| Dindigul Biriyani Masala Powder |
Coriander seeds - 2 tbsp
Cashew nuts - 8
Cumin seeds - 1 tbsp
Stone flower / Kalpasi - 1 & 1/2 tbsp
Pepper - 1 tbsp
Bay leaf - 2
Star anise - 2
Marati moggu - 1
Cinnamon - a medium size stick
Mace - 2
Cloves - 12
Nutmeg - 2 small piece
Fennel seeds - 1 tbsp.
Method
Take a blender add all the above ingredients and grind to a smooth powder.
Store it in a clean jar.
Add this powder as needed while making biriyani.
