Kushboo Dosa

Made dosas with left over batter of Kushboo Idly.......Sprinkled some onion & jeera on top.It was very soft & crispy.....





Ingredients
Left over Kushboo Idly Batter
Some chopped onions & Jeera
Oil to make dosa
Method
Make dosas as usual ,sprinkle jeera or onion on top cover it & cook it till done(do not turn it ).

Banana Wheat Dosa


Ingredients
Whole wheat flour-1 cup
Jaggery -1/2 cup
(Melt it with water & filter )
Banana -1big
(Mashed)
Cardamom powder-1/2tsp
Cashew nut chopped-8
(roasted in 1tsp of ghee)
Ghee or Oil-to make dosa
(I used only ghee)
Method
Mix all above ingredients together.Pour water & make a batter(not very thin).Heat a tawa pour a ladle of batter spread the mix on pan in circular motion.Pour ghee & cook it both sides till done.

Kushboo Idli Recipe -How to make Kushboo Idli

Kushboo Idli

Ingredients
Idli rice-2 cups
Methi seeds-1/4tsp
Urad Dal- 1/2 cup
Sago/Sabudana-1/4 cup
( round big white variety not the nylon sago )
Salt to taste
Cooking soda-1/4tsp
( optional,i did not use.)
Method
Wash and soak rice,methi & urad dal together & sago separately for 5 hrs.
Grind everything together with salt to a smooth semi thick batter.add water little by little while grinding the batter.
Leave the batter to ferment overnight at room temperature.
If you think your batter is not fermented then you can add cooking soda just before making idli otherwise avoid using.
Grease idli plates with oil add a ladle of batter.
Steam the idli for 7 to 8 minutes or till cooked.
Serve them hot with chutney,sambar or idli podi.
Note:
a) To get a fluffy idli then add cooking soda,i usually don't add.

Vazhai Poo (Banana flower) Paratha


Ingredients
Finely chopped vazhai poo-1/2 cup
Green chillies chopped-1
Onion chopped-1tbsp
Salt to taste
Turmeric powder-little
Coriander powder-1/4tsp
Kastoori methi-1tsp
Whole wheat flour-1 cup
Maida-1/4 cup (Optional)
Oil to make parathas
Method
Mix all above ingredients together.Add water & make a soft dough.Take small ball roll out like parathas & cook it on a tawa .Pour oil & cook it till both sides are done.Serve it hot with my Potato Chops or raita.

Multi Colour Idiappams

We wish you all a Happy Independence Day..........

Ingredients For tomato Idiappam(Orange)
Home made Idiappams- required quantity.
(mix orange food colour to the rice flour dough before steaming)
Chopped tomato,onion,Curry leaves,green chillies & ginger-required quantity
Tempering
Oil,mustard,jeera,Fennel seeds
Method:Heat oil temper it.Fry tomato,onion,Curry leaves,green chillies & ginger till light brown.Mix the idiappam with the above masala.



Ingredients for Egg Idiappam(White).
Home made Idiappams- required quantity.
Egg,salt & pepper,onion,green chillies & oil-required quantity.
Method:
Heat oil fry onion,green chillies till light brown.Add the egg & seasoning mix till its scrambled.Add the Idiappam & mix it well.

Ingredients for Parsley Idiappam(Green)Home made Idiappams- required quantity.(mix green food colour to the rice flour dough before steaming).
Chopped Parsley,sliced onion &garlic,salt to taste,green chillies chopped,oil & biriyani or garam masala-required quantity.
Method:
Heat oil fry the above ingredients till slightly cooked then mix the idiappam with it.

Watermelon Skin Paratha

I am back again with a dish from Watermelon Skin.

