| Sweet Potato Black Bean patties |
Ingredients
Finely chopped vegetables of your choice - 2 cups
( I used beans, cauliflower, carrot, capsicum)
Boiled and mashed sweet potato - 1/2 cup
Canned black beans - 1 can ( 15 oz)
( Drain out the water completely and rinse them with fresh water. Strain the water completely and mash them coarsely using a potato masher)
Chopped onion - 1/2 cup
Chopped garlic - 6
Egg - 1
Bread crumbs - 1/4 cup
( add more if your mixture is sticky)
Taco seasonings - 2 tbsp
Paprika - 1 tbsp
Salt to taste
Oregano - 1 tsp
Pepper powder - 3/4 tsp
( Add seasonings according to your taste )
Turmeric powder - 1/4 tsp ( optional)
Olive oil - 1 tsp
Coconut oil - 2 tsp
Method
Heat both oils in a pan add onion and garlic sauté till they change color.
Now add the finely chopped vegetables and sauté for few minutes till they are cooked.
Add all the spices according to your taste mix well and switch off the stove, let the mixture cool completely.
Add beaten eggs, mashed sweet potato and the mashed beans to the vegetable mixture. you can also use a food processor to combine the ingredients.
Transfer the mixture to a bowl and mix the bread crumbs. Make sure your mixture is not sticky if needed add more bread crumbs.
Keep it in the refrigerate for 10 minutes so shaping the patters will be easy.
Grease your palms with oil and take small portion of the mixture and flatten it to the thickness you want.
Arrange them in an air fryer spray them with oil and air fry at 375 deg. for 15 minutes, after 8 minutes turn the patties to cook the other side.
Once done cool and enjoy the way you want to eat them.
Note:
Use your imagination to make them more creative like adding cooked rice, oats, quinoa or mixed beans.
This can be baked in the oven too or cook them on a griddle.
Freeze the leftovers.
