Mutton Pulao (Malabar Cuisine) / Malabar Mutton Pulao / Mutton Pulao Malabar Style / Mutton Pulao recipe

Mutton Pulao (Malabar Cuisine) / Malabar Mutton Pulao recipe / Mutton Pulao Malabar Style recipe / Mutton Pulao recipe Ingredients for rice
Basmati rice-4 cups
Coconut milk-1 cup(165ml tin)
Water-6cups
Salt to taste
Whole garam masala
(Cloves-5,cardamom-5,cinnamon-1/2'' stick,Bay leaf-1)
Lime juice-1tsp
Ghee-2tsp
Ingredients to grind to a smooth paste
Green chillies-4
Ginger & Garlic paste-1tsp
Fennel seeds (somph)-1tsp
Pepper-1o
Star anise-1
Cloves-6
Cardamom-5
Cinnamon-1/2'' stick
Coriander seeds-1/2tsp
Onion-1tbsp
Nutmeg-1/4 piece
Ingredients to marinate mutton
Mutton-1 & 1/4 pound
Salt to taste
Turmeric powder-1/4tsp
Chilly powder-1tsp
Coriander powder-1tsp
Ginger & Garlic paste-1tsp
(mix everything & marinate overnight or for at least 3hrs)
Ingredients for gravy
Ghee-2tsp
Oil-4tbsp(12tsp)
Mint & coriander leaves-each one small bunch chopped
Chopped tomato-1 big
Sliced onion-1 big
Lime juice-1tsp
Ground masala(recipe above)

Method
Heat ghee in a pan temper with the whole garam masala.Add the washed & drained rice & fry for 2 minutes.Now add coconut milk,water,salt & lime juice.Cook it till done & keep it aside.
Heat oil & ghee in a pressure cooker fry the onions till light brown in colour.Now add the tomato,lime juice,mint,coriander leaves & ground masala & fry it till oil separates .
Add the marinated mutton & cook it till done.If water is there in the gravy dry it put by simmering the gravy.
In a heavy bottomed pan make layers alternatively with gravy & rice.Top it up with fried onions & mint leaves.
Keep it in very low flame for 10 minutes.Before serving mix it well.Yummy Mutton pulao is ready to serve with raita!!!!