Ingredients
Finely grated Watermelon skin(only white part)-1 cup
(you can also put it in a electric chopper)
Chopped green chillies-2
Salt to taste
Turmeric powder-1/4tsp
Coriander leaves chopped little
Ajwain(Carom seeds)-1/4tsp
Jeera powder-1/4tsp
Whole Wheat Flour-3 cups
Oil to fry
Method
Squeeze the extra water from the grated watermelon skin.Put it in a bowl add all above ingredients.Add very little water & 1tsp of oil to make a dough.Take a small ball roll it like a paratha.Cook it both sides adding oil till done.Serve it hot with raita or any gravy.

Sel Roti / Nepali Sweet Bread / Selroti / Crispy Rice Doughnuts

This is a dish from Sikkim !!!!!!.I tried my best to get the round shape.

Sel Roti
Ingredients 
Basmati rice-1 cup 
Coconut-1tsp 
Cashew nut-1tsp 
Almond-1tsp 
Milk-1/2 cup 
Maida-6tsp 
Sugar-1/4 tsp 
Salt-1/4tsp 
Butter-1 tbsp 
Cardamom powder-1tsp 
Vanilla essence-1/2tsp 
Oil to deep fry 
Method 
Soak rice,nuts & coconut for 1 hour in water.
Grind it with milk till a coarse paste.Add the remaining ingredients & mix it like the consistency of a pancake batter.
Heat oil in a pan,take a ladle of batter pour it inside a funnel or use your hand & make a round shape in the hot oil.
Cook it both sides till its brown.
Serve it with Shimi Ko Achar.

Murungai Keerai Adai / Drumstick Leaf Adai / Moringa Leaf Pancakes - Moringa Recipe


Ingredients to grind
Wild & Brown rice together-1/2 cup
Long grain rice-1/2 cup
Thur dal / Pigeon Pea-1/4 cup
Channa dhal-1/2 cup
Yellow moongh dal-1/4 cup
Red chillies-8
Ginger-1/4''
Salt to taste
(Soak above ingredients together for 2 hrs & grind it coarsely with salt.Batter should not be too thick)
Other ingredients
Murungai Keerai / Moringa leaves chopped-1 cup
Chopped onion-1/4
Grated coconut-1tbsp
Hing-1/4tsp
Jeera/Cumin-1/4tsp
Oil-to fry
Method
Mix above ingredients together and grind it to a coarse batter.
Heat a tawa pour 1/2tsp of oil ,pour a ladle of batter spread it like a dosa/pancake but a bit thick.
Pour oil around the adai & cook it on both sides till crisp.
Serve it with butter & any chutney.

Wild & Brown Rice Oothappam

Ingredients
Wild & Brown rice together-1 cup
Long grain rice-1 cup
Urad dhal-1 hand full
Thur dhal-1 hand full
Methi-1/2tsp
Salt to taste
Method
Soak above ingredients together for 2 hours.Grind it to a smooth batter.Add salt & ferment it overnight.Next day mix the batter & make oothappam in a tawa.Close with a lid & cook it on medium flame(do not turn).Serve it with any chutney or Podi.

Vegetable Toast


Ingredients
Wheat Bread Slices-6
Butter-1tsp
Cheese slices-3
Filling
Boiled & Mashed potato-2
Chopped vegetables-1/4 cup
(Peas,Cabbage,Carrot,Beans)
Salt & Pepper to taste
Curry powder-1/2tsp
Spring onions chopped-1
Method
Heat butter in a pan fry filling ingredients one by one till vegetables are 3/4 cooked.Place 2 spoons on the bread place a cheese slice & cover it with another slice.Toast it in bread toaster till light brown.Serve it hot with ketchup.Enjoy this simple toast......

Garlic Bread

This recipe is from Rachael Ray....but made slight change according to the availability of ingredients in my kitchen.


Ingredients
Hot dog buns-4
Butter-1/4 stick
Olive oil-2tsp
Parsley & Oregano-2 pinch each
Salt & Pepper to taste
Garlic -1(make a paste)
Method
Cream all above ingredients together.Apply both sides of buns or bread slices.
Toast it till light brown on a tawa/griddle.
Place on a plate & sprinkle parsley before serving.
This can be served as starter or for quick breakfast.
Variation
For extra taste for kids you can also add cheese on top.

