Oil Free Mutton Biriyani |
Ingredients for Marination
Mutton cubes - 1 pound ( around 450 gms)Salt to taste
Turmeric powder - 1/2 tsp
Red chilly powder - 1/2 tsp
Ginger & Garlic paste - 1 tsp
Homemade Biriyani masala - 2 tsp
Curd - 3 tbsp
Mint leaves few
Sliced onion - 2 tbsp
Tomato - 1/4 portion of a small tomato
Slit green chillies - 2
Other ingredients
Sliced onion - a handful
Slit green chillies - 4
Sliced tomato - 3/4 portion of a small tomato
Mint leaves - a handful
Lemon juice - 1 tsp
Rice - 2 cups
( wash and soak the rice for 5 minutes this step is optional)
Water - 3 cups
( measure the water content in the cooked mutton gravy and then add water accordingly)
Method
Add all the above ingredients in a wide bowl. mix well to make sure the masala is well coated to the mutton pieces. Rest this for 30 minutes for marination.
Remove only the mutton pieces from the marination and add in into a pan and heat , in low flame cook till the oil is released from the mutton.
Remove the mutton pieces and add it back into the marination. Now add the sliced onion, few mint leaves and green chilies in the oil and saute in low flame.
Pour the marination along with the mutton , add 1 cup of water and pressure cook till mutton is soft.. Cool and release the pressure, measure the water. Total water to make the biriyani is 3 cups so add remaining water accordingly
Add the cooked mutton along with the gravy into a heavy bottomed pan pour the measured water and the rice, cover with a lid.
In low flame cook till done, lastly pour the lemon juice garnish with some chopped mint leaves and gently give a mix and enjoy!
Note:
Here we have used only the oil released from the mutton fat to saute onion and no extra oil used. The key for oil free cooking is slow cooking method.
It takes time to make this biriyani but worth it.
