefir as it is or flavor it and drink as smoothie.

Store the prepared kefir in refrigerator.


               Cover it with a muslin cloth or lid 


Note:

a) Use only glass bottle do not use any other metal to make kefir.

b) Do not use metal trainer or spoons, use non metal .

c) Handle kefir gently as it's a live culture.

d) Use separate brush to clean all strainer, bottle and spoon. Do not mix it with other washing utensils.

e) Texture of the kefir will differ due to the temperature of the house.

f) I bought my kefir grains from Amazon. There are many vendors selling kefir grains.

g) Do not heat the milk milk must be cold otherwise your kefir culture will die.