Moongh dal Upma / Moongh Dhal Upuma / Pasi Paruppu Pittu

Ingredients
Yellow moongh Dhal-1 cup
Onion Chopped-1/2
Green chillies chopped-2
Salt to taste
Lime juice-2tsp
Grated coconut-2tsp
Curry & Coriander leaves-little
Ginger-1/4''
Ingredients for tempering
Oil-3tsp
Mustard-1/2tsp
Jeera-1/4tsp
Hing-1/4tsp
Urad dhal-1tsp
Method
Soak moongh dhal for 1 hr,grind it to a smooth paste with salt & 1 green chilly.Pour it in a greased pan & steam it.Cool & crumble it.Keep it aside.Heat oil in a pan temper it.Add the onion,green chillies , curry & coriander leaves & ginger.Fry till light brown.Add the moongh dhal mixture & fry for 5 minutes.Remove from stove add coconut & lime juice,mix well & serve it.

Stuffed Macaroni Idly


Ingredients
Idly batter to make Idlys
For the Filling
Elbow Macaroni cooked-1/2
Mixed Vegetables-1/4cup
(I used frozen)
Onion chopped-1tbsp
Chopped garlic-2
Chillies chopped-1
Tomato sauce or Any Italian sauce-1tbsp
Shredded Cheese-3tsp
Salt & Pepper to taste
Oil-1tsp
Method
Heat oil in a pan fry garlic,chillies & onion slightly.Add the vegetables ,Macaroni & seasonings.Fry a bit add the sauce .sprinkle cheese & remove from heat.Your filling is ready.Grease the Idly plates keep a spoon of the filling pour a ladle of batter & cook it till done.Serve it as desired.
Variation
You can also mix it with the batter & then make Idlys.

Ingredients
Whole wheat -1 cup
Maida-1tbsp
Salt to taste
Oil for deep frying
Method
Mix above ingredients together with water.Make a soft dough.Make small balls ,roll it & deep fry them .Serve it with my Channa gravy

Ingredients.
Green moongh dal -1 cup
Rice-1 hand full
Salt to taste
Green chillies-2
Ginger-1/2''
Jeera/ Cumin-1tsp
Onion chopped for filling
Oil as required
Method
Soak dal & rice together for 3 to 4 hours.
Grind it to a smooth paste along with green chillies, ginger and salt.Add jeera to the batter and mix well.
Fermentation is not needed for this dosa.
Heat a tawa/griddle pour a ladle of batter at the centre.
Spread it to a thin disc,pour some oil around the dosa. 
Place 1 tsp of chopped onion at the centre and fold it.
Serve it hot with any chutney you desire.

Idly


Idly is a very common tiffin in any South Indian house. As the Idly rice prices have shot up and in fact we were not getting in stores. I have tried making it with long grain rice. Not bad it was a success!!!!
Ingredients
Long grain rice-7 cups
(any brand i bought Blue Ribbon from Costco)
Whole urad dhal-1 & 1/4cups
Salt-to taste
Method
Soak the rice with boiling water in a wide vessel for 3hrs.Don't close it with a lid,otherwise your rice will be cooked.Soak urad dhal separately with normal tap water.Grind both separately.Add salt mix both batters together,ferment it for at least 8hrs.Next day beat the batter nicely,grease your Idly plates.Pour a ladle of batter and steam it.Serve it with chutney or Idly podi.
Variation
Long grain rice-4cups
Urad dhal-1cup
salt to taste
Method
Fry the rice in a pan till it changes colour to milk white.Switch off stove pour water and soak it for 3hrs.Soak uraddhal separately.Grind it separately,add salt mix it for fermentation.Then make Idlys.When I visited my Cousin in Minneapolis I learned it from her.As it is a snowy place she makes Idlys this way.
