Oats Chutney


Ingredients
Oats roasted dry-3tbsp
Red chillies-2
Masoor dhal-1tsp
Uraddhal-1/2tsp
Coriander seeds-1/2tsp
Hing-1/4tsp
salt to taste
Coconut roasted brown-1tsp
Tempering

Oil-1tsp
Mustard-1/2tsp
Jeera-1/4tsp
Uraddhal-1/4tsp
Method
Dry roast all above ingredients till light brown.Cool & grind it to a smooth paste.Tempering it if you want.This can be served with rice or tiffins.

Banana Flower
Method
a) Grease your hand with some oil before you start to clean the banana flower to avoid staining your fingers and sticking to your hand.
b) Choose a fresh banana flower.
c) Remove the red petal and discard under the petal you will find row of flowers save them.Repeat this process till the flower becomes small.
d) Now take each flower from the bunch,remove the white cover and the stamen from the flower we will not be using this in our cooking ( see picture).
e) Put it in a bowl of water or buttermilk to prevent from changing colour.
f) Chop the flowers finely and cook.Cook the flowers while they are fresh.

Mixed Flour & Vallarai Dosa

Ingredients
Powdered Oats-1 cup
Rice flour-1 cup
Ragi flour -1/2 cup
Besan-1/4 cup
Wheat flour-1/2 cup
Salt to taste
Jeera-1tsp
Chilly powder-1tsp
Chopped Vallarai Keerai-1/2 cup
Method
Mix all above ingredients together.Pour water & dilute to a dosa batter consistency.Heat a tawa pour a ladle of batter & make dosa. Pour oil & cook on both sides till done.Serve it with any chutney

Vegetable Tawa Dhokla / Mixed Flour Tawa Dhokla / Tawa Dhokla / Grilled Dhokla

Vegetable Tawa Dhokla
Ingredients for tempering
Oil - 1 tbsp
Mustard - 3/4 tsp
White sesame seeds - 1 tsp
Chopped green chillies - 2
Curry leaves few
Chopped ginger - 1 tsp
Hing - 1/8 tsp
Ingredients for the batter
Semolina/Sooji/White Rava - 1/2 cup
Semi coarse powdered oats - 1/4 cup
Semi coarse powdered quinoa - 1/4 cup
Thick curd - 1/4 cup
Water as needed ( around 3/4 cup)
Salt to taste
ENO fruit salt - 1/2 tsp
Mixed vegetable 3/4 cup
( I used grated carrot,finely chopped beans and peas)
Chopped coriander leaves - 1 tsp
Turmeric powder - 1/4 tsp
Method
Take a bowl add all the mentioned batter ingredients except ENO.
Mix well make sure the batter is lump free,it should be a semi thick batter.
Heat a non stick pan or a iron skillet pour 1 tbsp of oil and temper it with above ingredients.
Now add the ENO to the batter mix well and pour immediately on the tempering.
Cover it with a lid and cook it in very low flame till cooked and crisp at the bottom.
Slowly flip it other side,pour some oil and cook.
Switch off the stove cool,cut and serve it with any chutney you like.
Note:
a) Non stick pan is best for this recipe,but i have tried it in iron skillet and turned out crisp and perfect.
b) Only sooji can also be used for dhokla.
c) Add vegetables of your choice.

Instant Quinoa Idly

Ingredients
Slightly dry roasted & coarsely powdered Quinoa-1/2 cup
Slightly dry roasted & coarsely powdered quick oats-1/2 cup
Slightly dry roasted semolina/Sooji-1/4 cup
ENO fruit salt-1/2 tsp
Salt to taste
Turmeric powder-a pinch
Curd-less than 2 cups
Tempering
Oil-1tsp
Mustard-1tsp
Jeera-1/2tsp
Urad dhal-1/2tsp
Chopped green chillies-1
Chopped curry leaves-little
Grated ginger-1/8tsp
Hing-a pinch
Method
Mix all above ingredients together except ENO.Heat oil in a pan & temper it.Cool & pour it in the above mixture.Just before pouring it in greased Idly pans add the ENO beat it well & pour immediately & steam it till cooked.Serve it with any chutney.
